        절임 배추의 세척 조건에 따른 김치의 숙성중 품질 변화

        김치의 저장성을 연장하기 위한 시도의 하나로 1,000 ppm 농도의 자몽종자추출물(grapefruit seed extract, GFSE)과 구연산 용액에 절임 배추를 각각 씻어서 김치를 담근 다음 숙성시키면서 품질 특성의 변화를 측정하였다. GFSE 및 구연산에 세척한 배추로 담근 김치는 대조구에 비하여 pH 저하 및 적정산도의 증가가 늦어지는 것으로 나타나 숙성 기간의 연장 효과가 있는 것으로 나타났다. 또한 환원당은 GFSE로 처리한 시험구가 숙성 20일까지 가장 높은 값을 나타내어 발효가 억제되는 것으로 나타났다. GFSE를 처리한 시험구는 숙성 10일까지 대조구에 비하여 총균수 및 유산균수가 낮은 것으로 나타났으나 구연산 처리구는 대조구와 큰 차이를 나타내지는 않았다. Salted Chinese cabbage was washed in 1,000 ppm solutions of grapefruit seed extract (GFSE) or citric acid, and used to make kimchi for the retention of quality characteristics during fermentation at 10℃. Kimchi treated with GFSE or citric acid showed a retarded increase in titratable acidity and decrease in pH and reducing sugar content. Total microbial count and lactic acid bacteria of GFSE treated kimchi were about 1.1 log(CFU/g) lower than those of control and citric acid treated kimchi after making, but the difference was gradually reduced during fermentation.

        Detecting the size, cover depth and arrangement of rebar in concrete structure is very principle element for structural analysis. Magnetic method is generally used for structural maintenance inspection but the criterion about the location and the count for in-situ detection is ambiguous. The result of detection is also unreliable since it depends on the ability of analyst. The purpose of the research is to suggest the standard location and count for rebar detection and increase the reliability of detection result. The experiment took place at the reconstruction site since we standardize rebar detection about deteriorating structure. Testing performed with destructive method for the comparison with actual measurement.

        외식산업 종사원의 조직공정성 지각과 조직몰입간의 영향관계

        The research plan to study on whether organizational justice factors can be divided to 4 factors such as distributive justice, procedural justice, personal relationship justice and informational justice while discovering whether supervisor trust and perceived organizational support play a role as mediation in the relationship of those justice factors and organization commitment, supervisor trust, as well as in relationship of justice factor and organization commitment. A Total of 600 survey paper was distributed and 48 surveys that had insufficient or inappropriate for analysis were excluded and rest of 552 surveys were used in final analysis. SPSS 20.0 Windows statistics package program and AMOS 20.0 program were used for statistical analysis. By looking at theoretical implication first, for the reason that organizational justice was divided in to 4 factors of distributive justice, procedural justice, personal relationship justice and information justice through exploratory factor analysis and confirmatory analysis, implicates no significant hardship for dividing and study organizational justice to 4 sub factors. Second, in the relationship of organizational justice, supervisor trust, it was confirmed that the supervisor trust were the result variables of organizational justice, and for the relationship of supervisor trust and organization commitment, the supervisor trust had meaningful impact on organization commitment. And in the relationship of organizational justice factor and organization commitment, supervisor trust play a mediation role, some consistencies and differences were discovered which implicated continuous research on these relationships and roles.

        Deduction of compressive strength in concrete members is very important to decide stability of structures. The purpose of this study is to analyze the compressive strength of a concrete structure which was to be demolished at residential reconstruction site and the results of destructive test of core specimens from the site. The research is conducted for the columns, girder and slab of the building.

        광범위한 다발성 Morel-Lavallee 병변 - 증례 보고 -

        Morel-Lavallee는 외상으로 인해 연부조직 손상으로 발생하는 드문 병변이다. 대개는 대퇴부 주변에 발생하며, 요추에 발생하는 경우는 매우 드물다. 초기에 응급실 내원 시 진단하지 못하는 경우가 종종 있으며, 늦게 진단된 경우 수술적 치료가 필요한 경우도 있다. 저자들은 외상 후 발생한 흉, 요배부와 둔부, 대퇴부까지 광범위하게 발생한 다발성 Morel-Lavallee 증례를 경험하였기에 문헌 고찰과 함께 보고하고자 한다. Morel-Lavallee is a rare lesion caused by post-traumatic soft tissue injury. It usually occurs around the greater trochanter, and it occurs very rarely in the lumbar region. It is often difficult to be diagnosed in the emergency room. Delayed diagnosis may result in the need for open surgery. The authors report a patient with extensive multiple Morel-Lavallee lesions in the thoracolumbar, buttock, and thigh after trauma and provide a literature review.

