Content of heavy metal were determined in fresh, broiled-dried of Mytilus coruscus and Mytilus edulis. The result showed that zinc was abundant expecially and total mercury were poor in both fresh and broiled-dried samples. Heavy metal content in Mytilus edulis were higher than in Mytilus coruscus as a whole, but significant differences heavy metal content between male and female was not observed. The heavy metal content of total mercury, cadmium, lead, copper, manganese, and zinc in broiled-dried sea mussel of dry base ranged from 0.06ppm to 0.17ppm, 0.05ppm to 0.10ppm, 0.31ppm to 0.61ppm, 0.94ppm to 3.12ppm, 3.45ppm to 4.90 ppm, and 8.95ppm to 15.82ppm respectively. In conclusion the content of heavy metal is suitable for processing materials in Korea.

This study is designed to investigate the properties of caramel color made by glucose. Glucose dissolved and caramelized in the solution of pH 8-10 ranges using catalysts such as glycine, lysine, citric acid and sodium pyrophosphate. The results were as follows; The caramelization showed the intensity of very strong color when added 0.6% glycine at pH 9. Color hue appeared to have the same color hue of the yellow and the red belt when compared with standard color in all pH ranges. But the samples blue belt showed strong color hue than the standard color. Also, the stability of acid, table salt and alcohol was transparent in all ranges, but the stability of tannin showed hazy at pH 9-10. In the case of lysine as a catalyst, caramelization showed the intensity of strong color when added 0.8% glycine at pH 9-10. Color hue showed to have same color hue in the yellow belt and weak in the red belt and very strong in the blue belt in all pH ranges when compared with standard. Stability of tannin showed hazy, but stability of acid, table salt and alcohol was quite stable. In the case of sodium pyrophosphate as a catalyst, caramelization showed the intensity of very strong color when added 0.4% sodium pyrophosphate at pH 10. Stability of acid, table salt and alcohol was quite stable.
