The present study evaluated the effects of batch and continuous high-frequency (HF) thawing methods on frozen fish blocks. Samples were thawed by natural air convection thawing (NCT), or batch (1kW), or continuous (7kW) HF (27.12 MHz) thawing methods. The quality aspects of the thawed samples were evaluated by measuring drip loss, water holding capacity, extractive-nitrogen, and viable cell count. The drip loss was similar between the two HF thawing modes (0.47-0.87 g/100 g [batch], 0.1-0.74 g/100 g [continuous]). The water holding capacity did not differ between the two methods. The extractive-nitrogen content significantly differed between the two methods (276.8-420.3 mg/100 g [batch] vs 307.1-485.6 mg/100 g [continuous], p < 0.05). The viable cell count range was 102 to 103 CFU/g (batch) and <20 to 102 CFU/g (continuous). Our findings indicate that HF thawing provides rapid defrosting with minimal quality deterioration of frozen fish blocks.

In this study, 143 strains of Enterococcus spp. were isolated from inland pollution sources near shellfish farms on the west coast of South Korea. Not all isolated Enterococcus spp. strains possessed vancomycin resistance genes (VanA and VanB). However, since vancomycin-resistance Enterococcus (VRE) have been detected not only in the clinical field but also out in the world, it is possible that the VRE gene may be transferred to other bacterial strains commonly found in coastal waters where seafood is produced. It is important to monitor trends in the appearance of VRE. In addition, antimicrobial resistance patterns of isolates were examined in this study. Overall antimicrobial resistance rates were high: ciprofloxacin (32.2% of isolates resistant), chloramphenicol (30.8%), quinupristin/dalfopristin (19.6%), and tylosin (15.4%). Eight E. faecium strains (6.2%), out of the 129 strains assessed, showed multidrug resistance. All multidrug-resistant E. faecium showed resistance to erythromycin, quinupristin/dalfopristin, tetracycline, and tylosin, in all 14 strains. All multidrug-resistant E. faecalis showed resistance to erythromycin, quinupristin/dalfopristin, tetracycline, and tylosin. Both multidrug-resistant E. faecium and multidrug-resistant E. faecalis showed common resistance to erythromycin, quinupristin/dalfopristin, tetracycline, and tylosin.

We investigated the effect of the modified starch [physical treatment, acetate (SA-1, SA-2, and SA-3), hydroxypropyl(HS), and acetylated distarch adipate] content on the physicochemical properties of fish cakes, called Eomuk in Korea,during storage at -20°C. When wheat flour (native starch, NS) was used, the moisture content decreased duringfrozen storage, resulting in a lower water-holding capacity and higher expressible drip. Compared with NS, addingmodified starch had a lower effect on the moisture content during frozen storage. The water-holding capacity andexpressible drip differed with the type of modified starch added. The expressible drip was lowest with HS; the SA-3and HS modified starch were whiter than NS. Therefore, HS and SA-1 are suitable additives to improve the qualityof frozen fish cakes.

Antimicrobial resistance patterns of Escherichia coli were investigated. Strains were isolated from 310 shellfish, 36 crustaceans, and 12 fish collected off the West Coast of Korea from April 2019 to October 2020. Two hundred and ninety-five E. coli strains were isolated from shellfish, 100 from crustaceans, and 54 from fish. Strains isolated from shellfish showed the highest resistance to ampicillin (27.5%), whereas those from crustaceans were resistant to sulfisoxazole (30.0%) and those from fish were resistant to ampicillin (59.3%) and sulfisoxazole (59.3%). Ceftazidime resistance was observed in strains isolated from short neck and hard clams, whereas gentamicin resistance was observed in strains from fish. Multi-drug resistance was observed in 56 strains (48.7%) isolated from shellfish, 11 (28.2%) from crustaceans and 27 (73.0%) from fish. Depending on the source of isolation, the strains showed specific antimicrobial resistance tendency. Strains isolated from shellfish showed 12 different multi-drug resistance patterns, whereas those from crustaceans showed high resistance (59%) to a single antimicrobial agent and those from fish showed a broad trend of multi-drug resistance to more than eight antimicrobials.

본 논문에서는 영상 부호화시 전처리 과정을 수행함으로써 잡음을 제거하는 새로운 알고리듬을 제안하였다. 제안한 알고리듬은 영상의 선명도를 유지할뿐아니라 전체적인 부호화 효율을 높여준다. 효율향상 과정은 다음과 같다. 첫째 블록 특성에 다라 영역을 분류하며, 둘째로는 Canny 연산자와 Sobel 연산자를 이용하여 경계선 방향을 얻는다. 세 번째로 블록 특성과 경계선 방향에 따라 방향성 형태학적 필터를 구한다. 형태학적 필터링은 영상내 존재하는 잡음을 제거하고, 표준 영상의 경우 인간이 시각적으로 느낄 수 없는 성분을 제거한다. 형태학적 필터링은 경계선 성분을 손실시키는 결과가 발생하지만, 제안한 알고리듬은 손실된 경계선 영역을 복원하는 과정을 거친다. 그러한 과정의 결과로, 전체적인 부호화 효율이 향상된다. 특히, 제안한 알고리듬을 적용한 표준영상의 경우, 약 50-50%의 비트 발생량이 줄어드는 결과를 나타내었다. 잡음 분산값을 달리하여 만든 잡음 영상에 제안한 방법을 적용한 결과, 영상의 선명도를 유지하였다. 제안한 알고리듬은 인간의 시각 특성을 고려한 미세한 잡음 제거 방법에서 우수한 성능을 나타내었으며, 영상의 선명도를 유지하는 것을 보여 주었다.
