Purpose: This study investigated the quality characteristics of Sablé cookies baked using various sugar substitutes. Methods: Sablé cookie samples were prepared by replacing 70% of the sugar with various sugar substitutes, viz., sucrose(CON), trehalose (TC), palatinose (PC), erythritol (EC), maltitol (MC), and D-xylose (XC). We then determined the quality characteristics of cookies by evaluating the moisture content, sugar content, color value, texture analysis, and assessing attribute difference test by 25 trained panels, and the acceptance test by 50 consumers. Results: The sugar content of the cookies was the highest in CON and the lowest in EC (p<0.001). Moisture content was the highest in XC and lowest in MC (p<0.001), whereas hardness was highest in MC and lowest in XC. In addition, XC had the lowest L value and the highest a and b values, indicating the darkest color among cookie samples (p<0.001). Attribute difference test revealed the highest savory odor in PC, and sweetest taste in CON and MC. Hardness, crispness and crumbliness were similar for CON and MC (p<0.05). The after-taste, tub-tub and nasty smell were highest in XC (p<0.001). Consumer acceptance was the highest for CON and MC, and the lowest for XC in odor, taste, texture, and overall preference (p<0.001). Conclusion: These results show the possibility that Sablé cookies baked with maltitol instead of sugar are suitable in improving the quality of cookies as well as consumer acceptance.

Hydrothermal liquefaction of lipid-extracted Tetraselmis sp. feedstock containing 80 wt.% water was conducted in a batch reactor at different temperatures (300, 325, and 350oC) and reaction times (5, 10, 20, 40, and 60 min). The biocrude yield, elemental composition and higher heating value obtained at various reaction conditions were used to predict the optimum conditions for maximizing energy recovery of biocrude with good quality. A maximum energy recovery of 67.6% was obtained at 325°C and 40 min with a high energy density of 31.8 MJ/kg and lower contents of nitrogen and oxygen. Results showed that reaction conditions of 325°C, 40 min was most suitable for maximizing energy recovery while at the same time achieving improved quality of biocrude.

Response surface methodology (RSM) in combination with a 17-run central composite design (CCD) was applied to optimize the non-catalytic hydrolysis of lard using subcritical water to produce fatty acids (FA). The effects of three variables including temperature, molar ratio of water to oil and time, and their relationship on FA content were investigated. A quadratic regression model was employed to predict the FA contents. Optimum reaction conditions for maximizing the FA content were obtained as follows: reaction temperature of 288.5°C, molar ratio of water to oil of 39.5 and reaction time of 29.5 min. Under the optimum conditions, the predicted and experimentally obtained FA contents were 97.06% and 96.99%, respectively.

The purpose of this study was to investigate the effects of the secondary tasks such as sending text message (STM) and searching navigation (SN) on skin conductance level (SCL) during driving. The participants included 29 taxi drivers; 14 males aged 56.7 ± 4.3 with 29.7 ± 7.0 years of driving experiences and 15 females aged 55.5 ± 3.5 with 20.1 ± 5.7 years of driving experiences. All subjects were instructed to keep a certain distance (30m) from the car ahead and a constant speed (80㎞/h or 100㎞/h). SCL was measured during driving only and driving with secondary tasks. SCL was more increased during the driving with secondary tasks than driving only. By increasing the driving speed, SCL was increased during the driving with secondary taks. Secondary tasks increased an activation of sympathetic nerve system. However, there were no significant differences in the SCL according to gender.
