The present study evaluates antioxidant, tyrosinase inhibitory, and acetylcholinesterase (AChE) inhibitory activities of seed and its pericarp of tea plant (Camellia sinensis L.). Water and methanol extracts of tea seed and pericarp were prepared in a shaking incubator overnight at room temperature. The highest total phenolic contents,DPPH and ABTS radical scavenging activities, reducing power, β-carotene bleaching inhibition activity, highest tyrosinase inhibitory activity, and AChE inhibitiory activity were found in the methanol extracts of pericarp. Caffeine,gallic acid, several phenolic compounds, hydroxymethyl furfural, and fatty acid derived compounds were detected in the extract of tea seed and pericarp. The results indicate that seed and pericarp could be utilized as the potential resources for antioxidant ingredients in food industry. In addition, these compounds may protect Alzheimer’s disease as they had inhibitory activity of acetylcholine esterase.
장성 대봉감의 부위별 메탄올 추출물의 항산화 활성 및 항암 활성

장성 대봉감을 부위별(과육, 껍질, 심, 씨, 꼭지)로 세분하여 메탄올 추출물을 제조한 후 항산화 활성과 항암 활성을 조사하였다. 총 페놀 함량은 씨>꼭지>껍질>과육>심의 순위였으며, 항산화 활성에 관해 분석한 항목인 DPPH 라디칼 소거능, ABTS 라디칼 소거능, 환원력은 모든 경우에서 씨>꼭지>과육>껍질>심의 순위로 나타났다. 인간 유래 대장암 세포주에 대한 대봉감 추출물의 항암 활성은 꼭지>씨>껍질>심>과육의 순서로 측정되었으며, 꼭지 부위 추출물은 농도의존적으로 항암 활성을 보였다. 이상의 결과로 장성 대봉감의 씨와 꼭지에서 항산화 활성과 항암 활성이 확인되어 이들 부산물을 유용하게 이용할 필요가 있을 것으로 생각된다. The antioxidant activity of methanol extracts from five different parts (flesh, peel, core, seed, calyx) of Jangseong Daebong persimmon (Diospyros kaki cv. Hachiya) were evaluated by determining total phenol content (TPC), DPPH radical scavenging activity (RSA), ABTS RSA, and reducing power (RP). The flesh extract gave the highest yield (92.93%) while the lowest yield was obtained from the seed (5.17%). The seed extract showed the highest total phenolic content (76.47±0.009 ㎎ GAE/g extract), DPPH RSA (IC??=52.05±1.61 ㎍/mL), ABTS RSA (IC??=30.94±0.41 ㎍/mL) and RP (IC??=87.94±0.37 ㎍/mL). In addition, the calyx extract also showed high antioxidant activity. On the other hand, the core extract gave the lowest TPC and all antioxidant assays. In particular, HT-29 cells showed extensive cell death when treated with 500 ㎍/mL of calyx extracts. Thus, these results suggest that methanolic extracts of Jangseong Daebong persimmon seed and calyx may serve as a potential source of natural antioxidant for food and nutraceutical application.

본 연구는 인공합성보존료를 대체할 수 있는 천연보존료의 개발을 위한 방안으로 대표적인 세균성 식중독 미생물로서 그람 음성균인 Escherichia coli O157:H7과 Salmonella Typhimurium, 그리고 그람 양성균인 Staphylococcus aureus와 Listeria monocytogenes에 대한 항균 특성을 조사하였다. 구아바 가지와 잎의 메탄올과 에탄올 추출물 S. aureus의 생육을 저해하였으며, 아울러 가지와 잎의 아세톤 추출물은 200 ppm 농도의 첨가에서 식중독 원인균 S. aureus균을 전혀 자라지 못하는 결과를 확인하였다. 이러한 결과는 구아바 잎과 가지의 추출물에 그람 양성균에 대한 높은 항균활성이 있음을 의미하며, 구아바 가지를 항균력을 가지는 소재로 이용될 수 있음을 시사한다. Guava (Psidium guajava L.) contains high amount of vitamins and minerals, and its leaves have been reported to be very effective on reducing blood pressure. In this study, antimicrobial characteristics of extracts from four different parts of guava (fruit, branch, leaf, and seed) with four different solvents (methanol, ethanol, acetone, and water) were evaluated. Four targeted food-borne microorganisms were selected; two Gram negatives (Escherichia coli O157:H7 and Salmonella Typhimurium) and two Gram positives (Staphylococcus aureus and Listeria monocytogenes). By the paper disc method, guava extracts showed stronger clear hollow zone against Gram positive bacteria than Gram negatives in nutrient broth agar plate. Especially, extracts of branches and leaves showed significant antibacterial activity. Guava extracts also showed significant inhibition activity on the growth of Gram positive food-borne bacteria in nutrient broth. For example, S. aureus did not grow at all at 200 ppm of acetone extracts of guava branch and leaf. In the case of L. monocytogenes, the same concentration of acetone extracts of guava branch and leaf inhibited the growth 33.5% and 55.4%, respectively, at 32 hrs of incubation time. The results indicated that extracts of guava branch and leaf showed significant antibacterial activities against food-borne Gram positive microorganisms, and that guava branches, the byproducts of guava, might be a valuable resource for antibacterial materials.

Marine organisms are sources of many bioactive compounds, such as essential fatty acids, essential amino acids, vita-mins, and minerals, making them useful candidates for the production of safe bioactive substances. They also synthe-size glutamic acid, which can be used to produce γ-aminobutyric acid (GABA), the major inhibitory neurotransmitter in the central nervous system (CNS), via fermentation with Lactobacillus brevis BJ-20. This study investigated the degree to which fermented sea tangle (FST) inhibits enzymes such as acetylcholine esterase (AChE) and prolyl en-dopeptidase (PEP) and affects memory of normal mice using the T-maze test. FST inhibited more than 90% of AChE at 1 mg/mL and 50% of PEP at 8 mg/mL. Oral FST (100 mg/kg) significantly improved performance of normal mice on the T-maze. Therefore, sea tangle fermented with L. brevis BJ20 effectively contributes to memory improvement and might be a useful functional food ingredient.
