        This study was undertaken to compare the quality characteristics of dairy beef ham. Dairy beef hams were manufactured using non-preferred portion (top round). 5 treatments were prepared: T1(beef 50% + pork emulsion 50%), T2(beef 65%emulsion 35%), T3(beef 80%emulsion 20%), T4(beef 90%emulsion 10%), T5(beef 100%emulsion 0%). In chemical composition, dairy beef content increases, moisture content was increased, fat content was decreased. In the meat quality characteristics, T5 showed higher (p<0.05) water holding capacity value than the others. Dairy beef content increases, product loss and cooking loss were decreased. In hunter color, dairy beef content increases, redness was increased. In texture profile analysis, T4 and T5 were significantly higher than the others. As a result, dairy beef ham with 80~90% dairy beef and 10~20% pork emulsion has low fat content, high product yield and superior texture profile, which could be developed as a dairy beef hams using non-preferred portion.

      • 고어텍스를 이용한 비성형 5례

        비성형수술에 삽입하는 사용물로는 자가연골이 가장 이상적이지만 필요한 만큼의 충분한 양을 얻기가 힘들고, 수술시간이 길어지며, 흡수가 일어날 수 있다는 단점이 있다. 이러한 단점을 극복할 수 있는 이종이식물 중에서 고어텍스는 최근에 개발되어 사용이 점차 증가하고 있는 추세이지만 아직까지 고어텍스의 임상적 효용성에 대한 보고는 드물다. 저자들은 고어텍스를 5명의 융비술 환자에서 사용하였는데 3명은 연골과 같이, 2명은 고어텍스 단독으로 사용하였다. 이 중 1명에서 감염이 발생하여 고어텍스를 제거하고 늑연골을 이용하여 융비술을 다시 시행하였고 나머지 4명은 모두 만족스러운 결과를 얻었다. 평균 20개월의 추적관찰에서 이식물의 이동이나 탈출, 피부의 손상 등의 큰 부작용이 없어 고어텍스가 비성형, 특히 융비술에 유용하다고 판단되어 관련문헌 고찰과 함께 보고하는 바이다. Though autogenous cartilage remains the ideal graft material in nasal surgery, situations exist where an alternative or an additional grafting material is needed. Gore-Tex is one of most recently developed alloplastic material and has been widely used for rhinoplasty. But there are few reports about the clinical efficacy of this material in rhinoplasty. The authors used Gore-Tex as a nasal implant in 5 cases of augmentation rhinoplasty. In three patients, the Gore-Tex was used with septal or conchal cartilages because the cartilages were not enough for the needed augmentation. In one patient, the implant was removed due to postoperative infection and subsequent augmentation was done with autogenous rib catilage after infection control. During average 20 months of follow-up, complications such as absorption, mobilization, or extrusion of the implant and thinning of the nasal skin were not found. All patients were satisfied with the surgical results. From these results, Gore-Tex can be considered as an effective material in augmentation rhinoplasty when autogenous material is not available or is not sufficient for the proper augmentation.

