China has become the largest source of capital in Cambodia. Managers of state enterprises that construct hydropower plants and roads—as well as private investors and managers in mining, agricultural land concessions, and garment manufacturing—wield increasing influence and are beginning to shape labor practices. In this situation, mainland Chinese migrants are no longer seen by the Sino-Khmer as the marginal and suspect outsiders that they were twenty years ago. Rather, for both the increasingly entrenched Sino-Khmer elite and the struggling Sino-Khmer middle classes, they are a source of business opportunities or jobs. The Sino-Khmer have emerged as middlemen both between Chinese capital and the neopatrimonial Cambodian state and between Chinese managers and Khmer labor. This role is predicated upon a display of Chineseness whose form and content is itself rapidly changing under the influence of an increasing number of teachers and journalists who come from the mainland to run Cambodia’s Chinese-language press and schools. This paper will attempt to makes sense of the facets of this change.

The size distribution of airborne particulate matter (PM) and the concentrations of associated metallic elements were investigated in a busy urban region of a typical Korean industrial city. The PM concentrations measured during the spring, except for those in the size range of 1.1 to 2.1 ${\mu}m$, were slightly higher than the PM concentrations in the summer. Coarse particles contributed greatly to the variation in PM concentrations in the spring, while fine and submicron particles contributed largely to the variation in PM concentrations in the summer. The difference in size modes of the PM concentrations between spring and summer may be explained by the Asian dust effect and its accompanying wind direction and speed. Extremely high enrichment factors (EFs) values (6,971 to 60,966) for all of the size distributions in PM were identified for cadmium (Cd). High EFs values (12 to 907) were also identified for other heavy metals including Cr, Cu, Ni, Pb, Zn and Mn. Low EF values (0.29 to 8.61) were identified for Ca, K, Mg and Na. These results support the common hypothesis that most heavy metals in ambient PM have anthropogenic sources and most light metals have crustal sources. The results of principal components analyses and cluster analyses for heavy metals indicate that the principal sources of PM and metals were emissions from non-ferrous metal smelters, oil combustion, incinerators, vehicular traffic and road dust.

For precise identification of a Lactobacillus K1 isolate, LC-MS/MS analysis of the putative surface layer protein was performed. The results obtained from LTQ-FT-ICR mass spectrometry confirmed that the analyzed protein spot is the surface layer protein originating from Lb. helveticus species. Moreover, the identified protein has the highest similarity with the surface layer protein from Lb. helveticus R0052. To evaluate the proteomic study, multilocus sequence analysis of selected housekeeping gene sequences was performed. Combination of 16S rRNA sequencing with partial sequences for the genes encoding the RNA polymerase alpha subunit (rpoA), phenylalanyl-tRNA synthase alpha subunit (pheS), translational elongation factor Tu (tuf), and Hsp60 chaperonins (groEL) also allowed to classify the analyzed isolate as Lb. helveticus. Further classification at the strain level was achieved by sequencing of the slp gene. This gene showed 99.8% identity with the corresponding slp gene of Lb. helveticus R0052, which is in good agreement with data obtained by nano-HPLC coupled to an LTQ-FT-ICR mass spectrometer. Finally, LC-MS/ MS analysis of surface layer proteins extracted from three other Lactobacillus strains proved that the proposed method is the appropriate molecular tool for the identification of S-layer-possessing lactobacilli at the species and even strain levels.

본 연구는 설기떡에 쌀에 부족한 단백질 등 영양이 풍부한 아몬드를 첨가하여 설기떡의 건강 기능성을 향상하고자 아몬드를 6, 12, 15% 첨가한 설기떡을 제조하였다. 가용성 고형물 함량은 아몬드 첨가량이 증가할수록 유의적으로 감소하였고 환원당은 아몬드 첨가량이 증가할수록 유의적으로 감소하였다. pH와 산도는 아몬드 첨가량에 따른 변화가 없었다. 색도는 아몬드의 첨가량이 증가할수록 명도는 유의적으로 감소하였고, 적색도와 황색도는 유의적으로 증가하였다(P<0.05). 항산화능은 DPPH 라디칼 소거능 및 hydroxyl 라디칼 소거능 모두 아몬드의 첨가량이 증가함에 따라 IC50 값이 감소하여 아몬드의 첨가량이 증가함에 따라 항산화능이 증가하였다. 이는 총페놀 함량이 아몬드의 첨가량이 증가함에 따라 농도 의존적으로 증가하는 결과에 기인하는 것이다. 관능검사 결과 강도 특성으로는 아몬드를 첨가할수록 색과 아몬드 향, 아몬드 맛에 대한 점수가 높게 나타났으며, 짠맛은 아몬드 첨가량이 증가할수록 높아졌다. 기호도에서 외관, 조직감, 전체적인 기호도는 아몬드 12% 첨가군에서 가장 높은 점수를 받았다(P<0.05). 이상의 결과로부터 설기떡에 아몬드 첨가 시 설기떡의 품질 특성 및 항산화능이 개선되었으며, 설기떡에 첨가하는 아몬드의 양은 12%가 적당한 것으로 생각되었다. The purposes of this study were to evaluate the quality characteristics and antioxidant activities of Sulgidduk added with almond powder (0, 6, 12, or 15%). As the amount of almond powder increased, soluble solid content (°Brix) and reducing sugar content (%) decreased, whereas pH and acidity were unchanged. The L (lightness) value in the Hunter color system of Sulgidduk added with almond powder decreased, whereas a (redness) and b (yellowness) values increased. Total phenolic content of Sulgidduk increased according to the amount of almond powder. The antioxidant activities, including 1,1-diphenyl-2-picrylhydrazyl and hydroxy radical scavenging activities, increased in Sulgidduk with almond powder compared with that of the control. It is concluded that Sulgidduk with almond powder may be of high quality with antioxidant activity. In the sensory test, Sulgidduk added with 12% almond powder showed the highest score in terms of overall preference.
