        Factors Influencing the Acrylamide Content of Fried Potato Products

        BACKGROUND: Acrylamide (CAS No. 79-06-1) is known to be a carcinogenic compound, and is classified as a Group 2A compound by the International Agency for Research on Cancer (IARC, 1994). Acrylamide can be generated during the browning process via the non-enzymatic Maillard reaction of carbohydrates such as reducing sugars and of amino acids such as asparagine, both of which occur at a temperature above 120℃. Potato tubers contain reducing sugars, and thus, this will affect the safety of processed potato products such as potato chips and French fries. In order to reduce the level of acrylamide in potato processed products, it is therefore necessary to understand factors that affect the reducing sugar content of potatoes, such as environmental factors and potato storage conditions, as well as understanding factors affecting acrylamide formation during potato processing itself. METHODS AND RESULTS: Potatoes were cultivated in eight regions of Korea; For each of these different environments, soil physico-chemical characteristics such as pH, electrical conductivity, total nitrogen, available phosphate, and exchangeable cation content were measured and correlations with potato reducing sugar content and potato chip acrylamide levels were examined. The reducing sugar content in potato during storage for three months was determined and acrylamide level in potato chip was analyzed after processing. The storage temperature levels were 4℃, 8℃, or 10℃, respectively. The acrylamide content of chips prepared from potatoes stored at 10℃ or 2 0℃ for one month was analyzed and the different frying times were 2, 3, 5, and 7 min. CONCLUSION: This study showed that monitoring and controlling the phosphate content within a potato field should be sufficient to avoid producing brown or black potato chips. For potatoes stored at low temperatures, a reconditioning period (20℃ for 20 days) is required in order to reduce the levels of reducing sugars in the potato and subsequently reduce the acrylamide and improve chip coloration and appearance.

      • 고랭지 두류의 적응 특성 및 품질 특성

        고랭지농업지대는 감자, 배추 등 단작위주의 농업형태가 주를 이루고 있다. 고랭지농업지대에 신소득작목의 개발 및 토양환경보전을 이루는 작부체계 도입이 시급하다. 고랭지에 적응성이 좋은 두류를 선발하고 품질특 성을 연구하여 새로운 소득작목으로의 개발과 토양환경보전을 향상시키기 위하여 본 연구를 수행하게 되었다. 두류는 녹두 9품종, 팥 5품종을 재배하여 고랭지 적응성을 검토하였다. 녹두 중 10a당 수량이 120kg이상되는 품종은 소현, 금성, 다현, 소선, 어울, 장안 이었으며, 팥은 충주, 연금 품종이 140kg 이상 경원품종은 172kg의 수량성을 나타냈다. 고랭지에 적응성이 좋은 품종을 대상으로 품질특성을 구명하고자 GABA 등 유리아미노산 의 분석과 안토시아닌을 분석하였다. 녹두 9품종의 GABA함량 평균치는 15.7mg/100g으로 분석되었으며, 범위 는 2.8∼41.3mg/100g으로 나타났다. 삼강녹두의 GABA 함량은 평균 25.2mg/100g으로 9품종 중 가장 높은 함량 을 보였다. 팥 5품종의 평균 안토시아닌 함량은 13.8mg/100g이었으며, 칠보팥의 안토시아닌 함량이 가장 높아 40mg/100g을 보이는 것으로 분석되었다. 고랭지에 적응 특성이 좋은 두류 품종을 대상으로 여러 가지 품질특성 을 구명 및 다양한 식품소재 개발에 연구를 진행하여 고랭지 농업지대의 신소득 작목 가능성을 모색할 것이다.

        저장 중 감자 아스파라진 함량의 변화

        In order to research changes of asparagine content according to stage after harvest to storage, it was analysed asparagine content of potato tuber and potato sprout. The results of the asparagine content in potato cultivars after harvest ranked in cv. Superior, cv. Gahwang, cv. Atlantic and cv. Goun in descending order. The content of asparagine in potato was approximately 1300 mg/100g (D.W.) The changes the asparagine content according to storage condition and the difference of asparagine between tuber and sprout can be summarized as follows. In the asparagine content of potato cultivars, Little variation in the content was observed while potato tubers were stored at 4℃. However, after 3months of storage at 10℃, the content increased by 9.7%,indicating that the content increases as the storage temperature and period increases. The content of asparagine also increased during sprouting of potato tubers. In the sprout, the proximal region contained 21% higher content of asparagines than the distal region, which suggests that the sprout develops with the increasing of the content of asparagines. 수확 후 저장하면서 감자에 함유된 아스파라진 함량의변화를 연구하기 위하여 수확 후, 저장 중, 감자싹의 아스파라진 함량을 분석하였다. 수확 후 감자 품종별 아스파라진 함량은 수미 가황 대서 고운 품종의 순으로 높았다. 감자 품종에 함유된 아스파라진 함량은 건물중 기준평균 1300 mg/100g이었다. 저장 조건에 따른 아스파라진변화를 분석하고 괴경과 싹을 구분하여 아스파라진 함량을 분석한 결과를 요약하면 다음과 같다. 아스파라진의함량은 4℃에 저장할 경우에는 저장기간에 관계없이 큰변화가 없는 경향이었지만, 10℃에서는 3개월간 저장하였을 때 9.7% 증가하여 저장온도가 높고 저장기간이 길어질수록 아스파라진의 함량은 증가하는 경향을 보였다. 감자싹의 위치별 아스파라진의 함량은 괴경과 맞닿은 아래부분의 싹이 상부의 싹에 비하여 21% 높았다. 휴면이타파되고 맹아가 출현하여 싹이 발달하는 과정에서 아스파라진의 함량은 증가하는 것으로 생각된다.

