      • 농축대두단백 (濃縮大豆蛋白)으로 제조된 유산균 음료의 저장성

        본 연구는 농축대두단백으로 대두 유산균음료를 제조하여 안정제에 의한 커드의 침전 억제효과와 미생물학적인 저장성을 조사한 것으로서, 그 결과를 요약하면 다음과 같다. 대두유산균음료의 커드는 0시간부터 1시간 사이에 상당한 침전을 보였으며, 여기에 첨가된 CMC (0.6%이상 ), PGA (0.2%이상) 또는 Na-alginate (0.05 % 이상)에 의하여 커드의 침전이 현저하게 억제되었다. 대두위산균음료를 5 ℃에 저장한 경우, 66일이 경과하여도 유산균수는 처음과 거의 차이가 없었으며 산생성량은 실험기간 전체를 통하여 완만한 증가를 신였다. 한편 25 ℃의 경우, 12일까지 산의 생성이 급격히 증가하였으며 생균수는 12일까지는 처음과 비슷한 수준을 유지하였으나 18일부터는 급격히 감소하였다. 5 ℃, 25 ℃ 두 경우 다 대두유산균 음료에 fungi에 의한 오염이 보였으며 25℃ 의 시료에 fungi가 더 많았다. 그리고 대두유산균 음료에 첨가된 K- sorbate (0.005%) 는 유산균의 생육과 산생성에는 아무런 영향을 미치지 않았으나 fungi의 생육을 크게 억제시켰다. Soy yogurt beverage(SYB) was prepared from soy protein concentrate and the effect of stabilizers on the sedimentation of SYB curd and the microbiological quality of SYB during storage were investigated. The curd in SYB precipitated significantly during the first one hour of storage and the sedimentation of curd was reduced by the addition of CMC of over 0.6%, PGA of over 0.2% or Na-alginate of over 0.05%. SYB could be kept for 66 days at 5℃ without significant change in viable cell count of lactic acid bacteria. pH, titratable acidity and viable cell count of SYB were significantly changed from 42 days of storage at 25℃. Some of SYB samples were contaminated by fungi and the growth of fungi was greatly inhibited by the addition of K-sorbate of 0.005%.

        소비자의 추구혜택에 따른 의복 선호도에 관한 연구

        The purpose of this study is to find out the benefits sought factors of clothing and to segment the female apparel market to analyze clothing preferences and demographic characteristics of benefit segments. The subjects were 303 female in their 30's and 40's living in Seoul and the Kyunggi province. For data analysis, mean, Factor analysis, Cluster Analysis, ANOVA, Duncan tes, χ²-test were conducted. The results are as follows: 1. Benefits sought by female were found to include five different factors-brand, individuality, fashionability, activity and economy. As a result of subdividing the female, five distinctive groups were formed on the basis of benefit factors-brand oriented group, indifference group, fashion oriented group, economy oriented group, individuality oriented group. 2. Among the classified benefit groups, there were significant differences in clothing preferences according to fabric, style and color. 3. Among the classified benefit groups, there were significant differences in demographic variables according to the academic background, occupation of the subjects.

      • 당질 및 단배질 급원의 첨가가 발효조건을 달리했을때 김치의 발효와 Ascorbic Acid의 잔존량에 미치는 영향(2)

        The effects of various salt concentrations, lactose, casein and non-fat milk solids (NFMS) on kimchi fermentation and on ascorbic acid retention were investigated at -1℃ and 8℃. Kimchi samples with casein and NFMS accelerated the fermentation, resulting in high acid production. It was revealed that the addition of milk protein has acted as lactobacilli growth enhancer in the fermentation. The process of kimchi fermentation was faster in the higher temperature and the lower salt concentrations compared to the lower temperature and the higher salt concentrations. The amounts and changes in ascorbic acid content during the fermentation did not differ significantly between the control and the samples added with lactose and milk protein. Nervertheless, the decrease in ascorbic acid content was more prominent in the kimchi added with casein showing the higher pH levels during the process. From the multiple comparison tests the 10-panel members indicated no significant difference in the flavor of kimchi varieties, however, the better flavor of NFMS-added sample was indicated than other samples.