      • 모유 수유아와 조제 분유 영양아에서 수유 방법에 따른 아미노산 농도 비교 및 혈청 트립토판 농도와 수면 유도와의 관계

        Objective: Sleep behavior is modulated by serotonergic neurons within the brain, and the synthesis and release of serotonin by such neurons is thought to be influenced by the availability of tryptophan, the amino acid precursor of serotonin. Formula-feeding infants have depressed plasma tryptophan concentration relative to breast milk-feeding infants. Because tryptophan alters sleep waking patterns in adults, a study was designed to determine the difference of sleep latency relative to differences in plasma tryptophan and tryptophan : large neutral amino acid (LNAA) ratio between formula-feeding infants and breast milk-feeding infants. Method: 45 newborns who were born in Chosun University Hospital from December 2002 to December 2003 were selected. The newborns were divided to three group, 15 newborns were fed breast milk and 15 newborns were fed formula A, and last 15 newborns were fed formula B. At 6 weeks and 12 weeks, infants were sampled for measuring of serum amino acid level and tryptophan, tryptophan : LNAA ratio. And we taught infants' parents to measure sleep latency that means the time after a feeding to the first episode of active REM sleep that persist ≥ 1 min. Result: 1) At 6weeks, Serum α-amino-n-butyric acid, citrulline, tryptophan level was higher in formula A group than breastmilk group (P<0.05) and proline level was lower than breast milk group (P<0.05). In formula B group, serum n-amino-n-buryric acid, citrulline, cystine, hydroxylysine, hydroxyproline, isoleucine, leucine, lysine, methionine, phenylalanine, taurine, threonine, valine levels were higher than breastmilk group (P<0.05). And Serum isoleucine, methionine, proline, valine level were higher in formula B group than formula A group (P<0.05). 2) At 12 weeks, serum glutamic acid, methionine, ornithine levels were higher in formula group A than breast milk group (P<0.05). Serum β-alanine, aspartic acid, α-amino-n-butyric acid, ethanolamine, glutamic acid, threonine level were higher in formula B group than breast milk group (P<0.05). Serum β-alanine, ethanolamine levels were higher and arginine level was lower in formula B group than formula A (P<0.05). 3) At 6 weeks, serum tryptophan concentration and tryptophan: LNAA ratio were higher in formula A group (P<0.05). Sleep latency was 21 minutes in formula group A, 24 minutes in breast milk group, 25 minutes in formula B group but there was no statistically significance (P>0.05). 4) At 12 weeks, serum tryptophan concentration and tryptophan: LNAA ratio, time after feeding to the first episode of active REM sleep were no difference with each other group. Conclusion: There is significant difference of serum amino acids between breast-feeding infants and formula-feeding infants. And serum tryptophan and tryptophan: LNAA ratio differ between brest-feeding infants and formula-feeding infants. But there is no association between serum tryptophan, tryptophan: LNM ratio and sleep latency.

      • 영아기 호흡기 질환의 이환요인에 관한 연구

        Purpose: Respiratory tract infections are common in the first year of life. Severity of respiratory tract infection in infants is associated with early-life environmental factors, In recent, genetic studies suggest a role of heredity in susceptibility to severe respiratory tract infection(RTI) in infants. We designed a case control study to further investigate relative importance of familial influence in risk of respiratory tract infection in infants compared to environmental factors. Methods: We selected 126 children(44 cases; 82 controls) that admitted or visited to Chosun University Hospital. Cases were infants under age 1 year admitted to hospital with severe respiratory tract infection. Familial history and other factors were recorded in cases and controls by questionnaire. Results: Out of 126 infants, Patients admitted with severe respiratory tract infection are 44 cases. Diagnosis of patients with RTI are acute bronchitis 15 cases(34.1%), pneumonia 12 cases (27.3%), acute nasopharyngitis 7 cases (15.9%), acute bronchiolitis 5 cases (11.4%), infantile asthma 3 cases (6.8%), and croup 2 cases (4.5%). The crude odd ratio of repiratory tract infection of parental smoking is 3.35 and cow mik feeding 3.13, Prematurity & low birth weight 2.39, maternal allergic disease 2.13, and child allergy 1.92. Conclusion: Maternal allergic disease, parental smoking, Prematurity and low birth weight, and Allergic diseases increased the risk of respiratory tract infection in infants. Breast milk feeding decreased that. These results support the possibility that genetic factors play an important role in susceptibility to recurrent and severe respiratory infections in early life.