        고랭지 지역에서 재배한 녹두 품종들의 항산화 활성 및 아미노산 조성 비교

        Abstract: This study was performed to investigate differences of antioxidant activity, the content of free amino acids including GABA(gama-amino butyric acid) among mungbean cultivars grown in Highland area (Jinbu) and to compare those between seeds and sprouts. In DPPH (diphenyl picrydrazyl) radical scavenging activity, `Jangan` mungbean activity was more higher than that of other cultivars. The content of total phenolic compounds of mungbean ranged from 1,186 to 1,493 ㎍/g in seed and 2,321 to 2,783 ㎍/g in sprout. Among amino acids of seeds, the content of glutamic acid was highest in `Soseon` mungbean, and contents of almost amino acids increased during sprouting of seeds. The content of GABA that are known as a material having high functional effects on human body was also analyzed. When the relatively high content of GABA was observed in seeds of almost mungbean grown in highland, and their contents rapidly increased after sprouting from seeds. As a result of this experiment, it is expected that mungbean will be developed to a good alternative crop having high value as functional food materials in highland area of Korea.

        우박저항성과 관련된 감자품종의 줄기 특성

        BACKGROUND: Recently, weather disasters such as hail and typhoon occur frequently. These threaten the stable cultivation of potatoes. It is very important to cultivate potatoes with stable under unexpected weather disasters. This study was performed to investigate the correlation between mophological characteristics of potato stem and its resistance to hail damage in different potato cultivars. METHODS AND RESULTS: Hail fall occurred for 8 minutes on May 31, 2012 in the field of Highland Agriculture Research Center located in Jinbu-myeon Gangwon-do. Potato crop grown in the field was affected by hail due to which the stems of potato were broken. The percentage of broken stem of potato was investigated as the level of damage by hail. To determine the difference in theratio of broken stem among the potato cultivars, physical characteristics of potato stem such as diameter and hardness were measured. To evaluate recovery phase after hail damage, ground coverage and yield were measured. The percentage of broken stem of cv. Goun and cv. Saebong were 30%, 26%, respectively, whereas it was 5% in the cv. Atlantic. Damage by hail was the lowest in cv. Atlantic. Diameter of the stem was 15 mm in cv. Atlantic, 13 mm in cv. Goun and 11 mm in cv. Saebong. The hardness of potato cultivars was measured which was 74 N in cv. Atlantic. 71 N in cv. Goun and 59 N in cv. Saebong. The ground coverage in cv. Atlantic was 79%, which was the highest followed by 73% in cv. Saebong and 56% in cv. Goun. The yield of cv. Atlantic was monitored at 90 days after planting which was 40 MT/ha and that of cv. Saebong was 36 MT/ha, whereas in cv. Goun, it was 30 MT/ha which was the lowest. CONCLUSION: The ratio of broken stem in cv. Atlantic was the lowest compared to cultivars. In the physical characteristics of stem, cv. Atlantic was the highest in value of diameter and hardness. Based on these results, it wasconsidered that cv. Atlantic was resistant to hail damage compared to other cultivars.

        야콘의 국내외 재배동향과 전망

        땅속의 과일로 알려진 야콘은 라틴 아메리카 안데스 지역이 원산인 국화과 식물로 고구마처럼 생겼으며, 생으로 먹으면 아삭아삭한 배 맛을 느낄 수 있다. 다년생 초본으로 분류되지만 초겨울에 동상해가 자주 발생하는 곳에서는 식물체가 고사하기 쉬우므로 일년생으로 재배하기도 한다. 최근 세계 야콘 생산동향을 살펴 본 결과를 요약하면 다음과 같다. 1. 안데스 지역에서 천년 이상 재배되어 온 야콘의 최근 기능성 성분이 밝혀지면서 전세계적으로 생산 수요가 급증하였다. 2. 야콘은 원산지인 안데스를 벗어나 최근 30년간 전세계적으로 확대되어 일본, 미국, 체코, 독일, 뉴질랜드, 및 우리나라에서 적응성 및 생산성이 검토되었다. 3. 야콘의 생산성은 ha 당 체코 24톤, 에콰도르 41톤, 페루 27 ~ 52톤, 브라질 32 ~ 100톤, 뉴질랜드 40톤, 일본 49톤, 대한민국 19~55톤으로 국가별로 많은 차이를 보인다. 4. 국내에서는 야콘의 기능성 성분이 알려지면서 최근 10년간 야콘의 재배면적과 재배농가 수는 1999년 8 ha, 10여 농가에서 2009년에는 166 ha, 447농가로 각각 20배, 45배 증가하였다. 5. 우리나라에서 친환경 재배 가능한 작물인 야콘의 수요가 점진적으로 증가할 것으로 판단된다. Yacon or Peruvian ground apple [Samallanthus sonchifolius (Poepp. & Endl.) H. Robinson] is a member of the compositae plant family, it resembles like sweet potato-root and which is a native to the Andes region in Latin America. It is classified as a perennial herb and tastes like crispy pear when eaten raw. However, yacon is sometimes grown as an annual crop since it is prone to wither away in areas where freeze and frost injury often occur during early winter. The global trend in yacon production is as follows: The demand has recently soared high because of its functional content. Secondly, the adaptability and productivity of yacon have been examined in countries like Japan, Czech Republic, Germany, New Zealand, and Korea. Due to the high functional ingredient of yacon, cultivation areas and farmers have rapidly increased for the past 10 years, and will increase, respectively. Thirdly, It is expected that the demand for yacon will gradually increase in Korea by environment-friendly cultivation potentials.
