        In order to investigate the degree of changes in quality of fryingoils to be used at snack corners and street stalls in Taegu area,color density, acid value(AV), peroxide value(POV), carbonyl value(COV), and TBA Value were measured. 95 samples in summer and 91 samples in winter were collectedfrom oils fried for fish cake, hatdogs, chicken, vegetable and doug-hnuts. The mean value of color density, AV, POV and COV on thefrying oils collected In summer were higher than those in winter,while TBA value of oils in summer was similar to that in winter.According to the kinds of fried food, the degree of the change inquality of frying oil was high in order of fish cake, hotdog·, chicken,vegetable and doughnuts.

        Application of comparative genomics in developing molecular markers tightly linked to the virus resistance gene <i>Rsv</i>4 in soybean

        <P> The Rsv4 gene confers resistance to all the known strain groups of soybean mosaic virus in soybean (Glycine max (L.) Merr.). To construct a fine genetic map near Rsv4 in soybean, we employed a comparative genomics approach that used genome sequence information of the model legume Lotus japonicus. Sequences of the soybean expressed sequence tags (ESTs) AI856415 and BF070293 mapping to one side of the Rsv4 gene showed high similarity with gene sequences of the transformation-competent artificial chromosome (TAC) clone LjT32P24 of Lotus. LjT32P24 is tightly linked to another sequenced TAC clone, LjT26I01, in Lotus. A new marker, AW307114A, developed from soybean EST AW307114, which is homologous to a Lotus gene within LjT26I01, was mapped to the other side of the Rsv4 gene. The identification of the microsyntenic relationship facilitated the development of additional 2 EST markers between BF070293-S and AW307114A bracketing the Rsv4 gene. Several other markers developed in this study were mapped to putative homoeologous or duplicated chromosomal regions in soybean. Alignment between the soybean maps indicated that Rsv4 is located near a local chromosomal rearrangement. This targeted comparative mapping serves to provide a foundation for marker-assisted selection and cloning of the Rsv4 gene.Key words: comparative genomics, resistance gene, lotus, soybean. </P>

        Protein Quality Evaluation of Cooked Hagfish (Eptatretus burgeri) Meats

        The effect of cooking methods on in vivo and in vivo indices of the protein quality of hagfish meat were investigated. In vivo protein digestibilities of cooked meats (81.3~83.5 %) were not significant different (p<0.05) from those of van meat (82.9%), with the exception of steamed (11$0^{\circ}C$, 15 min) meat (86.3 %). Convection oven cooking (22$0^{\circ}C$, IS min) resulted in a higher trypsin indigestible substrate (TIS, 49.2 mg/g solid) compared with that of raw meat (38.9 mg/g solid). free amino acid content of raw meat was decreased after boiling (10$0^{\circ}C$, 10min). Both convection oven and microwave cooking (2,450 MHz, 3 min) decreased available lysine from 4.9g/16g N to 3.8~4.1g/16g N. In vivo apparent protein digestibilites (AD) of hagfish meat were similar fur raw (92.4%) and cooked meats, but were somewhat lower than ANRC (Animal Nutrition Research Council) casein (945%). The PERs (3.7~4.1) and NPRs (3.7~4.9) of cooked meats were significantly higher (p<0.05) than those of raw meat (PER 3.3, NPR 3.6 and ANRC casein (PER 2.5, NPR 2.6), despite their lower in vivo protein digestibilities. These results demonstrate that cooking at optimal conditions resulted in remarkably positive effects on in vivo and in vivo protein qualities of hagfish meats. Therefore, steamed hagfish meat is an excellent source of high quality protein from seafood products.

        Attempts were made to develop red ginseng-coffee mix for convenient and healthy beverage with red ginseng extract powder, freeze dried coffee and sugar. The optimum formula of red ginseng-coffee mix was abtained by using RSM, based on the results of sensory preference tests of 14 test samples. The optimum formula consisted of 14.0% red ginseng powder 3.0% coffee and 83.0% sugar. There was a significant differences in acceptance of red ginseng-coffee mix between the age groups : age group of 20s liked it slightly, whereas age guoup of 50s liked it very much. The main Flavor compounds of red ginseng powder were β-elemene, β-selinene, gurjunene, β-pinene, limonene, n-hexanal, n-pentanal and n-octanal. The light flavor of red ginseng - coffee mix was mainly from coffee, and the heavy flavor from red ginseng. Red ginseng extract powder contained 108(㎎/g) of saponin, and red ginseng-coffee mix 17.6(㎎/g), respectively. Red ginseng extract powder had 8.6% of acidic polysaccharides and red ginseng-coffee mix 2.3%, respectively. Maltol was detected in red ginseng extract powder as well as in red ginseng-coffee mix.

        Suppression of metastasis of intravenously-inoculated B16/F10 melanoma cells by the novel ginseng-derived ingredient, gintonin: Involvement of autotaxin inhibition

        <P>Ginseng has been used for cancer prevention. However, little is known about its active components and the molecular mechanisms underlying its effects. Recently, we isolated a unique lysophosphatidic acid (LPA) receptor ligand, gintonin. Gintonin contains approximately 9.5% LPA, mainly LPA C18:2. Autotaxin (ATX) is responsible for metastasis by overproducing LPA in cancers. However, LPA, particularly LPA C18:2, is a strong negative feedback ATX inhibitor. It is unknown whether gintonin inhibits ATX activity and whether gintonin?induced ATX inhibition is coupled with antimetastatic activity. In this study, we examined whether gintonin and LPA C18:2 inhibit ATX activity and metastasis?related cellular activities in melanoma cells. We found that gintonin and LPA C18:2 inhibited the purified and secreted ATX activity from melanoma cells in a concentration?dependent manner. Gintonin also inhibited cell migration with a minimal inhibition of cell growth. The oral administration of gintonin or LPA C18:2 inhibited lung metastasis induced by tail?vein inoculations of melanoma cells. Moreover, the oral administration of gintonin significantly suppressed the tumor growth induced by subcutaneous grafts of melanoma cells. A histological analysis showed that the oral administration of gintonin reduced tumor necrosis, the pleomorphism of tumor cells, tumor cell mitosis and angiogenesis. The present study demonstrates that the gintonin?induced inhibition of ATX activity may be the molecular basis of ginseng?induced antimetastatic and antitumor activities.</P>