        The results were as follows; 1. There was negative significant relationship between Clothing satisfaction, Aesthetic and Social security-insecurity. 2. Positive significant relationship were found between Social approval and Social security-insecurity 3. There was significant differences in Clothing satisfaction according to parents socio-economic status. 4. There was significant differences in Aesthetic according to university type, major field, parents education level, parents socio-economic status. 5. There were significant differences in psychological dependence, according to parent's education level parents socioeconomic status. 6. Social security-insecurity affected Clothing satisfaction, 7. Social security-insecurity affected Social approval. The purpose of this study was to investigate the relationships among clothing satisfaction, social approval, psychological dependence, and social security-insecurity, and to determine the differences of clothing behaviors by the demographic variables such as university type, major field, parents education, and socio-economic status. The following two hypothesis were established for this study. 1. There will be no significant relationship between social security-insecurity and subscales of the clothing behaviors. 2. There will be no significant relationship between demographic variables such as university type, major field, parents education level and subscales of the clothing behaviors. The measurement for the Social security-insecurity was adopted from Lapitsky's Social Security Inventory. Clothing behaviors were measured by Lim's Questionnaire modified and supplemented for the study.

        국내 의류제품에 대한 소비자의 평가 및 불만에 관한 연구 : 백화점내 여성의류를 중심으로

        The purpose of this study was to compare consumers's evaluation, evaluation criteria and complaint factors on the department brand apparel. 564 subjects were gathered in Seoul and Kyunggi province and, for data analysis, mean, t-test, ANOVA, Duncan test, Factor Analysis were conducted. The results are as follows; 1. Among the purchasing groups, there were signifcatant differences in apparel evaluation according to fabric, style, sewing, suitability, washability, price and color. 2. Among the purchasing groups, there were significant differences in apparel evaluation criteria according to fabric, fashionability, sewing, brand name, department store's credibility. 3. The differences in complaint factors of apparel among the purchasing groups were due to factors such as high quality, variety, price and size. there were significant differences in complaint factors of apparel according to the subjects'age.

      • 혼합식이가 인슐린비의존형당뇨병 환자의 혈당과 혈압에 미치는 영향

        The hypoglycemic and hypotensive effects of tangle, carrot, garlic, barley, soybean, buckwheat, mung bean, yam, perilla, water cress and Capsella bursa-pastoris on non-insulin dependent diabetes mellitus(NIDDM) patients being hospitalized were investigated in this study. Nutrients such as crude fiber, Ca, Na, K and vitamin B_2 were abundant in all experimental materials for this study. All NIDDM patients were divided into two groups ; Hospital diet group was provided with the original diabetic diet used in the hospital, Mixed diet group was provided with the diet administered wild sesame powder, yellowish soybean powder, yam power and dried tangle powder to the hospital diet. The level of fasting blood pressure(systolic and diastolic), the level of fasting blood glucose and postprandial blood glucose after meal of NIDDM patients of the mixed diet group were significantly lowered after the experimental period. These results suggest that the experimental materials cause a hypoglycemic and hypotensive effects to NIDDM patients and show the possibility of preventive and therapeutic agent of that material to NIDDM patients. Futher research by increasing the quantity of such experimental materials should be conducted to confirm these therapeutic effects of the experimental materials for NIDDM, and more development of processed food using these materials is advisable.

        웨딩드레스점포 선택과정에 관한 연구

        This study was designed to examine the consumers fashion store choice process based on the wedding dress stores, and also to find the consumers shopping orientation and store attributes affects to store choice process. This study adapted a survey method. Each 48 wedding dress stores in Ahyun-dong and Kangnam were selected, and 325 women who got married within 2 years ago were recruited. convenient sampled as the subjects and the survey methodology was used for data collection. And convenience sampling method was used for data collection. The results of this study can be summarized as follows: First, wedding dress buyers wear classified into four subdivisions by shopping orientation; reputationoriented group, utility-oriented group, fashion-oriented group, and time-oriented group. Second, there was significant differences in store choice type between shopping orientation group. Third, in case of important ranks on store attributes, evaluation of store attributes for each stepconsideration step, visit step and choice step-was revealed to be coherent. Fourth, there was differences in important ranks among each groups. The most important attribute for all the groups was design, but reputation-oriented group raid importance to reputation of store, utilityoriented group and time-oriented group to economy, and fashion-oriented group to variety than other groups. Fifth, there was no significant difference in attitude for wedding dress stores by shopping orientation groups and demographic characteristics.
