        Trends in Hybrid Cultured Meat Manufacturing Technology to Improve Sensory Characteristics

        The projected growth of global meat production over the next decade is attributed to rising income levels and population expansion. One potentially more pragmatic approach to mitigating the adverse externalities associated with meat production involves implementing alterations to the production process, such as transitioning to cultured meat, hybrid cultured meat, and meat alternatives. Cultured meat (CM) is derived from animal stem cells and undergoes a growth and division process that closely resembles the natural in vivo cellular development. CM is emerging as a widely embraced substitute for traditional protein sources, with the potential to alleviate the future strain on animalderived meat production. To date, the primary emphasis of cultured meat research and production has predominantly been around the ecological advantages and ethical considerations pertaining to animal welfare. However, there exists substantial study potential in exploring consumer preferences with respect to the texture, color, cuts, and sustainable methodologies associated with cultured meat. The potential augmentation of cultured meat’s acceptance could be facilitated through the advancement of a wider range of cuts to mimic real muscle fibers. This review examines the prospective commercial trends of hybrid cultured meat. Subsequently, the present state of research pertaining to the advancement of scaffolding, coloration, and muscle fiber development in hybrid cultured meat, encompassing plant-based alternatives designed to emulate authentic meat, has been deliberated. However, this discussion highlights the obstacles that have arisen in current procedures and proposes future research directions for the development of sustainable cultured meat and meat alternatives, such as plant-based meat production.

        Umami Characteristics and Taste Improvement Mechanism of Meat

        Taste is one of the five senses that detect vital information about what we are eating. Comprehending taste is crucial for enhancing the flavor of foodstuffs and highprotein foods like meat. Umami has global recognition as the fifth elementary taste, alongside sweetness, sourness, saltiness, and bitterness. Umami compounds are known to enhance the sensation of recognized flavors such as salty, sweet, bitter, and others. This could end up in greater food consumption by consumption by consumers. With the rising global population, meat consumption is rising and is projected to double by 2025. It is crucial to comprehend the umami mechanism of meat and meat products, identify novel compounds, and employ laboratory methodologies to gather varied information. This knowledge will aid in the development of new consumer products. Although very limited information is available on umami taste and compounds in meat through research data. This article discusses recent advancements in umami compounds in other foodstuff as well as meat to aid in designing future research and meat product development. Moreover, another objective of this review is to learn present techniques in foodstuffs to enhance umami taste and utilize that knowledge in meat products.

        Modern Concepts of Restructured Meat Production and Market Opportunities

        Restructured meat (RM) products are gaining importance as an essential component of the meat industry due to consumers’ interest in health benefits. RM products imply the binding or holding of meat, meat by-products, and vegetable proteins together to form a meat product with meat’s sensory and textural properties. RM products provide consumers with diversified preferences like the intake of low salt, low fat, antioxidants, and high dietary fiber in meat products. From the point of environmental sustainability, RM may aid in combining underutilized products and low-valued meat by adequately utilizing them instead of dumping them as waste material. RM processing technique might also help develop diversified and new hybrid meat products. It is crucial to have more knowledge on the quality issues, selection of binding agents, their optimum proportion, and finally, the ideal processing techniques. It is observed in this study that the most crucial feature of RM could be its healthy products with reduced fat content, which aligns with the preferences of health-conscious consumers who seek low-fat, lowsalt, high-fiber options with minimal synthetic additives. This review briefly overviews RM and the factors affecting the quality and shelf life. Moreover, it discusses the recent studies on binding agents in processing RM products. Nonetheless, the recent advancements in processing and market scenarios have been summarized to better understand future research needs. The purpose of this review was to bring light to the ways of sustainable and economical food production.

        The analysis of groundwater table variations in Sylhet region, Bangladesh

        The trend analysis of the study was acquired by selecting multiyear monthly groundwater table data and monitors the wells in each sub-district under the study area. The intention of this research was to analyze the outcome of the non-parametric Mann-Kendall test at greater than the significance level which is 95% of groundwater level in Sylhet. The aptitude is effective at two conjunctures where the confidence bounds are 95% and it meets the estimate line of Sen’s. To calculate and assess the spatial differences in the inanition of groundwater table, geostatistical methods was applied based on data from 27 groundwater wells during the period from January 1975 to December 2011 which were obtained from a secondary source, Bangladesh Water Development Board. The geographic information system was used to assess the spatial change in order to find the level of groundwater. Cross-validation errors were found within an advisable level in estimating the groundwater depth with different interpolation models of ordinary kriging methods. Finally, surface maps were generated with the best-fitted model. The southeast region was found highly vulnerable from groundwater level point of view. Northern region was detected highest hazard prone area for diverge groundwater using kriging method.

