        Starter 및 멸치액젓 첨가가 김치양념 및 겉절이 김치의 품질에 미치는 영향

        양념에 Leu. mesenteroides, Lac plantarum의 젖산균과 멸치액젓 첨가가 김치 양념의 대장균군 제어, 속성촉진여부 및 관능적 특성에 미치는 영향을 조사하였다. Leu. mesenteroides과 젓갈을 첨가한 경우 초기 숙성이 촉진되나 후기 산패는 완만하였으며 Lac. plantarum의 첨가시에는 초기 숙성에는 큰 차이가 없고 후기 산패가 현저하게 진행되었다. 대장균군은 산도 0.80% 이상에서 사멸되었는데 leu. mesenteroides의 경우가 숙성이 촉진되어 보다 신속히 사멸시켰다. 총균수와 젖산균수는 초기에 starter 첨가구는 10^6CFU/mL 정도인데 반해서 starter를 첨가하지 않은 않은 처리구에서 총균수는 10^6CFU/mL , 젖산균수가 10^4CFU/mL 이었고 숙성 후에는 첨가균이 높은 수준을 유지하였다. 하지만 대체적으로 스타터의 첨가가 숙성 및 대장균에 크게 영향을 주지 못하는 경향으로 동일하게 나왔다. 관능적 특성에서는 Leu. mesenteroides 첨가구가 Lac. plantarum의 경우보다 우수하였다. 한편, 시판 겉절이 김치는 산도가 0.09~0.18%, ph 5.46~5.89, 총균수 2.2×10^6~3.1×10^7CFU/mL, 젖산균수는 2.1×10^4~6.6×10^5CFU/mL, 대장균수는 1.8×10^4~7.1×10^5CFU/mL, 염분 1.89%~2.51%으로 스타터 첨가 겉절이에 비해 ph와 염도를 제외한 품질 특성에서 전반적으로 낮은 값을 나타냈다. This study was performed in order to investigate the effect of Leuconostoc mesenteroides, Lactobacillus plantarum and salt fermented anchovy extracts on Kimchi sauce. The sauce was fermented more rapidly by addition of Leu. mesenteroids or salt fermented anchovy extracts on the early fermentation stage than the control, but it was fermented slowly on the late fermentation stage. When L. plantarum was added to the Kimchi on the early fermentation stage, the acidity of Kimchi didn't show a significant difference from the control, but acidity was remarkably increased on the late stage. Coliform group was disappeared when acidity of sauce was higher than 0.8% during fermentation. It was controlled by Leu. mesenteroides but not by L. plantarum. Total count and lactic acid bacterial count of the sauces with starter were 6.30×10^6~1.0×10^7 CFU/mL and 1.04~2.04×10^6 CFU/mL, respectively, but those of the control sauce were 10^6 CFU/mL and 10^4 CFU/mL, respectively. Those count of the sauce with starter were higher than those of the control sauce on the later stage of fermentation. Organoleptic quality of the sauce with Leu. mesenteroides was superior to that with L. plantarum.

        Pulmonary Langerhans Cell Histiocytosis in an Adult Male Presenting with Central Diabetes Insipidus and Diabetes Mellitus: A Case Report

        Pulmonary Langerhans cell histiocytosis is an uncommon diffuse cystic lung disease in adults. In rare cases, it can involve extrapulmonary organs and lead to endocrine abnormalities such as central diabetes insipidus. A 42-year-old man presented with polyphagia and polydipsia, as well as a dry cough and dyspnea on exertion. Magnetic resonance imaging of the hypothalamic-pituitary system failed to show the posterior pituitary, which is a typical finding in patients with central diabetes insipidus. This condition was confirmed by a water deprivation test, and the patient was also found to have type 2 diabetes mellitus. Computed tomographic scanning of the lungs revealed multiple, irregularly shaped cystic lesions and small nodules bilaterally, with sparing of the costophrenic angles. Lung biopsy through video-assisted thoracoscopic surgery revealed pulmonary Langerhans cell histiocytosis. On a follow-up visit, only 1 year after the patient had quit smoking, clinical and radiological improvement was significant. Here, we report an uncommon case of pulmonary Langerhans cell histiocytosis that simultaneously presented with diabetes insipidus and diabetes mellitus.

