Capillary column GLC 및 GCMS를 병용하는 분석방법을 이용하여 식물유 트리글리세리드 분자종과 산화안정성과의 관계를 밝히기 위해서, 규산 컬럼으로 분획한 대두유 트리글리세리드를 모델 시료로 하여 60℃, 암소에서 저장하면서 산화에 따른 트리글리세리드 각 분자종의 산화안정성을 조사하였다.<br/> 대두유 트리글리세리드의 주요 분자종은 LLL(19.6%), OLL(17.4%), PLL(14.2)%, OLO(10.2%) 및 PLO(9.4%)이었으며, 트리글리세리드 분자종의 산화안정성은 전반적으로 구성불포화지방산의 이중결합수가 적을수록 증가하는 경향을 보였다. 그런데 트리글리세리드를 구성하는 불포화지방산들의 이중 결합수가 같을 경우는 불포화도가 낮은 지방산이 결합되어 있는 분자종의 산화안정성이 높았고, 또 결합되어 있는 불포화지방산의 이중결합수 및 불포화도 똑같은 경우에는 공존하고 있는 포화지방산의 acyl기의 사슬길이가 짧은 분자종의 산화안정성이 높은 것으로 밝혀져, 식물유 트리글리세리드 분자종의 산화안정성에는 구성불포화지방산의 이중결합수와 불포화도 및 공존하고 있는 포화지방산의 acyl기의 사슬길이가 중요한 영향을 미치는 인자임을 알 수 있었다. The influence of triglyceride molecular species on autoxidation was investigated by determining the residual molecular species after incubating soybean oil triglycerides. The molecular species of soybean oil triglycerides were analyzed by capillary column gas chromatography and electron impact ionization mass spectrometry utilizing selected ion monitoring. The autoxidative stability of each molecular species in soybean oil triglycerides appeared to decrease in proportion to the increase in the number of double bonds present in the acyl residues, and it was affected by degree of un saturation of fatty acid when the number of double bonds in triglyceride were the same. And it appeard to be enhanced by a decreases in the length of the saturated acyl chain present in the glycerides.
寒天의 agarose 및 agaropectin의 組成에 관한 硏究.I. 産地別에 따른 agarose 및 agaropectin 組成의 差異

寒天原藻의 産地別에 따른 寒天質의 agarose 및 agaropectin의 組成의 차이와 그것이 寒天의 物性에 미치는 영향을 밝히고자, 1982年 5月에 제주도 우도, 전남 여수, 경남 일광, 경북 울릉도 및 경남 거제 등 5개 지역에서 採取한 우뭇가사리를 試料로 하여 分析, 檢討하였다. 1. 寒天收率에 있어서는 우도産이 33%로 가장 높았고, 여수産이 28%로 가장 낮았다. 2. 寒天質의 agarose와 agaropectin의 組成은 産地에 따라 상당한 차이를 나타내었는데 우도産이 agarose含量이 가장 높았고, 여수産이 가장 낮았다. 3. Agarose와 agaropectin의 組成比가 寒天의 物性에 미치는 영향은 agarose含量이 높을 수록 gel化能과 jelly强度는 높은 값을 나타내었다. 4. 黃酸基 含量은 agarose含量과 逆相關關係를 나타내었는데, 우도産이 1.6%로서 가장 낮은 含量을 보였고, 여수産이 2.4%로서 가장 높은 含量을 나타내었다. The present investigation was carried out for the purpose of making clear the fundamental features of the compositional differences of agarose and agaropectin in agr prepared from Gellidium amansii collected at different places, and its effect of agar. The samples, Gellidium amansii collected in May, 1982, in Udo, Che-ju island, Yeosu, Cheon-Nam, Ilkwang, Kyeong-Nam, Geoje, Kyeong-Nam and Ulreungdo, Kyeong-Buk. In addition, ag-arose and agaropectin in agar were isolated by dimethylsulfoxide. The results obtained are summarized as follows: In collecting places, the maximum yield of agar occurred in Udo, 33%, and the minimum in Yeosu, 28%, The experiment showed that the agarose and agaropectin composition in agar is changed, even if the seaweeds collected from the same place is used as raw material. The agarose content of Gellidium amansii collected in Udo showed highest value, 77.3%, and in Yeosu the lowest value, 66.3%, respectively. Jelly strength, gelation ability of agar tended to increase as the agarose content are rose, butsulfate content has shown a decrease.

It is a growing consensus that the fisheries education for primary school children should be reinforced nowdays. However, the fisheries education of the present primary school has difficulty in settling the teaching method and involved many problems related with the content of the textbook on the fisheries education. In this paper, the study was carried out to improve the effectiveness of fisheries education for primary school. elucidating the principle of fisheries, at the same time, analyzing the content of the textbook and the related items on the fisheries education.

The present investigations were carried out for the purpose of making clear the fundamental features of the compositional difference of agarose and agaropectin in agar prepared from Gellidium amansii collected in different places and seasons, and its effect on properties of agar. The samples, Gellidium amansii, was collected every month from the same locality on the coast of the Ilgwang-myon, Yangsan-gun, Kyongnam, from March 1982 to February 1983. In addition, agarose and agaropectin in agar were isolated by dimethyl sulfoxide. The results obtained were summarized as follows : 1. In seasonal variation, the maximum yield of agar noted from spring through summer, and the minimum in February. 2. The experiment showed that the agarose and agaropectin composition in agar was changed, even if the seaweed collected from the same season was used as raw material. Seasonal variation of agarose and agaropectin contents in agar, the highest content occurred in August, 76.2%, and the lowest in January, 50.1%. 3. Jelly strength, gelation ability of agar tended to increase as the agarose content was risen, but sulfate content was decreased.
