        도축부산물로부터 단백질회수에 관한 연구

        Most of the meat industry by-products are discarded without being used as a protein resources. They often cause the pollution problems. And only a small parts of them are utilized, and handled unsanitarily as a human food. In order to develop a protein resources from meat industry by-products, optimum conditions for protein recovery from swine liver, lung and bone were examined. The results obtained were summarized as follows: 1. Amounts of extracted protein from the swine liver and lung were increased as the extraction pH was increased. But the optimum pH for extraction and precipitation were considered as 10 and 4.5, respectively in view of the collagen contents of the precipitated protein. 2. More protein were extracted from the swine bone at an alkaline pH than at an acidic pH and the extractability of the protein was increased by the addition of EDTA over all pH range. Extractability of protein was increased as the extraction temperature elevated and was decreased by the addition of KCl and NaCl when alkaline extraction method was used. 3. When water and high pressure extraction (WHPE) method was used, the extraction time for more than 4 hours at a 15 psi has no effect on the increasing the extractability of protein from bone but 3 times more proteins were extracted than atmospheric pressure was used.

        도축부산물로부터 회수한 단백질의 물리화학적 성질 및 석시닐화 ( Succinylation )

        For the utilization of protein isolates from swine liver, lung and bone in food, biochemical properties and microbiological safety of the alkaline-extracted protein isolates were examined. Chemical modification (succinylation) was attempted in order to increase the functional properties of protein isolates. The results obtained were summarized as follows: 1. The amino acids composition of the liver protein isolates was quite excellent except valine and isoleucine but other protein isolates had generally lower amino acids contents than FAO/WHO recommended chemical score. Especially, sulfur-containing amino acids were found to be a limiting amino acid. 2. During the extraction, protein seemed to undergo non-covalent interaction and disulfide bond formation bt in-vitro pepsin digestibility of the protein isolates was found to be 80-98%. The protein isolates had a very low amount of calcium and riboflavin. 3. Through succinylation of protein by succinic anhydride during alkaline extraction, the protein recovery, the solubility of the protein in distilled water, emulsion capacity, the oil absorption, the water hydration and whippability of the protein isolates were increased in some degrees. 4. The number of microorganisms in liver and lung were decreased dramatically during the alkaline extraction and protein isolates could be stored for longer than 15 days at-15℃.

        혈장및 도축부산물로부터 회수한 단백질의 섬유화와 그 이용에 관한 연구

        In order to increase the utility of the protein isolates and blood which most of them were discarded and causes the pollution problems, protein isolates and blood plasma were made to spun fibers in order to give texture to the protein. Their use in the meat products and microbiological safety were examined. The results obtained were summarized as follows: 1. When protein isolates from liver and lung, and blood plasma were mixed with sodium alginate, the mixture flows pseudoplastically and could be spun into fiber easily. The pH adjustment of the mixture could not increase the tensile strength of the spun fibers. 2. Sausages having 10% of the blood plasma fiber were accepted without much change in the texture and color but addition of 20% of blood plasma fiber gave low acceptability. More acceptable soup could be made using bone protein which was extracted by water and high pressure extraction than by atmospheric pressure extraction. 3. The protein isolates spun fiber were found to be safe in terms of the food poisoning microorganisms.

        아질산염 , 아스코르부산 및 소금의 첨가수준이 세절육 ( 細切肉 ) 의 특성에 미치는 영향

        This experiment was carried out to determine the effect of sodium nitrite, ascorbic acid and sodium chloride on the characteristics of ground meat model systems. The fresh pork was ground and mixed with or without sodium nitrite (0, 68, 136, 180 ppm), ascorbic acid (0, 545 ppm) and sodium chloride (0, 2.0, 3.5, 5.0%). The results obtained were summarized as follows. 1. The pH of all the samples was in the range of pH 5.5-6.1. Samples mixed with sodium nitrite had a lower pH than those mixed with salt alone. Samples with sodium nitrite or ascorbic acid (AS) had a pH lower than no added samples. 2. Nitrite was more rapidly decrease when ascorbate (545 ppm) was added. After 5 days of storage, 14-38% of the originally added nitrite remained in ascorbate free samples but only 2.2-2.9% remained in treated ascorbate samples, Residual nitrite was higher in the presence of large amounts of sodium chloride. 3. The color intensity of nitrite added samples increased in proportion to its concentration. An increase in color development with length of storage period also apparent. Especially, color intensity was superior in NaNO₂ (182 ppm)+AS (545 ppm) sample. 4. Inhibition of microbial growth did not appear to remarkably influence the concentrations of sodium nitrite or ascorbic acid. However, salt concentration had highly inhibitory effect on aerobic bacteria counts. 5. Samples with nitrite revealed a remarkable reduction in TBA number. Especially, NaNO₂ (182 ppm)+Salt (3.5%) and NaNO₂ (136 ppm)+Salt (3.5%) samples were noticeable retardation of the natural oxition. Salt alone concentrations promoted greater rate of rancidity development.