        A Comparative Study on the Efficiency of Locally Made Low Cost Brooders for Brooding Chicks

        An experiment was carried out with day-old "Sonali" (♂RIR$\times$♀Fayoumi) chicks to investigate the efficacy of locally made low cost brooders for brooding chicks in rural areas. Three types of indigenous brooders viz. charcoal, haricane and sawdust brooders were used for brooding chicks throughout the experimental period of 28 days. The efficiency of the brooders was observed in respect of their ability to maintain temperature, fluctuation in temperature during operation and cost effectiveness. Following initial trial of temperature maintenance for 48 h, the chicks were put under the brooder stoves and brooded up to 28 days. The experimental birds were fed on chick starter diet. Maintenance of temperature with sawdust brooders was found satisfactory and optimum for brooding the chicks at different stages of brooding and at the same time involved least cost for brooding in comparison with charcoal and haricane brooders which did not perform well in generating heat necessary for brooding and were not economically feasible for poor farmers. On the other hand, performance of charcoal brooders was better in respect of temperature maintenance during initial stage (when the brooder was started) but the temperature fluctuated rapidly, whereas fluctuation of temperature was gradual in sawdust brooders. Body weight gain and feed conversion were best in sawdust brooders. Survivability was highest in sawdust brooders and lowest in haricane brooders. Sawdust brooders may be appropriate for brooding chicks in rural areas, where electricity is not available.

        Seasonal Shift in Community Structure of Periphytic Ciliates in Estuarine Waters in the Northern Bay of Bengal, Bangladesh

        To investigate the seasonal heterogeneity of the periphytic ciliate communities, a 1-year baseline survey was conducted in the Karnaphuli River estuary, northern Bay of Bengal, Bangladesh. A total of 54 ciliate species were recorded, including seven common and 14 dominant species. Maximum species number was in autumn whereas maximum abundance was in winter; the minimum for both occurred in summer. Multivariate analyses, i.e., canonical analysis of principal coordinates (CAP) and principal co-ordinates analysis (PCoA), revealed a clear seasonal heterogeneity of community structure and environmental variables. Multivariate correlation analysis (RELATE) demonstrated that the community structure of the periphytic ciliate communities was significantly correlated with environmental variables, and best matching analysis (BIOENV) indicated that heterogeneity of community patterns was mainly driven by water temperature, pH, dissolved oxygen, total dissolved solids and nutrients. Species richness and diversity peaked in autumn whereas species evenness peaked in summer. These results suggest that environmental conditions shape periphytic ciliate community structure, which is a potentially useful bio-indicator of estuarine water quality.

        Evaluation of biorational insecticides and DNA barcoding as tools to improve insect pest management in lablab bean (Lablab purpureus) in Bangladesh

        Lablab bean (Lablab purpureus) is a popular vegetable crop in Bangladesh, but farmers growing this crop experience significant losses to insect pests despite heavy reliance on conventional insecticides. We conducted field studies to improve pest management in lablab bean by testing biorational insecticides as alternatives to conventional insecticides for the control of pod borers (Maruca vitrata) and aphids (Aphis craccivora), and characterizing flower-inhabiting thrips as an emerging pest in this crop. In field experiments, spinosad was the most promising biorational we tested, suppressing pod-boring caterpillars more effectively than thiamethoxam or quinalphos. In contrast, azadirachtin (neem) did not significantly suppress any of the insect pests we measured, although target aphid populations were generally low at our research site. Using DNA barcoding at the coxI locus combined with morphological identification, we found eight thrips taxa inhabiting lablab bean flowers, dominated by Megalurothrips usitatus and M. distalis/peculiaris. A preliminary regression analysis indicated that these flower-inhabiting thrips reduced lablab bean yield. Our results suggest that spinosad may be useful within lablab bean IPM programs, and that these programs will likely need to incorporate tactics against thrips to effectively protect yield. Finally, we found that DNA barcoding was a valuable tool for pest identification in an understudied crop and region, but that to reach its full potential will require an investment in more comprehensive reference libraries.