      • Dietary Fiber in Codulbaegi (Korean Lettuce, Ixeris sonchifolia H.) Kimchi

        고들빼기 김치의 식품학적 특성을 알아보기 위하여 김치 제조과정 주의 식이섬유질 함량과 수성 변화를 실험하였으며, 진공동결건조 김치분말에 대한 보수력과 오일 흡착력을 측정하였다. 어린 고들빼기일수록 중성세제 섬유질(NDF) 및 산성세제 섬유질(ADF)의 함량이 많았으며 뿌리부분에는 잎부분에 비하여 적은량의 식이섬유질(ADF 및 NDF)가 함유되어 있었다. 성숙한 뿌리를 제외하고는 일반적으로 5% 식염수에 침지할 경우에는 식이섬유질 ?량은 높아지나 발효가 진행됨에 따라 이들 섬유질의 함량은 서서히 줄어들고 있었다. 셀롤로오즈가 산성세제 섬유질의 90%를 차지하는 것으로 보아 김치제조과정 중의 식이섬유질 함량 변화는 일부 가용성 식이섬유질의 유출 및 셀롤로오즈의 구조변화에 영향을 받은 것으로 생각되었다. 보수력과 오일 흡착력은 식이섬유질 함량변화와 비슷한 결과를 보였으며 오일 흡착력의 40% 정도였다. The effect of processing conditions on the changes in the contents of dietary fiber fractions and its physical properties of Godulbaegi (Korean lettuce, Ixeris sonchifolia H.) was determined during preparation and fermentation for kimchi. Water holding capacity (WHC) and oil adsorption capacity (OAC) were also checked on the subject of freeze dried powder from different stages of the kimchi processing. Neutral detergent fiber (NDF) content in young samples (leaf and root) decreased with prolonged soaking and fermentation period. Every young samples had a higher level in NDF than in ripe samples. Noticeable decrease in acid detergent fiber (ADF) without a change in ripe roots was showed after fermentation (4℃, 60 days). The water holding capacity of freeze dried young plants ranged from 5.78m) / g for roots to 6.31 ml J g for leaves. Soaking and fermentation resulted in decreasing WHC and about 50% of WHC (raw leaves) was lowered after kimchi fermentation (4℃, 40 days). OAC of all samples were lower than WHC in same samples significantly and those were also decreased after soaking and fermentation as WHC.

        Pert and his co-workers(1976) reported that opiate receptors were identified autoradiogr- aphically in the brain and the substantia gelatinosa of the posterior horn of the spinal cord. In recent stuffy of Behar (1979), small doses of morphine administered directly into the lumbar epidural space produced potent analgesia. The results of above authors prompted us to study the effect of epidurally applied sma11 doses of morphine in patient suffering from postoperative and pathologically intractable pain. In an attempt to relieve postoperative pain after lumbar epidural, caudal and brachial plexus b1ock, there were divided into two groups for study; One of these groups is control group which was injected with 2% lidocaine only and another of theme groups is morphine group which was injected with 2% lidocaine and small doses of morphine (3.5∼5.5mg). The postoperative pain relief more than 12 hours from induction in morphine group was 86.1% in lumbar epidural anesthesia and 82. 5% in caudal anesthesia. And these effective-ness was more prolonger than control groups. In the cases of pathological intractable pain relief, Case I was a patient of herpes zoster which was developed on right shoulder, upper anterior and posterior chest, and posterior auricular area with the severe pain. At 5 days after initial block, severe pain was completely subsided with 5 times of small doses of morphine injection into the epidural space. Case Ⅱ was a patient of lung cancer with severe pain and this effective pain relief was obtained for two and half days with 3 times of above same method. But after discharge from hospita1, the severe pain was developed again and above method was ineffective. Complications of this method were same with ordinarily epidural block in cases which used 2% lidocaine and slightly over came, but no loss of motor appeared in cases of morphine alone to be used. Impairment of spontaneous voiding after this method is still remained in prob1em of further study. The advantage of this method would be to provide predictab1e relief from pain without attendant lose of motor or sensory function. It is tempting to speculate that this technique may be used for postoperative pain and intractable pathological pain except cancer pain. However, further studies are needed to estab1ish the clinical applicability of epidural inject-ions of morphine, espicially with regard to the effects on longterm control of pain.

        자발성 척수 경막외 혈종 : 치험 2례 Report of Two Operative Cases

        Spontaneous spinal epidural hematoma is a rare disease. Typically, a healthy man engaging in usual activity of daily life develops back or neck pain suddenly and most victims are unable to walk within 6 hours. We treated two cases of spontaneous spinal epidural hematoma surgically. One case developed hematoma in the thoracolumbar junction in a adult man, and the cause of hematoma could not be confirmed with surgery. Another case developed hematoma in the midthoracic area in a boy, and the source of bleeding was confirmed as arteriovenous malformation in spinal epidural fat tissue. Related literatures were reviewed.
