      • 마이크로웨이브를 이용한 전통약과의 품질변화

        This study was investigated to compare the quality characteristics of Yackwa. traditional korean fried cookie, prepared by three different cooking method reducing the frying time and oil absorption. Traditional deep fat frying (DFF) methods were modified as follows; preheat treatment was applied to Yackwa dough using microwave. 1.5min at low level of power (MW/DFF)and conventional oven, 200℃, 3min (CO/DFF) before deep fat frying. By using MW/DFF and CO/DFF, the amount of fat absorption decreased from 31.5% to 21%, moisture contents increased around 45% and the volume of Yackwa and the amount of syrup absoption decreased resulting in inferior texture. Especially. MW/DFF saved frying time 6min comparing with 8min of DFF. The replacement of 50 or 100% of sesame oil in dough with shortening improved the volume and the texture of Yackwa made by MW/DFF. In sensory evaluation, the acceptability score of experimental MW/DFF Yackwa, was higher than those of the commercial products.

        충주시 고등학생의 최근 4년간(1988-2001) B형간염 표면항원 및 항체 양성률 조사

        Objective : Since Korea has been known to be of the endemic area for hepatitis B virus(HBV) infection, vaccination for HBV has been recommended for all neonates in Korea. After starting vaccination in 1983, the change of sero-positivity of HBsAg and HBsAb is expected. This study was carried out to investigate the seropositive rate of hepatitis B virus surface antigen and antibody in high school freshmen students in Chungju-city. Methods and Materials : From 1998 to 2001, a total of 11,735 who were born in 1982 to 1986, were enrolled in this study. HBsAg and anti-HBs were tested by reversed passive hemagglutination and passive hemagglutination, respectively. Results : The study population was 11,735 students who were composed of 5,813 males (49.6%) and 5,914 females (50.4%). The HBsAg sero-positivity of male and female students was 3.25% (n=381) and 2.59% (n=153) respectively. The anti-HBs sero-positivity of male and female students was 62.2% (n=3,154) and 64.1% (n=2,969) respectively. There are significant difference observed in comparison of HBsAg and anti-HBs seropositivity according to sex (p<0.05). From 1982 to 1986 on birth year, anti-HBs sero-positivity has been increased significantly from 63.3% to 73.3%. But the change of HBsAg sero-positivity has not been changed significantly. Conclusions : As compared with previous studies of HBsAg and anti-HBs, the sero-positive rate of HBsAg has not been changed but that of HBsAb has been increased significantly. This result revealed that the effect of HBV vaccination program was successful.

      • 켄사스 경질 붉은 밀의 소규모 시험 제분 및 페리나 제분 특성과 이들로 부터 제조된 스파게티의 조리특성

        켄사스 강력밀 중 종의 경우, Arken, Eagle, Scout 66의 경우가 제분 특성(밀가루, 페리나)이 양호하였으며, Newton과 Centurk 78가 낮은 제분 수율을 보여주었다. 지역적 특성의 경우, Fort Hays에서 수확된 밀이 가장 양호하였으며 이에 반하여 Hutchinson에서 수확한 밀이 가장 낮은 수율을 보여주었다. 조리후의 품종별 전체적 스파게티의 품질을 측정하여 본 결과 Centurk 78, Larned종이 가장 양호하였던 반면 Vona와 Arken이 가장 불량하였음을 알 수 있었다. 지역적 특성을 비교하여 본 결과 Belleville, Fort Hays지역 밀이 가장 양호 하였으며, 반면에 Colby(Dry), Tribune(Dry)의 밀로 제조된 스파게티의 품질이 가장 열악한 것으로 나타났다. 경작한 땅(Irrigated land)의 품종이 경작하지 않은 땅(Dry land)에 비하여 대체적으로 단백질함량이 높아서 양질의 스파게티 제조가 가능하였다. 듀럼밀 대신에 켄사스 강력밀로서 스파게티 제조에는 여러 품질 측정 지표들 사이의 서로 상관관계는 실험의 결과로 충분히 예상하기가 매우 어려우나, 우선 단백질 함량이 매우 중요한 품질 측정의 지표임을 본 실험의 결과 알 수 있었다. 적어도 양질의 스파게티 제조를 위해서는 가능한 한 13% 이상의 단백질을 함유한 켄사스 강력밀을 스파게티 제조의 원료로 사용하여야만 소비자에게 용납될 만한 스파게티의 제조가 가능하다는 것을 시사한다. 또한 경도가 매우 중요한 요소이긴 하나 켄사스 강력밀로 페리나 스파게티를 제조할 때에 이 경도가 단백질 보다는 훨씬 낮은 상관관계를 가지므로 품질 측정의 예상 지표로서의 의미가 매우 약함을 알 수 있었다. 또한 품질의 지표인 단백질은 종 사이의 차이보다는 지역적 특성의 차이가 컸으며 년도별 차이는 거의 없었다. The hardness of hard red winter(HRW) wheat had an effect on the yield of farina, as it positively correlated with the coarse fraction (over 34W) and negatviely correlated with the flour fraction from farina milling. But it did not show any significances on flour milling from the micromilling process. The flour yields was better correlated with the break flour fraction (r=0.73) than with reduction flour (r=0.27). The farina yield was controlled by a fraction over 34W (coarse granule). Protein was the most important single factor for the quality of cooked farina spaghetti, but not for flour milling or farina milling. On the other hand, hardness was important in the production of farina milling, whereas it did not govern spaghetti cooking quality. Environmental factors affected the quality of cooked spaghetti as much as varieties of HRW wheats. The quality of cooked farina spaghetti generally correlated with the protein in the location composites of wheats. Higher protein content wheats showed better spaghetti cooking quality.

