        백련차 분말을 대체한 우리밀 식빵의 품질 특성

        In this study, domestic wheat white breads were prepared with the substitution of 1.5, 3.0, 4.5, and 6.0% Nelumbo nucifera G. tea powder(NNTP). The samples and a control were then compared with regard to quality characteristics, including pH, total titratable acidity, fermentation power of dough expansion, specific volume, baking loss, moisture content, color, textural characteristics, external and internal surface appearances, and sensory qualities in order to determine the optimal ratio of NNTP in the formulation. As the NNTP contents increased, the pH of dough and bread, baking loss, and lightness decreased, whereas the total titratable acidity of dough and bread increased. The fermentation power of dough expansion increased with increasing incubation time. The NNTP samples evidenced significantly higher specific volume, greenness, yellowness, resilience, and crumb consistency than were observed in the control group. However, hardness and fracturability evidenced the opposite effect. The water content and uniformity of the crumb pores were highest at a substitution level of 1.5%, and were lowest at a level of 4.5%. Crumb color, flavor, and delicious taste decreased with increasing NNTP contents, whereas lotus leaf flavor, astringency, bitterness, and off-flavor increased. Density of the crumb pore and crumb springiness were not significantly different among the samples. Softness, chewiness, and overall acceptability were maximal with the 1.5% substitution, and were minimal in the 6.0% group. In conclusion, our results demonstrate that 1.5~3.0% NNTP may prove quite useful as a substitute for domestic wheat flour in the production of white bread, and may evidence favorable nutritional and functional properties.

        백련차 분말을 대체한 우리밀 혼합분과 반죽의 특성

        In this study, korean wheat composite flour and dough were prepared with 1.5, 3.0, 4.5, and 6% Nelumbo nucifera G. tea powder(NNTP). The samples and a control were then compared qualitatively in terms of moisture, protein, ash, and wet gluten content. The farinogram, amylogram, and extensogram characteristics of the dough were also examined, in order to determine the optimal ratio of NNTP for the formulation. According to our results, the moisture content of the flour decreased with increasing NSPP content, whereas its protein and ash content, resistance, and R/E ratio at 135 min of extensogram increased. The NNTP samples had a significantly higher water absorption and weakness of farinogram and maximum resistance at 45, 90, and 135 min. Additionally, samples had an R/E ratio at 45 min of extensogram, 90 min less than the control group. However, stability of the farinogram, temperature of maximum and maximum viscosity of the amylogram, and extensibility of the extensogram showed the reverse effect. The control and NNTP samples showed significant differences in gelatinization beginning temperature of the amylogram, while development time of the farinogram was not significantly different. With regard to the extensogram characteristics of the dough, the area of the control and 1.5% NNTP increased with increasing testing time, whereas at 3.0, 4.5 and 6.0% NNTP, extensibility, and resistance, maximum resistance, and R/E ratio of control and NNTP samples decreased. An area of 3.0, 4.5 and 6.0% NNTP and extensibility of 1.5% NNTP were not significantly different among the testing times. In conclusion, these results show that 1.5% NNTP may prove very useful as a substitute for korean wheat flour where the production of korean wheat white bread is concerned. It may also provide good nutritional and functional properties.

