국내에서 섭취되는 나물류에 함유된 일부 수용성 비타민의 함량 분석

In this study, the contents of water-soluble vitamins $B_1$ (thiamin), $B_2$ (riboflavin), $B_3$ (niacin), and $B_{12}$ (cyanocobalamin) in namuls (wild greens), such as salads and side dishes, consumed in Korea were quantified by high-performance liquid chromatography (HPLC) with UV and fluorescence detection. All samples were prepared with recipes used in Korea. All analyses were performed under the quality control of vitamin $B_1$, $B_2$, $B_3$, and $B_{12}$. The vitamin $B_1$, $B_2$, and $B_3$ contents in namuls consumed in Korea were analyzed. The highest content of vitamin $B_1$ was $3.018{\pm}0.016mg/100g$ in Putgochudoenjang-muchim. The highest contents of vitamin $B_2$, $B_3$, and $B_{12}$ were $0.279{\pm}0.003mg/100g$ in Gul-muchim, $12.241{\pm}0.040mg/100g$ in Chamchi-salad, and $8.133{\pm}0.371{\mu}g/100g$ in Pijogae-muchim, respectively. These results showed that animal-based ingredients in salads provided for good intake of vitamin $B_{12}$. These results can be used as basic data for food composition tables and improvement of the national health of Koreans.
식품 중 비타민 B₁ 및 B₃ 함량 분석을 위한 추출법 비교

본 연구에서는 다양한 식품군에서 비타민 B₁ 및 B₃의 동시 분석을 위해 여러 가지 추출법을 적용하여 그 함량을 비교하였다. 효소 처리, 온도, 추출방법을 달리하여 8가지 추출법으로 실험을 진행한 결과, 육류인 소고기 양지와 두류인 팥에서 비타민 B₁의 함량이 40℃ 초음파 추출을 하였을 때 효소 처리를 하지 않은 경우보다 유의적으로 높게 나타났으나, 채소류인 표고버섯의 경우 효소 처리에 의한 함량 차이가 나타나지 않았다. 따라서 효소 처리를 병행한 40℃ 초음파 추출법에 대하여 비타민 B₁ 및 B₃의 분석을 검증한 결과, 특이성이 우수하였고 정밀성과 정확성은 AOAC 가이드라인 범위에 충족되었다. 본 연구에서 사용한 비타민 B₁ 및 B₃ 분석에 대한 LOD 및 LOQ는 비타민 B₁이 각각 0.472 ㎎/㎏과 0.633 ㎎/㎏, nicotinic acid는 0.541 ㎎/㎏과 0.927 ㎎/㎏, nicotinamide는 0.139 ㎎/㎏과 0.365 ㎎/㎏으로 높은 감도를 나타내었다. 본 연구에서는 다양한 식품군에 효소 처리를 병행한 40℃ 초음파 추출을 실시하여 비타민 B₁ 및 B₃ 함량을 비교・분석하였으며, 비타민 B₁은 육류 중 한우 양지, 앞다릿살 및 우둔, 곡류 및 두류 중 팥과 현미에서 효소 처리에 의한 높은 함량을 보여주었다. 또한 비타민 B₃의 함량은 효소 처리에 의한 유의적인 차이가 나타나지 않았고, 채소류 및 과일류의 모든 시료는 비타민 B₁ 및 B₃ 함량이 효소 처리에 의한 차이가 나타나지 않았다. 따라서 본 연구에서는 고단백 및 고전분 식품의 비타민 B₁ 함량 분석을 위한 효소 처리의 필요성을 알 수 있었고, 더욱 정확한 수용성 비타민의 함량 분석을 위해서는 다양한 매트릭스의 식품에 대한 추출법 개선 연구가 이뤄져야 할 것으로 생각된다. This study compared eight extraction methods, including enzyme-assisted extraction, for the simultaneous determination of vitamin B1 and B₃ in various foodstuffs using high-performance liquid chromatography (HPLC). Ultrasound and enzyme-assisted extraction revealed higher contents of vitamin B1 in beef brisket and red bean than other extraction methods. The accuracy and precision of ultrasound and enzyme-assisted extraction-HPLC analysis were good with high recovery and low relative standard deviation, which meet the acceptable guidelines by AOAC. In addition, the vitamin B₁ and B₃ contents in various food groups were analyzed using ultrasound and enzyme-assisted extraction-HPLC analysis. The ultrasound and enzyme-assisted extraction showed significantly higher vitamin B₁ contents in several food matrices (red bean, brown rice, bolar blade, brisket, and top round of beef). On the other hand, the enzyme treatment did not affect the vitamin B₁ and B₃ contents in vegetables and fruits. Therefore, enzyme-assisted extraction would be effective for evaluating the vitamin B₁ content in high-protein and starchy foods.
산화적 스트레스에 대한 여주(Momordica charantia Linn.)잎의 항산화 활성 및 간세포 보호능