        The staling of buckwheat bread from composite flour containing 30% of buckwheat and 70% wheat, with the addition of vital wheat gluten and water-soluble hums, were studied. The hardness of the bucktwheat bread appeared significantly high with increasing storage time, the second day after baking , the addition of vital wheat gluten or/ and gums reduced hardness significantly below that of the buckwheat bread. Among those additives, xanthan gum showed the best effect on delay of bread staling Synergistic effects a when the vital wheat gluten and xanthan gum or guar gum were used together.

      • 밀과 메밀의 혼합비율에 따른 제빵 특성

        The breadmaking characteristics of composite flour containing 10-50% of buckwheat and wheat, were studied to establish the optimum formula for the development of buckwheat bread. As the proportion of buckwheat flour increased in bread formula, the water absorption and loaf volume decreased, but the loaf weight increased. Buckwheat flour was added to wheat flour at a replacement level of 30% without a large adverse effect on bread quality. As the amount of buckwheat flour increased, crust and crumb color were getting dark. According to the sensory acceptance test, buckwheat bread containing higher bran content were preferred to those with less brain. The sensory quality determined by QDA(Quantitative descriptive analysis) showed as follows: The size of air cells, buckwheat flavor, mustiness, bitter taste, aftertaste, firmness, grittiness, and crumbliness increased, but moistness and springiness decreased in buckwheat breads containing 10-30% replacement levels of buckwheat for wheat flours. The overall quality decreased as the amount of buckwheat flour increased.

        상악 정중이개 치료시 rubber band의 부적절한 사용 : A CASE REPORT

        정중이개란 상악 중절치 사이의 치간이개를 말한다. 이는 혼합 치열기에서 ugly ducking stage에 흔히 관찰할 수 있으며 일반적으로 견치가 맹출하면서 자연적으로 소실되므로 꼭 치료가 필요한 것은 아니다. 그러나 견치 맹출 후에도 정중이개가 2mm이하로 계속 존재하거나 견치 맹출 전이라도 3mm이상의 정중이개가 존재하는 경우에서는 치료의 적응증이 될 수 있다. 특히 후자의 경우 심미적인 면에서 뿐만 아니라, 이로 인해 측절치와 견치의 맹출공간이 부족해지는 문제가 발생하므로 교정치료가 권장된다. 정중이개 치료시 사용되는 장치물은 finger spring 등을 이용한 가철성 장치물과, 교정용 band, tube, bracket 등을 부착시켜 rubber elastics이나 coil spring 등을 사용하는 고정성 장치물로 나뉘어진다. 그러나 정중이개의 치료를 위해 rubber band를 band, tube, bracket 등과 같은 적절한 부가장치 없이 사용하면 rubber band가 치근은 따라 치은 하방으로 이동하게 되고 치주 인대를 파괴하며 치근단 부위에 이르러 치아동요, 치아정출 및 탈락 등 치아에 치명적인 손상을 입힐 수 있다. 본 증례는 정중이개의 치료를 위해 부적절하게 rubber band를 사용하여 외상을 받은 치아를 관찰하여 다소의 지견을 얻었기에 이를 보고하는 바이다. Maxillary median diastema is the term used when there is spacing between maxillary central incisors. The space between maxillary central incisors are often observed during ugly duckling stage. In most of the cases, as maxillary permanent canines erupt, it gradually disappears. Maxillary median diastema needs to be treated when there is up to 2mm of space between the incisors even after eruption of permanent canines or when there is 3mm of space, at least, before the eruption of the canines. Particulary, for the latter case, orthodontic treatment is recommended because not only the esthetic point of view but also to regain the eruption space for maxillary lateral incisors and canines. The appliance used for orthodontic treatment are removable appliances, using finger spring and etc, and fixed appliances, using rubber elastics and coil spring. If rubber band alone was used to treat median diastema without any other appliance such as band, tube or bracket, it will gradually move downward along the root surface. Then it will destroy the peridontal ligament and causes tooth mobility, extrusion, and avulsion. This report presents cases of damaged tooth due to improper use of rubber band when treating maxillary median diastema.

