Kimchi is a traditional Korean probiotic food prepared through fermenting vegetables with probiotic lactic acid bacteria. With an increase in the consumer needs for the vegan products, the field of Kimchi industry has been attempting to develop vegan Kimchi products. However, differences between vegan and non-vegan Kimchi in terms of manufacturing production and processes are unclear. In this study, we investigated the components of organic acids and volatile basic nitrogen (VBN) during (non)-vegan kimchi production depending on the fermentation period and temperature condition. At first, the profiling of organic acids was quantified during fermentation at low (4℃) and room (25℃) temperatures, respectively, using HPLC-UV. The contents of organic acids in both types of Kimchi contained latic, acetic, citric, succinic, malic, oxalic, and fumaric acids at the first day of fermentation. At twenty days of fermentation, all contents of organic acids in vegan Kimchi had higher level than those in non-vegan Kimchi. In the next study, we investigated the content of VBN of vegan Kimchi compared with that of non-vegan Kimchi. The level of VBN in both increased depending on the fermentation period. Interestingly, the level of VBN in vegan Kimchi was lower than that of non-vegan Kimchi during fermentation. Conclusively, these results indicate increased contents of organic acids and decreased level of VBN in vegan Kimchi compared with non-vegan Kimchi, and thus, vegan Kimchi products could be competitive enough compared to the non-vegan Kimchi products.

This paper schemes to enable a learner to express already-learned「Giving andreceiving expressions」and「The voice」properlyin accordance with 'a point of view’in everyday writing, by making him or her attempt to summarize 「well-known Story」according to the 'Modified PBL' concept. In other words, by writing the story outlineof a familiar story well-comprehended, a learner not only can master variousvocabulary and expressions appeared in the Story but also may quote acquired「Giving and receiving expressions」and「The voice」with respect to ‘the point of view’. The purpose of this study is to show a learner correct expressions in writingas well as to see whether a learner uses properly his or her previous acquisitionconsidering the flow of the actual context. The previous acquisition in the studyis meant to be such as a causative verb, a passive voice, causative-passiveexpression, and giving and receiving expressions. In this study, it was observed that during the writing training of 'JanghwaHongryeon Jeon', the presentation of a specific and clear point of view to the learnerhas a considerable influence on the practical use of「The voice」and「Giving andreceiving expressions」acquired. Hence, it plans to deepen this study result furtherby evaluating the effectiveness of the story outlines in the writing training, throughthe analysis of more diverse learners’ story outlines obtained from applying the'Modified PBL' model and the comparison with even general writings.

Purpose The aim of this study was that tailored intervention for hemiplegic patients which include not only sensory stimulation but also active movement and manipulation would benefit on upper limb functions. Methods An experimental group (EG) of 10 subjects and a control group (CG) of 10 subjects received a somatosensory stimulation therapy (SST) and a traditional occupation therapy (Transferring cups, folding towels, swiping a desk, a ROM arc and a peg board) for 30 minutes a day, 3 times a week for 5 weeks, respectively. And, the upper limb functions were tested before and after the intervention. Results There were significant differences in Shoulder/Elbow/Forearm (SEF), Hand and Coordination in pre-post test in the EG. And, there were significant differences in SEF and Hand in pre-post test in the CG. Besides, there were significant differences in SEF, Hand and Coordination in post-pre test in between the EG and CG. Conclusion Ongoing repetition of sensory input in combination with active movement brought improved upper limb functions.