        헤미셀룰라아제를 첨가한 백련차 식빵의 품질 특성

        헤미셀룰라아제를 0.01, 0.02, 0.03, 0.04%로 첨가하여 제조한 백련차 식빵 반죽의 pH, 총산도 및 발효 팽창력, 백련차 식빵의 품질 특성인 pH, 총산도, 비용적, 굽기손실률, 수분함량, 색도, 조직감, 외부와 내부 표면 관찰 및 관능검사의 결과는 다음과 같았다. 반죽의 pH와 총산도는 대조군과 헤미셀룰라아제 첨가군들 간에 유의적인 차이가 없었다. 발효 시간에 따른 발효 팽창력은 대조군과 헤미셀룰라아제 첨가군들 모두 발효 시간이 길어질수록 유의적으로 증가하는 경향을 보였다. 백련차 식빵의 pH는 헤밀셀룰라아제 첨가량이 증가할수록 유의적으로 감소하는 경향을 보였으나 총산도는 유의적으로 증가하는 경향을 보였다. 비용적은 헤미셀룰라아제 첨가량이 증가할수록 유의적으로 증가하는 경향을 보였고, 굽기 손실률은 헤미셀룰라아제 0.04% 첨가군이 14.31%로 가장 높았고, 헤미셀룰라아제 0.01% 첨가군이 13.33%으로 가장 낮았다. 수분 함량은 대조군이 40.60%로 가장 높았고, 헤미셀룰라아제 0.03% 첨가군은 40.32%로 가장 낮았다. 명도는 대조군이 41.11로 가장 높았고, 헤미셀룰라아제 0.01% 첨가군이 40.35로 가장 낮았으며, 녹색도는 헤미셀룰라아제 첨가군들이 대조군보다 유의적으로 높았다. 황색도는 헤미셀룰라아제 0.01% 첨가군이 19.28로 가장 높았고, 헤미셀룰라아제 0.04% 첨가군이 18.08로 가장 낮았다. 견고성과 부서짐성은 헤미셀룰라아제 첨가량이 증가할수록 유의적으로 감소하는 경향을 보였고, 복원성은 유의적으로 증가하는 경향을 보였다. 껍질색과 내부색은 시료들 간에 큰 차이가 없었으며, 식빵의 크기와 부피, 기공의 크기는 대조군이 가장 작았고, 헤미셀룰라아제 첨가량이 증가할수록 커지는 경향을 보였다. 빵속살의 색상, 기공의 밀도와 균일성, 빵속살의 경도 및 탄력성은 대조군과 헤미셀룰라아제 첨가군들 간에 유의적인 차이가 없었다. 향미는 헤미셀룰라아제 첨가군들이 대조군보다 유의적으로 높았다. 부드러움, 씹힘성 및 종합적인 기호도는 대조군과 헤미셀룰라아제 첨가군들 간에 유의적인 차이가 없었다. 연잎향, 구수한맛, 떫은맛, 쓴맛 및 이취는 대조군과 헤미셀룰라아제 첨가군들 간에 유의적인 차이가 없었다. 이상의 결과를 종합해 보면, 헤미셀 룰라아제 0.02~0.03% 첨가는 반죽의 발효 팽창력, 식빵의 비용적, 조직감, 내부적 특성, 소비자 기호도 및 특성강도 등의 품질 특성을 고려할 때 식빵의 품질 특성에 좋은 영향을 미칠 수 있을 것으로 사료되었다. Nelumbo nucifera G. tea white breads were prepared by the addition of 0.01, 0.02, 0.03, and 0.04% hemicellulase to flour of the basic formulation. The experiments and control were then compared in terms of quality characteristics, including pH, total titratable acidity, fermentation power of dough expansion, specific volume, baking loss, moisture content, color, textural characteristics, external and internal surface appearances, and sensory qualities in order to determine the optimal ratio of hemicellulase in the formulation. There were no significant differences in pH and total titratable acidity of dough among the experiments. Fermentation power of dough expansion were increased as incubation time increased. Baking loss was the highest at the 0.04% addition level, while the lowest at the 0.01% level. As hemicellulase content increased, pH, hardness, and fracturability of bread decreased, while total titratable acidity, specific volume, and resilience increased. Water content and lightness were the highest in the control bread samples, and yellowness was maximal in the 0.01% group. Bread made by the addition of hemicellulase had significantly higher greenness and flavor than the control group. Color, consistency, and springiness of crumb, density and uniformity of crumb pore, softness, chewiness, overall acceptability, lotus leaf flavor, delicious taste, astringency, bitterness, and off-flavor were not significantly different among the samples. The results indicate that adding 0.02~0.03% hemicellulase in Nelumbo nucifera G. tea white bread is optimal for quality and provides a product with reasonably high overall acceptability.

        비만 유도 흰쥐에 대한 양파의 항비만 효과

        This study investigated the effects of onion juice on the serum lipid components and blood pressure in obese rats fed high fat diets. Thirty-nine of Sprague-Dawley rats were divided into six groups, and were treated for 8 weeks: (1) normal diet (ND); (2) high fat diet (HFD); (3) HFD for first 4 weeks and high fat diet with 40% onion juice for the last 4weeks (H-H+O); (4) HFD with 40% onion juice for 8 weeks (H+O); (5) HFD for first 4 weeks and ND for the last 4 weeks (H-N); (6) HFD for first 4 weeks and ND with 40% onion juice for the last 4 weeks (H-N+O). The rates of increasing body weight were reduced in H+O and H-H+O groups compared with HFD group. The levels of triglyceride, low density lipoprotein-cholesterol and total cholesterol in blood serum were significantly decreased in the H+O and H-H+O groups compared with the HFD group. Administration of onion reduced the size of adipocyte, steatosis, and serum hyperlipidemia in obese rats fed HFD. Moreover, the antihypertensive effects of onion were observed in obesity rat fed HFD. Overall results suggest that onion reduces the serum lipid components and improves hypertension in obese rat fed HFD.