      • 삼출성 중이염 환자에서의 혈중 및 아데노이드 면역글로불린 E의 면역혈청학적 연구

        Otitis media with effusion (OME) is one of the most common disease in children but its pathogenesis is not clear. In particular the role of allergy has revealed conflicting support with widely varing opinions as to its importance. Within recent years, striking biochemical and immunochemical analytic techniques have opened a new approach the study of otitis media with effusion. So we focused on distributions of IgE in adenoid tissue and serum IgE levels. Authors compared the serum IgE and the distribution of IgE in adenoid tissue between the 20 patients underwent tonsillectomy, adenoidectomy and ventilating tube insertion and control group of 11 patients underwent tonsillectomy and adenoidectomy. The results were as follows; 1. In the distribution of IgE in adenoid tissue, there was a significant increase in the group of patients with OME compared to the control group (P<0.01). 2. In the analysis of serum IgE levels, the levels of IgE in the OME patients an control group were higher than normal level, although the level of IgE in the OME patients were less than that of control group, there was no significance P>0.05).

        APF Gel이 심미 수복재료의 표면에 미치는 영향

        현재 소아치과 영역에서 소아의 치아 우식증을 예방하기 위해 다양한 불소 도포법이 시행되고 있다. 이들은 법랑질 내 불소함량을 증가시키고 보다 안정된 결정 구조를 형성하게 하여 치아 우식증을 예방한다는데 근거하고 있다. 하지만 최근에 불소 도포제재가 심미 수복재료의 표면에 부작용을 일으킬 수 있다는 문제가 제기되고 있다. 이에 본 연구는 수종의 심미 수복재료의 표면에 APF gel이 미칠 수 있는 영향을 주사 전자 현미경을 통해 관찰하고 표면 조도를 측정한 후 비교 분석하여 다음과 같은 결과를 얻었다. 1. glass ionomer cement와 compomer를 이용한 실험에서 APF gel 4분 침적군과 pH 순환군은 인공타액 침적군에 비해 표면 조도가 증가하였다(p<0.01). 2. composite resin 인 Charisma와 Z250을 이용한 실험에서는 모든 군간의 표면 조도의 차이는 없었다(p>0.05). 3. 주사 전자 현미경으로 관찰한 결과 glass ionomer cement, compomer, composite resin의 순으로 filler의 소실이 많았으며 군별로는 pH 순환군, APF gel 4분 침적군, 인공타액 침적군의 순으로 filler의 소실이 많았다. Topical fluoride application for children is a widely performed procedure in the field of Pediatric Dentistry for its dental caries prevention effects. However, it is recently recognized as having some unwanted effects on several esthetic restorative materials, the author immersed glass ionomer cement, compomer and composite resin specimens in APF gel and measured the surface roughness and also, examined the specimens under the scanning eletron microscope. The followings are the results: 1. In the specimens of glass ionomer cement and compomer, APF gel 4 minute immersion group and pH cycling group show statistically significant increased surface roughness than artificial saliva immersion group(p<0.01). 2. There was no statistically significant surface roughness for composite resin in all group(p>0.05). 3. When the specimens were examined under scanning electron microscope, the surface change were in the order of glass ionomer cement, compomer, composite resin and also in the order of pH cycling group, APF gel 4 minutes immersion group, artificial saliva immersion group.

        감귤류 종자 추출물의 N-nitrosodimethylamine 생성억제에 관한 연구

        The effect of inhibition on N-nitrosodimethylamine (NDMA) formation by methanol extracts from 6 kinds of citrus seed (Citrus sunki, Citrus natsudaidai, Citrus suleata, Citrus tangerina, Citrus grandis and Citrus obovoidea) were investigated. The contents of moisture, crude protein, crude fat, carbohydrate, ash, flavonoid and totat phenol in citrus seeds were 4~6, l1~15, 32~46, 22~45, 2~4%, 12~24mg% and 53~133㎎%, respectively. The solid contents and yield of citrus seed extracts were 0.8~1.0 and 0.7~1.1%, respectively. Nitrite-scavenging activity by methanol extracts from citrus seeds increased with increasing extract dosage. Furthermore, the nitrite scavenging activity was pH dependent being the highest at pH 1.2 (42.7~96.9%) and the lowest at pH 6.0 (19.9~62.6%). Scavenging effects of nitrite by reaction time showed high effects under 3hr reaction time. The inhibition effect of NDMA formation by the citrus seed was strengthened as the amount of extract increased. The inhibition rate of methanol extracts from citrus seeds on NDMA formation showed 1.2~39.8%, 21.3~60.1% and 47.4~94.0%, according to add 1, 3 and 5㎖, respectively. Therefore, the inhibition effect of NDMA formation by the citrus seed was strengthened as the concentration of extract increased.

        유압 굴삭기의 크레인 작업시 전도 안정성에 관한 연구

        In this paper, the dynamic stability of a hydraulic excavator using ZMP concept is considered. When a load is moved in an excavator based on automation, an excavator often loses the stability and falls over. This is because a dynamic element is not included in the moment equilibrium equation that is used in order to judge a reversal. Consequently, reversal distinction algorithm including all a static and a dynamic element along a load movement in crane work is necessary. Zero Moment Point(ZMP) is a point on the floor where the resultant moment of the gravity, the inertial force of the manipulator and the external force is zero. This study is going to interpret the reversal stability of the excavator to which is applied ZMP concept through simulation.