        돼지의 거세방법이 생체 및 도체에 미치는 영향

        This experiment was carried out to find the best castration method for economical body gain and the improvement of the pork quality by preventing the sex odor. Including three female pigs, twelve heads of pigs, 50days old, were assigned into four groups, three pigs each by the completely randomized design. Except female group for control, the rest three groups were treated by the different castration; complete castration, cryptorchidism (short scrotum), and partial castration, and fed for 21weeks under the sane feeding condition. During the feeding period, the body gain and he feed consumptions were checked periodically for daily gain and feed efficiency. After the finishing of feeding, all the pigs were slaughtered and the carcass data, were collected and analyzed. The results obtained were summarized as follows; 1. The average total gain of completely castration, cryptorchidism, partial castration and female groups were 73.17, 81.50, 78.57 and 60.33kg respectively. However, there were non-significant differences for daily gain among each groups. 2. Feed consumption was non-significantly differed between four groups and they shown the same tendency in feed efficiency and body weight gain. 3. Dressing percentage was non-significant difference among the treatments. The whole average of dressing percentage was 68.3% 4. The ratio of carcass width(W) to carcass length (L) was about 41% in cryptorchidism and complete castration, but 46% in partial castration. 5. The backfat thickness indicated slightly lower in cryptorchidism (2.33㎝) than partial castration (2.63㎝), which was slightly lower than commonly-fattend swine. In loin eye muscle area, cryptorchidisn (31㎠) showed a little greater than complete castration (29㎠) and partial castration (30㎠).

        돈내장육을 이용한 소시지 제조시험

        In order to make better use of pork by-products, being consumed unsanitarily at present, sausage was manufactured formulating of four different levels(20, 40, 60 and 80%)of pork by-products mixture(Liver: Lung: Stomach=2 : 1 : 1). And the effect of phosphate-complex levels ( 0 , 0.3, 0.6 and 0.9% ) on the quality of the sausage formulated with 40% pork by-products mixture was investigated during the storage period of 36 days at 5 ℃. The results obtained were summarized as follows; 1. The appropriate level of pork by-products mixture for the sausage was evaluated at 40%. 2. The flavor score, pH, water-holding capacity, emulsion stability and the redness were significantly increased while the V.B.N., T.B.A. value and yellowness of sausage were significantly decreased by the addition of phosphate-complex. However, the residual nitrite was increased significantly by the addition of phosphate-complex.

        In 1962, a case of "generalized skeletal dysplasia with multiple anomalies" was reported by Taybi as a new clinical syndrome. The most characteristic features of the syndrome seemed to be hearing loss, cleft palate and peculiar digital anomalies, so, the syndrome designated as otopalatodigital syndrome by Dudding, et al. Recently, The authors have experienced a case OPD syndrome who visited Yeungnam University Hospital with the chief complaint of hypernasality, and underwent pharyngoplasty for correction of VPI. We present here a new case and review the literature on the subject.

      • 비중격 만곡증 및 만성 비후성 비염 환자에서 비중격 성형술과 하비갑개 수술의 치료효과

        Septoplasty with turbinate surgery is common surgical treatment In patients with septal deviation and chronic hypertrophic rhinitis. The aim of this study was to evaluation objective outcomes of septoplasty with turbinate surgery by analysis of subjective symptom score with objective acoustic rhinometric test before and after surgery, prospectively. Materials and Methods: We reviewed 45 adult patients which were done septoplasty with bilateral turbinectomy or turbinoplasty and followed up at least 3 months by one rhinologist from November 1999 to April 2000, prospectively. We analyzed subjective symptom score. minimal cross-sectional area (MCA) , C-notch cross-sectional area, and total volume of both nasal cavity before and after surgery. Correlation test was studied between symptom improvement and acoustic rhinometric results. Results: Twenty nine cases were male and sixteen cases female. The average age was 26.9 year-old (range: 17 to 57 years). There was significantly improvement of symptom score in postoperative 3 months (p<0.05). There was significantly increased C-notch cross-sectional area and total volume in postoperative 3 months. Symptoms improvement were associated with acoustic rhinometric profiles, but, there was not significantly correlation. Conclusion: Septoplasty with turbinate surgery is considered to be effective for nasal obstruction in patients with septal deviation and turbinate hypertrophy. Acoustic rhinometric test is favorable objective test for evaluation of symptom improvement after septal surgery.