        음식관광박람회 참가업체의 박람회 품질평가가 충성도에 미치는 영향

        The purpose of this study is to investigate 2011 Korea Food & Tourism Expo exhibitor`s quality evaluations and involvement as mediators affected the loyalty. The data was collected by self-administered questionnaire and the questionnaire is mainly formulated with the questions to answer in 5-point scale, ranging from the most important during the Korea Food & Tourism Expo. This study was analyzed using factor analysis, canonical correlation analysis and regression. The samples were about 305 exhibitor and were processed using SPSS 18.0 for windows. The results of the study were as follows. First, the quality evaluations are 4 factors; staff service evaluation, operation service evaluation, stability/environment service evaluation, public relations/ confidence service evaluation, involvement is 1 factor and loyalty is 1 factor. Second, the exhibitor` loyalty and the quality evaluations are confirmed to be statistically significant. Third, the exhibitor` involvement and the quality evaluations are confirmed to be statistically significant. Fourth, the exhibitor` loyalty and the involvement is confirmed to be statistically significant. Fifth, the exhibitor` loyalty and quality evaluations with the involvement as mediators confirmed to be statistically significant.

        칼슘 분말제재 첨가가 김치의 숙성 중 품질에 미치는 영향

        김치 제조시에 칼슘 분말제재를 절인 배추에 대하여 0.5%, 1.0% 및 1.5%씩 첨가하여 김치를 만들고, 숙성하면서 pH, 적정산도, 환원당 함량, 총균수, 젖산균수 및 관능검사와 같은 품질 특성을 조사하였다. 대조구는 숙성 10일 이후에 pH 4.0이하인데 반하여 칼슘 분말제재를 첨가한 시험구는 pH 4.0이상을 유지하였으며, 1.5% 첨가구의 값이 가장 높았다. 적정산도는 숙성 25일까지 지속적으로 증가하였으며, 10일까지 증가가 다른 기간에 비하여 현저하였다. 또한 칼슘 분말 제재 첨가구는 김치 담금시부터 대조구보다 높은 환원당 함량을 나타내었으며, 숙성 기간 중 그 차이는 큰 변화를 보이지 않았다. 숙성 5일까지는 총균수와 젖산균수가 급격하게 증가하여 9 log(CFU/mL)에 도달하였으며, 대조구의 총균수가 가장 많았다. 그러나 그 이후에는 칼슘 분말제재를 첨가한 시험구의 총균수가 대조구보다 대체적으로 많았다. 관능적인 평가에서는 칼슘분말 제재를 0.5%, 1.0% 첨가한 시험구가 냄새 및 맛에 있어서 대조구보다 높은 점수를 얻었으나 대조구와 유의적인 차이를 보이지는 않았다. Calcium-enriched powder was investigated for use as an ingredient in kimchi formulation to retard the fermentation rate and to fortify the nutritional quality of kimchi. The calcium powder was added to salted Chinese cabbage in the concentrations of 0.5, 1.0 and 1.5%, and then stored at 10℃. Quality characteristics of kimchi such as pH, titratable acidity, reducing sugar content and microbial loads were measured during fermentation. After a lag period of 2 days, pH and reducing sugar abruptly decreased until 10 days, and then attained to stabilized levels, while acidity increased steadily for 20 days. Addition of calcium powder with 1.5% retarded the change rates of pH and acidity, showing the slowest change and the highest final pH. Kimchi added with calcium powder maintained a higher reducing sugar content during the whole fermentation period of 25 days. Kimchi samples which were added with 0.5 % and 1.0% of calcium powder and fermented at 10℃ for 7 days showed better sensory scores in aroma and taste than the other samples.