        Comparison of Meat Quality and Fatty Acid Composition of Longissimus Muscles from Purebred Pigs and Three-way Crossbred LYD Pigs

        This study was conducted to find pork quality to meet the needs of consumers. Thus, the meat quality and fatty acid composition of longissimus muscles from purebred pigs (Landrace, Yorkshire, and Duroc) and three-way crossbred LYD pigs were compared and evaluated. Chemical compositions of longissimus muscles were significant (p<0.05) different among pigs. Duroc contained significant (p<0.05) higher fat contents than other pigs, whereas significant (p<0.05) higher moisture contents were observed in Landrace, Yorkshire, and LYD pigs compared to those of Duroc pigs. The values of pH24 h and pH14 d were the highest in Landrace pigs. Myoglobin contents of LYD pigs were higher (p<0.05) than those of purebred pigs. Regarding meat color, Duroc and Yorkshire pigs had higher redness values than Landrace and LYD pigs, while Landrace pigs had the lowest (p<0.05) color values among all pigs. There was no significant difference in shear force or water holding capacity (WHC). Duroc pigs maintained the lowest drip loss during 14 d of cold storage. In sensory evaluation, the marbling scores of Duroc pigs were higher (p<0.05) than other pigs. Regarding fatty acid compositions, total USFA, poly-, n-3, and n-6 contents were the highest (p<0.05) in LYD pigs, while total SFA contents were the highest (p<0.05) in Duroc pigs. Based on these results, purebred pigs had superior overall meat quality to crossbred pigs.

        Detection of L-Xylosone and its Physiological Effects in Saccharomyces cerevisiae

        L-Xylosone was detected as its quinoxaline derivative in the degradation solution of dehydro-L-ascorbic acid. The production rate of L-xylosone was much faster in aerated phosphate-cirate buffer (pH 5. 6) than in pure water. L-Xylosone and dehydro-L-ascorbic acid were identified in the crude extracts of Saccharomyces cerevisiae. The concentration of L-xylosone in the crude cell extracts was calculated to be about 0.2 nmol $(mg protein)^{-1}$. When L-xylosone was added to asynchronous culture of S. cerevisiae, it inhibited primarily the synthesis of protein and RNA. Examination of the effect of L- xylosone on synchronous culture of the yeast indicated that L-xylosone inhibited the initiation of DNA replication and that the cells were arrested at $G_1$, stage of cell division cycle. These results suggested a possibility that L-xylosone can act as an inhibitor of cell growth.

        제염용액에서 IRN-77 양이온수지에 대한 금속이온의 이온교환특성

        Amberlite IRN-77 양이온교환수지는 철과 코발트이온에 대해서 비슷한 이온교환용량을 보였다. 그러나 제염용액내 유기산 가운데 EDTA는 철이온 보다 코발트이온과 강한 착화합물을 형성하여 코발트이온에 대한 이온교환용량을 현저히 감소시키는 주요원인이었다. 반면에 oxalic acld와 citiric acid의 영향은 미미하였다. 이같은 이온교환공정에 지배적인 영향을 미치는 EDTA하에서 균일상 입자내 확산모델을 적용하여 구한 철과 코발트이온의 입자내 확산계수는 각각 0.82×10^(-8)∼3.78×10^(-8)㎠/sec와 1.33×10^(-8)∼3.45×10^(-8)㎠/sec이었다. Amberlite IRN-77 cation exchange resin showed similar ion exchange capacities to ferrous ion and cobaltous ion. But, EDTA contained as one of organic acid formed stronger complex with cobaltous ion than ferrous ion and diminished the ion exchange capacity to cobaltous ion. In contrast, the effects of oxalic acid and citric acid were found to be negligible. Also, in the presence of EDTA dominantly affecting on the ion exchange process, intraparticle diffusivities of the ferrous ion and cobaltous ion were determined by the homogeneous intraparticle model and they were 0.82×10^(-8)∼3.78×10^(-8)㎠/sec and 1.33×10^(-8)∼3.45×10^(-8)㎠/sec, respectively.

