토스팅에 따른 김의 지방질 산화, 산화방지성분과 색소 변화

건조 김은 120oC에서 40 s 또는 300 s, 250oC에서 2 s, 5 s의 토스팅 과정에 의해 과산화물값과 공액이중산값이 증가하고 불포화지방산과 포화지방산의 함량 비율인 U/S 값이 감소하는 등 그 정도가 크진 않았으나 유의하게 지방질이 산화되었으며, 토스팅 조건 차이에 따른 유의한 영향은 없었다. 또한 산화 방지 성분 중 포피란이 김의 토스팅에 가장 안정하였고 폴리페놀 화합물이 가장 불안정하였다. 토스팅에 의해 김에 존재하는 색소 중 파이코사이아닌과 파이코에리트린의 분해가 가장 컸으며, β-카로텐과 루테인은 30-50% 정도의 분해율을 보였고 클로로필 a의 분해율은 10% 미만으로 가장 안정하였다. The effects of toasting, simulated gimgui (dried and toasted laver) manufacturing, on lipid oxidation and antioxidant and pigment contents of dried laver (Porphyra spp.) were evaluated by peroxide value (POV) and conjugated dienoic acid (CDA) value measurement, HPLC, and spectrophotometry. Dried laver was toasted for 40 or 300 s at 120℃, or for 2 or 5 s at 250℃. The POV and CDA contents were significantly higher in the toasted samples (0.60-0.69 mmol/kg and 2.17-4.20%, respectively) except in samples toasted at 120℃ for 40 s, compared to those in the non-toasted samples (0.43 mmol/kg and 1.21%, respectively). Chlorophyll was the most stable pigment during toasting (>90% retention), followed by carotenoids (50-77% retention) and phycocyanins and phycoerythrins (13-73% retention). Porphyran was the most stable antioxidant (>95% retention), and polyphenols, the most unstable antioxidant (24-75% retention). Despite the degradation of pigments and antioxidants during toasting, the dried laver still contained health-benefiting components after toasting.

이 연구의 목적은 중등교사들의 환경 관련 수업 전문성을 심층적으로 분석하는데 있다. 연구를 진행하기 위해 먼저, 서울과 경기도의 중등교사 431명을 대상으로 환경수업 전문성에 대한 자기평가를 실시하였다. 자기평가도구로는 Hungerford 등(1994)이 개발한 ‘환경교육자가 갖추어야할 능력 범주 기준’를 활용하였다. 그리고 자기평가를 실시한 중등교사들 중에서 2명의 교사가 진행하는 환경 관련 수업을 실제 참관하여 비디오녹화 분석하였고, 수업교사들과의 면담도 실시하였다. 환경 관련 수업 전문성에 대한 자기평가 결과, ‘생태학적 기초’ 영역이 평균 2.80, 개념적 인식 영역이 평균 2.86, 조사와 평가 영역이 평균 2.83, 환경적 행위기능 영역이 평균 2.94, 교육적 적용 영역이 평균 2.84로 나타났다. 또한, 실제 수업을 분석한 결과, 환경관련 수업을 진행한 교사들은 현대 환경교육에서 강조되고 있는, ‘생태학적 지식을 교수학습에 효과적으로 적용하는 측면’, ‘환경적 의사결정을 위해 개인적 가치를 명료화하는 측면’, ‘환경쟁점과 해결책에 대한 자신의 가치관을 평가하는 측면’, ‘환경적으로 지속가능발전을 위해 시민적 행위기능을 개발하는 측면’에서 다소 미흡한 것으로 나타났다. 이 연구는 중등학교에서 환경관련 수업을 담당하고 있는 교사들을 위한 환경교육 연수프로그램을 개발하고 운영하는데 의미 있는 시사점을 제공해 줄 수 있을 것이다. The objective of this study is to find out the professionalism of secondary school teachers in teaching environmental subjects. This research was conducted using a questionnaire survey of 431 secondary school teachers from 34 schools in Seoul and Gyeonggi Province, Korea. A 5-point Likert scale self-evaluation questionnaire on their professionalism in environmental education was developed based on Hungerford et al.'s (1994) evaluation criteria. Two middle school teachers' classes were observed, and video taping and interviewing were also conducted. The survey analysis revealed that teachers evaluated their professionalism on environmental subjects to be a little above the middle of the scale. The mean values were 2.80 for the foundation level; 2.86 for the conceptual awareness level; 2.84 for the investigation level; 2.94 for the environmental action skills level; and 2.84 for the educational application level. However, class observations revealed that there was some gap between their self-evaluation of professionalism and their actual classroom application. Both classes were not that satisfactory with regard to 'the abilities to communicate and apply ecological concepts', 'the ability to clarify the roles of different value systems for environmental issues and personal values in decision making', 'the ability to clarify their own value system regarding solutions to environmental issues', and 'the ability to apply citizen action skills for solving environmental issues and for sustainable development'. The results provide a basic reference for the improvement of environmental-related education.