        Alaria esculenta Extract Protects against Oxidative Damage by Inducing Heme Oxygenase-1 Expression via Akt and Nrf2

        Alaria esculenta is a brown seaweed found in the Arctic. This study investigated the protective effect of A. esculenta extract (AEE) against oxidant-mediated injury and its mode of action in RAW264.7 macrophages. The methyl thiazolyl tetrazolium (MTT) assay showed that $H_2O_2$ treatment reduced cell viability, whereas AEE protected cells from $H_2O_2$-mediated cytotoxicity in a dose-dependent manner. Because heme oxygenase-1 (HO-1) is known to protect cells against oxidative damage, we investigated the effect of AEE on HO-1 gene expression and HO enzyme activity. The protective effect of AEE against $H_2O_2$-induced injury was correlated with increased HO enzyme activity. AEE also induced HO-1 mRNA and protein expression, as determined RT-PCR and Western blotting, respectively. To characterize the mechanisms by which AEE induces HO-1 gene expression, we examined the effect of AEE on the nuclear translocation of NF-E2-related factor-2 (Nrf2) and Akt phosphorylation. AEE treatment activated upstream signaling for HO-1 gene expression, including the nuclear translocation of Nrf2 and Akt phosphorylation. Collectively, these results suggest that AEE has anti-oxidant activity that is mediated, at least in part, via the activation of Nrf2 and Akt and the subsequent induction of HO-1 gene expression.

        Down-regulation of oxidative stress and COX-2 and iNOS expressions by dimethyl lithospermate in aged rat kidney

        Oxidative stress has been proposed to be a major cause of aging and many age-related diseases. Peroxynitrite ($ONOO^-$), formed from the reaction of superoxide ($^{\bullet}O_2{^-}$) and nitric oxide (NO), is a cytotoxic species that can oxidize various cellular components, such as proteins, lipids, and DNA. The present study investigated whether dimethyl lithospermate (DML), isolated from Salvia miltiorrhiza, modulates age-related increases of $ONOO^-$, NO, and reactive species (RS) levels and expressions of cyclooxygenase-2 (COX-2) and inducible nitric oxide synthase (iNOS). For this study, 20-month-old rats were intraperitoneally injected with 5 or 10 mg/kg/day of DML, and 6-month-old rats were used as young control animals. Our results indicated that DML reduces $ONOO^-$ levels in a dose-dependent manner. The data also revealed that DML has significant inhibitory effects on NO metabolites and RS generation in a dose-dependent manner during aging. Furthermore, the results of Western blot analysis revealed that DML treatment reduces age-associated increases in COX-2 and iNOS expressions. Thus, this study found that DML caused the decrease of renal oxidative stress and COX-2 and iNOS expressions in aged rats. The significance of the present study is the finding of DML in its potential application against the aging process.