        발화합성법에 의한 SrAl2O4 : Eu+2 , Dy+3 축광성 형광체 제조

        발화합성법으로 SrAl_2O_4 : Eu^+2, DY^+3 축광성 형광체를 제조하여 발광특성과 측광특성을 조사하였다. 형광체 제조를 위한 전구체가 발화합성으로 얻은 나노크기의 미세분말이기 때문에 모체물질인 SrAl_2O_4의 단일상이 비교적 낮은 온도에서 형성되었으며, 공부활제의 사용여부와 상관없이 SrAl_2O_4: Eu^+2, Dy^+3과 SrAl_2O_4 : Eu^+2의 발광중심은 Eu^+2로 동일하였다. 형광체 결정구조에서 공부활제인 Dy^+3가 모체의 결정구조에 미치는 영향은 미미하였다. 잔광의 강도와 잔광지속시간은 모체의 구성원소인 Sr과 Al이 부족한 조성의 형광체와 공부활제가 상대적으로 많이 포함된 형광체에서 크게 나타났다. SrAl_2O_4: Eu^+2, Dy^+3 축광성형광체의 잔광특성은 공부활제인 Dy^+3이온의 영향이 크게 미치고 있음을 확인할 수 있었으나 공부활제가 상대적으로 많은 경우에 Dy_3Al_5O_12와 같은 불순물의 생성으로 잔광시간이 감소하였다. Long phosphorescent phosphors with various compositions, SrAl_2O_4 : Eu^+2, Dy^+3 were prepared, and their emission and after-glow characteristics were investigated. Since precursors for preparing the phosphors obtained by a pyrophoric synthesis method were nano-sized fine particles, the single crystalline as phosphor host was formed at relatively low temperature, 850℃, and it was not dependent upon the existence of coactivator. The luminescence center of SrAl_2O_4 : Eu^+2, Dy^+3 and SrAl_2O_4:Eu^+2 was mainly due to Eu^+2. Also, the effect of coactivator, Dy^+3, on the crystal structure of phosphor host, SrAl_2O_4 was negligible. The brightness and long after-glow of phosphors were seen in the crystals grown from Sr-poor, Al-poor, and heavily coactivator, Dy^+3, doped starting materials. It was identified that long after-glow characteristics of SrAl_2O_4: Eu^+2, Dy^+3 were affected by the coactivator; in the case where coactivator was heavily doped, the long after-glow characteristics diminished due to formation of impurities such as Dy_3Al_5O_12 during the heat treatment.

      • Molecular Breeding of Pepper Varieties (Capsicum annuum) Containing High Levels of Capsinoids

        Capsinoids, low-pungent compounds, have the same biological effects as capsaicinoids such as anticancer and anti-obesity. A precursor of capsinoids, vanillyl alcohol, is known to be produced by mutations in the putative-aminotransferase (pAMT) gene. In the previous study, ‘SNU11-001’ (Capsicum chinense) containing high levels of capsinoids was identified in germplasm collections of Capsicum. This collection has a unique mutation in the pAMT gene that can cause dysfunction of this gene. In order to develop pepper varieties containing high capsinoids contents, marker-assisted foreground and background selections were performed during backcross breeding. Compared to the conventional backcrossing, marker-assisted backcrossing (MABC) is extremely useful for recovery of a recurrent parent’s genetic background. For foreground selection, plants carrying the pAMT/pamt genotype were selected from a BC1F1 and BC2F1 populations using SCAR markers derived from the unique pAMT mutation of ‘SNU11-001’. To obtain background selection markers, a total of 412 single nucleotide polymorphism (SNP) markers was screened on ‘Shinghong’ parental lines and ‘SNU11-001’ to obtain polymorphic SNP markers. Of the 412 SNP markers, 144 and 204 polymorphic SNP markers evenly distributed in pepper genome were finally selected. BC1F1 and BC2F1 plants carrying the pAMT/pamt genotype were subjected to background selection using the selected marker sets. Multiple genotype analysis was done using a high-throughput genotyping system (EP1TM, Fluidigm®, USA). As a result, one BC1F1 plant 84% similar to the recurrent parent and several BC2F1 plants more than 96% recovery rate of the recurrent parent were selected. Genetic backgrounds of the selected BC2F1 plants were evaluated by the genotype-by-sequencing (GBS) method in order to confirm the background selection results using the SNP marker set. GBS results showed that recovery rate and positions of introgressed segments were well matched between two methods demonstrating MABC can be successfully done with a couple hundred SNP markers.