<P>p300/CBP-associated factor (PCAF), a histone acetyltransferase, is involved in many cellular processes such as differentiation, proliferation, apoptosis, and reaction to cell damage by modulating the activities of several genes and proteins through the acetylation of either the histones or transcription factors. Here, we examined a pathogenic role of PCAF and its potential as a novel therapeutic target in the progression of renal tubulointerstitial fibrosis induced by non-diabetic unilateral ureteral obstruction (UUO) in male C57BL/6 mice. Administration of garcinol, a PCAF inhibitor, reversed a UUO-induced increase in the renal expression of total PCAF and histone 3 lysine 9 acetylation and reduced positive areas of trichrome and α-smooth muscle actin and collagen content. Treatment with garcinol also decreased mRNA levels of transforming growth factor-β, matrix metalloproteinase (MMP)-2, MMP-9, and fibronectin. Furthermore, garcinol suppressed nuclear factor-κB (NF-κB) and pro-inflammatory cytokines such as tumor necrosis factor-α and IL-6, whereas it preserved the nuclear expression of nuclear factor erythroid-derived 2-like factor 2 (Nrf2) and levels of Nrf2-dependent antioxidants including heme oxygense-1, catalase, superoxide dismutase 1, and NAD(P)H:quinone oxidoreductase 1. These results suggest that the inhibition of inordinately enhanced PCAF could mitigate renal fibrosis by redressing aberrant balance between inflammatory signaling and antioxidant response through the modulation of NF-κB and Nrf2.</P>

<P>Current therapeutic strategies are insufficient for suppressing stent-induced restenosis. Here, branched gold nanoparticles (BGNP)-coated self-expandable metallic stents (SEMSs) were developed for a local heat-induced suppression of stent-related tissue hyperplasia. Our polydopamine (PDA) coating on SEMS allowed BGNP crystal growth on the surface of SEMSs. The prepared BGNP-coated SEMS showed effective local heating under near-infrared laser irradiation. The effectiveness of BGNP-coated SEMSs for suppressing stent-related tissue hyperplasia was demonstrated in a rat esophageal model (<I>n</I> = 52). BGNP-coated SEMS placement under fluoroscopic guidance was technically successful in all rats. The placed BGNP-coated SEMS in rat esophagus achieved three different local heat dose ranges (50, 65, and 80 °C) under fluoroscopic image-guided local irradiation. Follow-up endoscopic examination readily monitored the local heating and observed significantly decreased tissue hyperplasia at 4 weeks of local heat treatments (50 and 65 °C). Finally, Western blot, histology, immunohistochemistry (HSP70, αSMA, and TUNEL), and immunofluorescence (Ki67 and BrdU) analyses along with the statistical analysis confirmed that optimized BGNP-coated SEMS-mediated local heat treatments inducing the expression of anti-inflammatory HSP70 effectively suppresses tissue hyperplasia after stent placement in the esophagus. Our local heating with nanofunctionalized stents represents a promising new approach for suppressing stent-related tissue hyperplasia.</P> [FIG OMISSION]</BR>

돌김은 단백질, 탄수화물 및 조회분 함량이 매우 높았으며, EPA가 전체 지방산 함량 중 53-55%를 차지하였다. 돌김의 색소중 β-카로틴과 루테인을 포함하는 카로티노이드 함량이 피코에리트린과 피코시아닌을 포함하는 피코빌린 함량보다 높았으며 클로로필 a는 가장 적게 함유되었고 모든 색소는 반돌김과 파래김보다 온돌김에 적게 함유되었다. 돌김의 산화방지 성분 중 포피란 함량이 가장 높았으며 토코페롤 함량은 가장 낮았다. 파래김에 비해 온돌김과 반돌김의 폴리페놀 화합물 함량이 유의하게 높았으며 포피란 함량은 돌김의 종류에 관계없이 비슷하였다. 돌김의 종류 에 따른 큰 차이없이 물 또는 20% 에탄올 추출물은 100% 에탄올 추출물에 비해 유의하게 높은 라디칼 소거 활성을 나타냈다. The composition and antioxidant activity of three kinds of dried laver were compared (ondolgim, bandolgim, and paraegim). Dolgim was high in protein (>35%), carbohydrates (>41%), and minerals (>7.5%). Lipid content in dolgim was very low (<1%); eicosapentaenoic acid was the most abundant fatty acid. There were higher levels of carotenoids than phycobilin in dolgim, and chlorophyll among pigments was present at the least amount. Porphyran content was high (>110g/kg), while tocopherol content was very low (<12.0 mg/kg). Ondolgim had the lowest levels of carotenoids, phycobilin, and chlorophyll, however, polyphenol content was higher in ondolgim. The antioxidant activity was the same among the three kinds of dolgim, and both water and a 20% ethanol extract of dolgim showed higher antioxidant activity than did a 100% ethanol extract. The results suggested that dried laver dolgim was a good food and that all varieties provided both food and health functionality.
