Effect of Liposome Encapsulated Salt on Physicochemical and Sensory Evaluation of White Pan Bread

Excessive salt intake in body induces health risks resulting high blood pressure or heart diseases. Therefore, the low salt concentration and sale tasted food is needed by means of the modification of manufacturing process. The purpose of this study was to study the effect of inhomogeneous salt localization in bread to enhance the saltiness encapsulated salt. The 0, 0.5, 1, 1.5, and 2.0% of liposome encapsulated salt (LS) was added into the baking of white pan bread. The final salt concentration was adjusted at 2% by addition of salt. After baking the bread, the moisture content, loaf volume, fermentation rate, color, texture analysis, salt release rate and sensory test were measured. From this study, moisture content has no significant difference between control and treatments (p>0.05), except for 2.0% LS. Lightness of all treatments was higher than control (p<0.05), whereas, there were no significant difference in hardness (p>0.05). From the sensory test, the bread added 2.0% LS was showed the highest value from the salty taste. Moreover, it is related to the highest release rate of salt was represented at 2.0% LS. In conclusion, the salty intensity of bread can be enhanced by the salt localization using encapsulation of salt.

<P>The use of automatic electrical stimulation in response to early seizure detection has been introduced as a new treatment for intractable epilepsy. For the effective application of this method as a successful treatment, improving the accuracy of the early seizure detection is crucial. In this paper, we proposed the application of a frequency-based algorithm derived from principal component analysis (PCA), and demonstrated improved efficacy for early seizure detection in a pilocarpine-induced epilepsy rat model. A total of 100 ictal electroencephalographs (EEG) during spontaneous recurrent seizures from 11 epileptic rats were finally included for the analysis. PCA was applied to the covariance matrix of a conventional EEG frequency band signal. Two PCA results were compared: one from the initial segment of seizures (5 sec of seizure onset) and the other from the whole segment of seizures. In order to compare the accuracy, we obtained the specific threshold satisfying the target performance from the training set, and compared the False Positive (FP), False Negative (FN), and Latency (Lat) of the PCA based feature derived from the initial segment of seizures to the other six features in the testing set. The PCA based feature derived from the initial segment of seizures performed significantly better than other features with a 1.40% FP, zero FN, and 0.14 s Lat. These results demonstrated that the proposed frequency-based feature from PCA that captures the characteristics of the initial phase of seizure was effective for early detection of seizures. Experiments with rat ictal EEGs showed an improved early seizure detection rate with PCA applied to the covariance of the initial 5 s segment of visual seizure onset instead of using the whole seizure segment or other conventional frequency bands.</P>
The relationship between indoor and outdoor temperature and humidity in two types of residence

Residential thermal conditions are important because people spend the majority of their time in the home environment. Indoor temperature and relative humidity(RH) were measured continuously over 1 year in 14 residences in Seoul, Korea. The relationship between residential indoor and outdoor conditions were determined by four meteorological parameters-temperature, apparent temperature(AT), RH, and absolute humidity(AH). Outdoor and indoor temperature, AT and AH were closely correlated, but RH was not. While indoor temperatures, AT, and AH were significantly higher than the corresponding outdoor levels, indoor RH was significantly lower than outdoor RH. Regression models between indoor and outdoor temperature detected a heating threshold at 15.0oC of outdoor temperature. The indoor thermal conditions were significantly different by the two residence types. Indoor temperatures in apartments were lower in summer and higher in winter than those in detached houses. However, indoor RHs in apartments were lower than in detached houses. During tropical nights, the daily temperature range was higher in residences with air-conditioning than in naturally ventilated residences.

Clustering daily AMI data using the two-step clustering method

Analyzing advanced metering infrastructure (AMI) data is vital for consumers to reduce electric costs and for companies to plan their business models. Thus, the statistical analysis of AMI data has become popular. In this paper, we propose a two-step clustering method that considers the usage amount and AMI pattern. Compared to the existing clustering methods, the proposed method provides different clustering groups that can be further used for time-of-use rates in Korea. We also demonstrate the differences between each group based on the electricity price before and after tariff reform.
Improved Physicochemical Properties of Pork Patty Supplemented with Oil-in-Water Nanoemulsion

This study aimed to investigate the effect of nanoemulsion (NEM) on the physicochemical and sensory characteristics of pork patty to improve texture for elderly members of the population. Hence, we prepared pork patties supplemented with different of liquid materials: water; oil and water; oil, water, and surfactants; and nanoemulsion. The emulsion itself was characterized and the physicochemical properties of the pork patties, including pH, water content, cooking loss, thawing loss, liquid holding capacity, color, and texture, were analyzed. The size of NEM was 165.70±9.32 nm and NEM had high ζ-potential value indicating that it is stable. NEM patties had the lowest cooking and thawing losses, and the highest liquid retention, all of which affected the tenderness of the patties. Color of the patty was also affected by the addition of NEM. The highest lightness and yellowness and the lowest redness were observed (p<0.05). NEM patties had the lowest values for all texture attributes indicating improved tenderness. Our results demonstrate that NEM has positive effects on pork patties and can help to tenderize food products designed for the elderly. With further study, NEM could be a candidate tenderization agent in the meat industry.

An Efficient Multiple Access Coordination Scheme for OFDMA WLAN

<P>A new hybrid multiple access coordination scheme (HMAC) that increases channel utilization for orthogonal frequency-division multiple access wireless local area network is presented. This scheme is based on a mixture of centralized access control and distributed random access to maximize channel utilization. Remarkably, HMAC allows two schemes to function at the same time, not alternatively. Performance evaluation results show notable improvement on channel utilization, which is mainly based on the efficient way how we handle uplink traffic.</P>
