국내산 아피오스 첨가 국수의 항산화 활성 및 품질 특성

This study evaluates antioxidant activity and quality characteristics of noodle adding domestic apiose (Apios americana Medikus) powder at the ratios of 0, 5, 10, 15, and 20%. The moisture content increased as more apiose was added while the pH decreased as more apiose was added. On the other hand, water absorption ratio and turbidity increased as more apiose was added. The L value decreased while the a value increased as more apiose was added. In texture, the hardness increased while cohesiveness decreased as more apiose was added. As a result, the overall preferences, the appearance, aroma, taste, and texture were the best when 15% apiose was added. In quantitative descriptive analysis (QDA), it turned out that brown color, bitter taste, delicate flavor, hardness, adhesiveness and chewiness increased as more apiose was added. However, crystallinity, spreadability, flour flavor, springiness decreased as more apiose was added. In principal component analysis (PCA), it was found out that when more than 15% apiose was added to the noodles. Antioxidant activity increased all for total phenolic, flavonoid contents and DPPH radical scavenging activity as more apiose was added. Collectively, it was noted that the preference, antioxidant activity and quality are the best when 15% apiose was added to noodles.

본 연구는 우수한 영양과 기능성을 가진 아피오스(Apios americana Medikus)의 국내 생산과 보급을 늘리고 식품 소재로서의 활용 가능성을 살펴보고자 아피오스의 일반성분, 총 식이섬유 함량, 아미노산, 무기질 함량 등의 영양성분과 총 페놀 함량, 총 플라보노이드 함량, DPPH 라디칼 소거능 등의 항산화 활성을 감자와 비교하여 평가하였다. 국내산 아피오스와 감자의 일반성분과 총 식이섬유를 분석한 결과, 수분을 제외한 조단백, 조지방, 조회분, 탄수화물, 총 식이섬유의 함량은 아피오스가 감자보다 유의적으로 높았다. 총 아미노산 함량은 감자가 아피오스보다 높았으나 필수 아미노산의 함량은 아피오스가 감자보다 높았다. 무기질 분석 결과에서는 아피오스가 전반적인 무기질 함량은 낮았으나 칼슘과 아연은 감자보다 높았으며, 인과 칼륨, 마그네슘은 감자가 아피오스보다 높았다. 항산화 활성을 분석한 결과에서 총 페놀 함량과 총 플라보노이드 함량은 아피오스 추출물이 22.78 ㎎ GAE/g과 35.96 ㎎ QE/g으로 감자 추출물의 14.24 ㎎ GAE/g과 5.02 ㎎ QE/g에 비해 아피오스가 유의적으로 높았다. 아피오스와 감자 추출물의 DPPH 라디칼 소거능을 IC50으로 나타낸 결과에서는 아피오스(2,184.27 ㎍/mL)가 감자(3,551.66 ㎍/mL)보다 낮은 농도에서 DPPH 라디칼 소거능이 우수한 것으로 나타났다. 이러한 결과를 종합하였을 때에 아피오스는 전반적인 영양성분과 항산화 활성이 우수하여 식품으로 개발 시 기능성이 향상된 식품으로 개발 가능성이 높은 것으로 판단된다.

Recently, automotive emission legislation is gradually strengthened due to the concerns of global warming. In this reason, automotive OEMs are more focusing on improvement of internal-combustion control in mechanical way, enhancement of exhaust catalyst system and precious metal group(PGM) distribution. In this study, the Pd and Rh are distibuted in three ways - separately coated in two bricks, zone coated in one brick and fully coated with same amount of PGM per piece without zonecoating. The catalysts are aged at engine for same time range and all emissions is conducted at 1.6L T-GDI vehicle under WLTP.

Objectives: This study examined the dual mediating effects of positive alcohol expectancy and the social value of drinking between alcohol advertising exposures and drinking problems. Methods: The survey was conducted on 1,057 adult men and women aged 20 to 65 years, recruited by an online survey Participants for this study were 961 men and women. Results: It is found that Women had higher exposure experience alcohol advertising than men and men had higher positive alcohol expectancy, social value of drinking and drinking problems. In addition, alcohol advertising exposures have positive effects on drinking problems. Also, Positive alcohol expectancy and social value of drinking partially mediate the effects of alcohol advertising exposure, and drinking problems. Conclusions: In order to prevent drinking problems, the social environment that causes drinking problems should be tightened by regulations about alcohol advertising exposures. Based on these results, this study discusses what needs intervention, not only personal perception but also the social environment and regulations about alcohol advertising.
TV 프로그램의 음주장면 특성 분석 : 드라마와 예능 프로그램을 중심으로

Objectives: This study aims to analyze drinking portrayals in TV dramas and entertainment shows. Methods: The subjects of this study are 57 dramas and entertainment shows enjoyed by adolescents from January to June 2020. During the same period, 1,107 units are aired from 57 dramas and entertainment shows. We analyzed the structural characteristics and contents of drinking portrayals. Results: Drinking portrayals were described 1,172 times in 56 out of 57 dramas and entertainment shows and 114.18 seconds. Based on the broadcast time of the drinking portrayals compared to the total broadcast time, drama airs the drinking portrayals longer than entertainment show. Drinking portrayals most frequently depicted harmful drinking behaviors such as one-shot, bomb shot(poktanju), binge drinking, and etc. These portrayals tended to show the drinking behaviors as it is in dramas. Conclusions: Dramas and entertainment shows depicts drinking portrayals 1.1 times per units. Drinking portrayals in TV can affect adolescent’s positive attitude toward alcohol, and alcohol consumption. So, Regulation on drinking portrayals need to be reinforced and a national consensus should be formed on this.