This study examined the bioactive compound content and the antioxidant activities of bitter melon (Momordica charantia Linn.) leaves. The content of vitamin C, beta-carotene, and total carotenoids was 69.77, 45.68, and 65.08 mg/100 g, respectively. To investigate the antioxidant capacity, bitter melon leaves were extracted using various concentrations of ethanol (60, 80, or 100%). Highest content of total polyphenols (18.07 mg gallic acid equivalent/g) and flavonoids (4.53 mg cathechin equivalent/g) was found in the 100% ethanolic extract of the leaves (E100). Also, the E100 extract showed the highest levels of 2,2'azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) and α-α-diphenyl-β-picrylhydrazyl (DPPH) free radical scavenging activities. Reducing power was also the highest (39.21 mg Trolox equivalent/g) in E100 extract. The E100 extract effectively inhibited lipid peroxidation by 91.45% compared to the control group. Also, the E100 extract showed a cytoprotective effect against oxidative stress in HepG2 cells and decreased the generation of intracellular reactive oxygen species. These results suggest that bitter melon leaves could be regarded as a potential source of natural antioxidants.
효율적 일상 관리를 위한 일정관리 어플리케이션의 설계와 구현

IT기술과 정보처리 기술의 발전에 따라 인터넷 사용량이 급증하고 다양한 스마트 기기들이 출현하고 있다. 이에 따라 현대인들은 장소와 시간에 구애받지 않고 원하는 정보 획득, 여가활동과 같은 일상생활에 스마트 폰을 사용한다. 본 논문에서는 일정을 기록하고 약속을 공유하는 등 일상생활의 효과적 관리에 도움이 되는 일정관리 어플리케이션을 설계하고 이를 구현하였다. 본 논문의 일정관리 어플리케이션은 일정등록과 함께 일기작성 기능, 등록한 일정을 카카오톡을 이용하여 다른 사용자들과 공유할 수 있는 기능, 삭제 시 특정 폴더로 삭제한 일정이나 일기를 저장하는 기능, 하루 일정에 대한 연속적인 알림 기능 등을 제공한다. 다른 일정관리 앱들과 차별점을 가지며 사용성을 높인 본 논문의 어플리케이션은 바쁜 일상생활의 효율적 관리에 도움이 될 것이라 기대한다. According to the progress of IT and data processing technology, the usage of internet increased rapidly and various smart devices are appearing. As such, modern people use smartphone to acquire informations they wish and also on daily life including leisure activity free of place. This study has designed and implemented schedule managing application that can help effective managing of our daily life, such as taking note of schedule and sharing appointments. The schedule managing application in this study offers diary taking, sharing the registrated schedule with other users on kakaotalk, saving the deleted schedule or diary to certain folder when users delete file, continuous alarm of daily schedule function together with schedule registration function. The application which is differentiated to other applications and raised usage is expected to effectively manage the busy everyday life.

Acetochlor is a selective herbicide that controls a broad spectrum of annual grasses, sedge, and broadleaf weeds primarily in corn. MRLs are established for the combined residues of acetochlor and its ethyl methyl aniline-(EMA) and hydroxyethyl methyl aniline-(HEMA) producing metabolites, expressed as acetochlor equivalents. A fast and simple quantitative method for analysis of metabolites of acetochlor, EMA and HEMA in agricultural products has been developed. EMA was determined by gas chromatography tandem mass spectrometry and HEMA by liquid chromatography tandem mass spectrometry. Two compounds were extracted from matrices with acetonitrile containing 1% formic acid and the use of partitioning salts composed of NaCl and MgSO<sub>4</sub> based on QuEChERS method. Recovery experiments were conducted on pepper, brown rice and mandarin. Key performance parameters investigated were linearity, recovery, relative standard deviation(RSD), limit of detection, and limit of quantitation. The recoveries were within 70.6∼106.8% with relative standard deviation (RSD) of 0.7∼7.3% and the limit of quantification (LOQ) of methods were below 0.01 mg/kg, and the correlation coefficient (r<sup>2</sup>) of matrix-matched standards were > 0.995.

Both methomyl and thiodicarb belong to the group of oxime carbamate insecticides that acts by inhibiting acetylcholinesterase activity. The residue definition set in MRL regulation for all agricultural commodities is the sum of methomyl and thiodicarb, expressed as methomyl. Thiodicarb consists essentially of two methomyl moieties joined through their amino nitrogen by sulfur. Stoichiometry has to be applied to the calculus of the concentration, and the conversion factor of thiodicarb has to be multiplied by two. A Liquid chromatography tandem mass spectrometry was used for the simultaneous determination of thiodicarb and its degradation product methomyl as a total residue of thiodicarb in brown rice. Thiodicarb is known to degraded during analysis; therefore, a through investigation was carried out, revealing that thiodicarb degrades to methomyl immediately after spiking into a matrix of grain product. Two compounds were extracted from brown rice with acetonitrile containing 1% formic acid and the use of partitioning salts composed of NaCl and MgSO<sub>4</sub> based on QuEChERS method. Recovery experiments were conducted on brown rice. Main performance parameters investigated were linearity, recovery, relative standard deviation(RSD), limit of detection, and limit of quantitation. The recoveries were within 72.2∼96.0% with relative standard deviation (RSD) of 0.5∼2.3% and the limit of quantification (LOQ) of methods were below 0.01 mg/kg, and the coefficient of determination (R<sup>2</sup>) of matrix-matched standards were > 0.997.