        헤미셀룰레이즈 첨가가 자색고구마 식빵의 품질에 미치는 영향

        헤미셀룰레이즈를 0.005%, 0.010%, 0.015%, 0.020%를 첨가한 자색고구마 제조한 식빵의 품질 특성과 관능검사를 실시하였다. 반죽의 pH와 총 산도는 시료들 간에 유의적인 차이가 없었다(p<0.05). 발효 시간에 따른 발효 팽창력은 발효시간이 길어질수록 유의적으로 증가하였고(p<0.05), 헤미셀룰레이즈 첨가량에 따른 발효 팽창력은 45분과 60분에서는 헤미셀룰레이즈 0.015% 첨가군이 가장 높았으며, 대조군이 가장 낮게 나타났다(p<0.05). 식빵의 pH는 대조군보다 헤미셀룰레이즈 첨가군들이 유의적인 차이가 없었으며(p<0.05), 총 산도는 헤미셀룰레이즈 첨가군들이 대조군보다 유의적으로 높았다(p<0.05). 비용적과 굽기 손실률은 헤미셀룰레이즈 첨가군들이 대조군보다 유의적으로 높았다(p<0.05). 수분 함량은 시료들 간에 유의적인 차이가 없었다(p<0.05). 명도는 대조군보다 헤미셀룰레이즈 첨가군들이 유의적으로 낮았고(p<0.05), 적색도는 0.005% 첨가군을 제외하고, 대조군보다 헤미셀룰레이즈 첨가군들이 유의적으로 낮았다(p<0.05). 황색도는 헤미셀룰레이즈 첨가군들이 대조군보다 다소 높았다(p<0.05). 견고성과 부서짐성은 헤미셀룰레이즈 첨가량이 증가할수록 유의적으로 감소하였으며(p<0.05), 복원성은 0.005% 첨가군을 제외하고, 헤미셀룰레이즈 첨가군들이 대조군보다 유의적으로 높았다(p<0.05). 소비자 기호도 검사는 색과 부드러움은 실험군들 간에 유의적인 차이를 나타내지 않았고(p<0.05), 향미는 헤미셀룰레이즈 첨가군들이 대조군보다 유의적으로 높았다(p<0.05). 종합적인 기호도는 헤미셀룰레이즈 0.010% 첨가군이 5.67로 가장 높은 값을 나타냈다. 이상의 실험에서 헤미셀룰레이즈 0.010% 첨가가 자색고구마 식빵의 부피를 개선하는데 최적 첨가량으로 확인되었다. In this study, purple sweet potato bread was prepared by the addition of 0.005%, 0.010%, 0.015% and 0.020% hemicellulase. It's effect on product quality and consumer evaluation were examined. The results showed that the dough pH and total titratable acidity were not significantly different between samples. In the fermentation power of dough expansion, a 0.015% addition sample was the highest between the samples. The bread pH decreased significantly as hemicellulase was increased, whereas. Bread total titratable acidity was significantly decreased. The addition of hemicellulase samples were significantly higher in specific volume and baking loss than the control sample. The moisture content was not significantly different between samples. In colors, the lightness of the control sample was the highest, the redness of the 0.020% addition sample was the lowest while the yellowness of the control was the lowest. The hardness and the fracturability decreased significantly as hemicellulase was increased. The resilience indicated reverse effects. In consumer evaluation, the color and softness were not significantly different between samples. And the hemicellulase addition of samples was higher in flavor than that of the control sample. The overall acceptability was the highest at 5.67 with a 0.010% addition sample. According to these results, the addition of 0.010% hemicellulase in purple sweet potato bread would be the optimum level.

        농축단호박 분말을 대체한 설기떡의 품질 특성

        DPPH radical scavenging activities were 66.80% by hot water extract and 41.86% by 80% methanol extract. Inhibitions of angiotensin I-converting enzyme (ACE) were 91.09% by hot water extract and 75.20% by 80% methanol extract. In this study, Sulgidduk samples were prepared with 1, 3, 5, and 7% concentrated sweet pumpkin powder (CSPP), and a control were examined for quality characteristics such as moisture content, water activity, color, textural characteristics, and sensory qualities, in order to determine the optimal ratio of CSPP in the formulation. The samples containing CSPP exhibited significantly higher moisture content than the control group. Water activity was not significantly different among the Sulgidduk samples. For the color, the control group presented significantly higher lightness as compared to the samples containing CSPP. The samples containing 1 and 3% CSPP had significantly higher greenness than the samples containing 5 and 7% CSPP. Yellowness increased as the level of CSPP content increased. In terms of textural characteristics, hardness, gumminess, and chewiness were highest at the 1% substitution level, while lowest at the 3% level. The CSPP samples presented significantly higher adhesiveness, springiness, and cohesiveness than the control group. In the consumer acceptance and characteristic intensity rating test, the control group showed significantly higher color and flavor as compared to the CSPP samples. Pumpkin flavor, delicious taste, and off-flavor increased with increasing amounts of CSPP. Softness, overall acceptability, and gumminess were not significantly different among the various samples tested. Sweetness was highest at the 5% substitution level, while lowest at the 1% level. In conclusion, the results indicate that substituting 3~5% CSPP to Sulgidduk is optimal, providing good DPPH radical scavenging activity and inhibition of ACE as well as reasonably high overall acceptability.