      • 사주의 일간에 나타난 오행별 학업적 자기효능감이 진로결정수준에 미치는 영향

        사주명리는 과거 점술적 차원 단계를 지나 상담, 심리, 직업, 한의학분야 등 매우 다양한 분야로 확대되고 있다. 따라서 본 연구는 학생들을 동양의 예정론적 성격유형론이라 할 수 있는 오행성격별로 구분하여 이들이 진로를 결정함에 있어서 개인의 사회환경에 따라 학습된 개인성격 요인이라 할 수 있는 학업적 자기효능감(자신감, 자기조절효능감, 과제난이도)이 어떤 영향을 미치는가를 살펴보았다. 본 연구의 결과는 다음과 같다. 오행별 차이를 분석한 결과 학업적자기효능감에서 유의미한 결과가 나왔다. 오행별 진로결정수준에 대한 다중회귀분석 결과 오행 전체에서 학업적 자기효능감이, 수(水)유형에서 인문계열 학생일수록 진로결정수준에 영향을 미치는 것으로 나타났다. 따라서 사주명리에 나타난 오행을 근거로 대학생들에 대한 상담 자료로 활용이 가능하다고 판단된다. 본 연구는 향후 사주명리를 통한 학업적 자기효능감 분석에 대한 객관성을 확보하고, 추후 대학 생들에 대한 진로상담 자료로 활용할 수 있다는 점에서 연구의 의의가 있다. The Four Pillars of Destiny is moving beyond its traditional use for fortune―telling and widening the application to areas of counseling, psychology, career, and traditional oriental medicine. The purpose of this study is to secure the objectivity of personality types of Five Elements and use it as the reference for counseling the college students. The analysis of the difference between the personality types of Five Elements showed the significant result in academic self-efficacy. The result of multiple regression analysis of career path decision according to Five Elements showed the significant effect of all Five Elements on academic self-efficacy in learning and the significant effect of Water Element on career path decision by student in art and humanity. This study indicates that the Five Elements shown in Saju-Myungri of Destiny can be used as the counseling reference for the college students and youths.

        에듀테인먼트 활성화를 위한 대학생의 학과 선택요인 분석

        본 연구를 통해 첫째, 계열 특성에 따라 남녀의 성비 차이가 확연하게 차이가 나타났다. 학생들의 출신지역은 경기지역이 많았으며, 성격유형은 2번 조력가 유형이 많은 것으로 나타났다. 진로결정수준은 보건계열이 예체능계열보다 높은 것으로 나타났다. 둘째, 요인별 상관관계분석결과 계열에 대한 성별(.579, p=.001), 에니어그램성격유형(.185, p=.001), 진로결정수준(.212, p=.01) 순으로 상관관계가 높은 것으로 나타났으며, 출신지역은 통계적으로 상관관계가 없는 것으로 나타났다. 셋째, 계열(학과)선택에 영향을 미치는 요인분석결과 성별(β=.566, p=.000), 에니어그램성격유형(β=.122, p=.037), 진로결정수준(β=.114, p=.050)순으로 통계적으로 영향을 미치는 것으로 나타났다. 대학 신입생의 계열(학과)선택 요인에 관한 연구결과 계열과 성별, 에니어그램성격유형, 진로결정수준은 상관관계가 있으며, 계열선택에도 이들 요인들이 통계적으로 영향을 미치는 것으로 나타났다. 따라서 학생들을 선발하는 입시전략에 이들 요인을 적용한 정책반영이 필요하다. 더불어 학생 상담을 할 경우 학생들의 성격유형 특성을 고려 할 필요가 있으며, 학생들은 진로결정이 일정수준 결정된 상태임을 고려한 학생지도가 필요하다. 본 연구는 충청지역 한 대학을 상대로 한 연구로 앞으로 보다 다양한 지역의 신입생 또는 동일지역 여러 학교 학생들을 상대로 연구할 필요가 있으며, 추후 에듀테인먼트 기반한 교육내용 및 켄텐츠 개발과 활용에도 점진적인 연구를 진행할 예정이다. The purpose of this study is to investigate the factors which come into play when university freshmen decide their majors using Korean Enneagram of personality tests. The findings show that, firstly, with respect to personal attributes, there were obvious differences in male and female student ratios depending on the major. Many of the participants were from the area of Gyeong-gi. Personality types showed many of the students being the Type II ‘helper’, and career decision levels showed the students in medicine-related fields being higher than those in art & physical education-related fields. Secondly, majors were correlated the highest with gender, followed by Enneagram of personality types, and then career decision levels. Where the students were from showed no statistical correlation with deciding on a major. Thirdly, when it comes to choose a major, influential factors were found to be gender, Enneagram of personality types, and career decision levels (in that order), with statistical relevance. Therefore, since it can be concluded that a student’s personality type is influential in choosing a major, when it comes to select newly entering students during the application process, it seems necessary to implement the policy that incorporates these decision-making factors into consideration. Furthermore, during student consultations, students’ personality types need to be taken into account, and counselors should give advice bearing in mind that students’ choices when choosing a major have already been partially decided to a certain degree.