        김치 분말첨가 식빵의 품질 특성

        White bread with 1, 2, 3, 4 and $5\%$ Kimchi powder added and control samples were tested for moisture content, volume, height, color, free amino acid content, texture, and sensory characteristics. Moisture content was about $40.46\~41.35\%$ and increased according to the addition of Kimchi powder. Volume and height were increased with increasing Kimchi powder content For the crust and crumb color, lightness was decreased, but yellowness and redness were increased as Kimchi powder content increased For free amino acid content, glutamic acid, alanine, serine and leucine were detected in the white bread, and samples with higher content of kimchi powder showed higher amount of total free amino acid content From the sensory analysis, one with $3\%$ kimchi powder got the highest score for flavor, texture, color, moistness and overall acceptability.

        양파분말 첨가가 식빵의 품질특성에 미치는 영향

        다량 출하되는 양파의 소비를 촉진시키기 위한 일환으로 식빵 제조시 양파분말을 0, 2, 4, 6. 8. 10%로 첨가하여 직접반죽법으로 제조하였을 때의 반죽특성 및 제품의 물리화학적 변화를 살펴 보았다. Farinograph에서 반죽 형성시간은 대조군에 비해 양파분말 첨가량이 많아질수록 감소하는 경향이었으며, Extensograph에서 신장도는 대조군에 비해 감소하였으며, 신장 저항도와 최대 저항도는 증가하는 경향이었다. Amylograph에서 양파분말 첨가군이 대조군보다 호화개시온도는 상승하였고, 최고점도는 큰변화를 나타내지 않았다. 식빵의 수분. 높이. 부피는 첨가량이 증가할수록 감소하는 경향이었다. crust 색도는 양파분말의 첨가량이 증가할수록 L값은 감소하였고, a 및 b값은 점차 증가하였다. crumb 색도는 양파분말 첨가량이 증가할수록 L값은 감소하는 반면 a 및 b값은 다소 증가하였다. 유리아미노산 함량은 양파분말 첨가군이 L-arginine, L-aspartic acid, L-g1utamic acid, L-alanine 등의 아미노산이 다량 검출되었다. 조직감 측정시 hardness는 대조군보다 양파첨가군이 높게 나타났고, springiness는 분말 2, 4%첨가시 다소증가 하였으며, 나머지 첨가군에서는 다소 낮게 나타났다. 관능검사는 2% 양파 분말 첨가군이 가장 높은 점수를 나타내었다. 따라서, 양파분말을 첨가한 식빵을 제조할 때 배합비는 양파 분말 2% 첨가가 적당하며, 기능적인 측면을 고려할 때 양파분말 4% 첨가도 가능하다고 생각된다. Physicochemical properties of dough and bread supplemented with onion (Allium cepa L.) powder were investigated. Farinographic characteristics of dough showed that addition of onion by 2% and 4% increased water absorption, however, as the onion added more the water absorption decreased. Addition of 2% onion delayed time for development of dough a little, while more than 4% onion shortened the development time significantly. A reduction in stability and an increase in weakness of dough were observed by addition of onion. Addition of onion powder resulted in a reduction of extensibility and an increase in resistance to extension of dough as measured by extensograph. Amylographic analysis showed that addition of onion increased gelatinization temperature and decreased maximum viscosity. Moisture content, baking loss, height and volume of bread tended to decrease with the addition of onion powder. Lightness of bread crust and crumb decreased as the onion powder added more, while redness and yellowness increased. Bread with onion powder had more free amino acid, especially, Arginine, aspartic acid, glutamic acid and alanine, than control. The addition of onion hardness of bread increased, but springiness decreased as the onion added more. Sensory evaluation of bread indicated that addition of 2% and 4% onion powder enhanced springiness, mouth feeling, appearance, hardness, moistness and overall acceptability.
