        알긴산을 첨가한 수리미 혼합물의 응고에 미치는 칼슘의 영향

        In this study, the possibility of use as a cartridge for 3D printing was confirmed by adding calcium to the alginic acid-added surimi mixture. The Alaska pollack Gadus chalcogrammus surimi added with alginic acid was immersed in a calcium solution (1 M calcium carbonate, 1 M calcium chloride, 1 M calcium sulfate, and 0.1 M calcium lactate) to evaluate the physical properties, color differences, and sensory properties of Alaska pollack surimi according to calcium types. As the results, in the case of surimi paste to which 1 M calcium carbonate was added, physical properties were weaker than that of 1 M calcium chloride, but gelation was appropriate and sensory properties was excellent. Addition of 1 M calcium chloride has the best physical properties, but it has a problem of bitter taste. With the addition of 1 M calcium sulfate, it has low solubility and poor physical properties as well as poor elasticity and bad taste. Addition of 0.1 M calcium lactate has weak physical properties but good sensory properties. From these results, 1 M calcium chloride has the best physical properties, but there is a decisive problem in sensory properties, so 1 M calcium carbonate is most suitable for commercial use.

        참치(Katsuwonus pelamis) 안구유 첨가에 의한 식품 3D 프린팅용 수리미 혼합물의 품질 특성

        본 연구에서는 식품 3D 프린팅용 소재 개발을 위하여 참치안구유를 수리미 제조에 첨가하여 색도, 물성, 관능 특성을 대조군과 비교하였다. 색도 측정 결과 참치 안구유 첨가 시 제조 직후와 7일간 냉장 저장한 수리미 혼합물에서 첨가량이 증가함에 따라 L*값과 b*값은 증가하였고, a*값은 감소하는 유사한 경향을 나타내었는데, 7일간 저장한 수리미 혼합물에서 L*값이 훨씬 높게 증가하였다. 물성은 제조 직후의 경우 참치 안구유 첨가량이 증가할수록 경도가 낮아지고 점착성은 높아지는 경향을 나타내었는데, 7일간 냉장 저장한 수리미 혼합물 시료의 경우 경도와 검성이 대조구보다 높은 값을 나타냈다. 관능평가에서는 제조 직후에는 이미를 제외하고는 참치 안구유 첨가 유무에 따른 큰 차이가 없었으나 7일간 냉장 저장한 경우는 참치 안구유 1% 첨가군에서 panel들은 맛과 이미가 가장 좋다고 평가하였으며, 3% 첨가한 시료군에서 이미가 강하다고 평가되었다. 따라서 참치안구유 1% 첨가 시 백색도 개선 및 지방과 수분의 유화작용으로 부드러운 물성을 가진 3D 프린팅 수리미 페이스트 카트리지를 개발할 수 있다는 것을 확인하였다. In this study, we added tuna eyeball oil to golden threadfin bream (Nemipterus virgatus) surimi paste to control its physical properties for food 3D printing. We then conducted color value analysis, texture profile analysis, and sensory evaluation to confirm the effects of the addition of the tuna eyeball oil. We did the same test after 7 days of refrigeration as well. From these tests, we identified that tuna eyeball oil added to the surimi paste, stored for 7 days and subsequently heat-processed had increased hardness. In the color value analysis, the tuna eyeball oil increased the lightness of the surimi products regardless of the storage duration. However, adding over 3% of tuna eyeball oil gives a significant bitter taste to surimi. Thus, it was confirmed that when 1% of tuna eyeball oil was added, it was possible to develop a surimi paste cartridge for 3D printing with soft physical properties by improving whiteness and emulsifying fat and moisture.

        The Potassium to Magnesium Ratio Enables the Prediction of Internal Browning Disorder during Cold Storage of Asian Pears

        'Taichung No. 2' is a new Asian pear cultivar developed in Taiwan with low chilling requirement; however, is likely to develop internal browning disorder under low temperature storage conditions. We investigated the impact of storage time on flesh browning disorder in pears harvested from 22 orchards in 2010 and 2011, and analyzed the levels of nutrients in different fruit parts such as the peel, flesh, and core. Calcium and potassium contents were higher in the flesh and peel, respectively, of more severely browned fruits, whereas a lower magnesium content was recorded in the peel and core of these fruits. Nitrogen and potassium contents in the peel, and calcium content in the flesh were positively correlated with browning disorder severity. By contrast, the magnesium content in the core was negatively correlated with browning disorder severity. However, the nutrient contents in fruits varied between the two sampling years considered. Only the K/Mg ratio was an effective predictor of the browning disorder severity and showed a positive linear correlation in the two years. We recommend that the K/Mg ratio should be lower than 10 to avoid severe browning disorder in pears.

        2010 초반 시작된 국내의 소셜커머스가 창업 열풍을 넘어 기존 전자상거래 업계 전반에 걸쳐 확대되고 있다. 이에 본 논문은 최근 이슈가 되고 있는 소셜커머스의 특징을 체계적으로 알아보고, 소셜커머스의 특성이 신뢰와 구전의도에 어떤 영향을 미치는가를 알아보고자 한다. 분석결과 소셜커머스 특성 중에서 참여성, 가격성, 신속성이 신뢰도와 구전의도에 정의 영향을 미치는 것으로 검증되었으며, 소셜커머스 신뢰도가 구전의도에 정의 영향을 미치는 것으로 검증되었다. Less than six months ago, by social shopp.ing startup wipon, it sets off a great mass fervor in the area of social commerce and the scales of commerce’s industry begin to expand. This study is on the issue, through this study to look into the characters of social Commerce systematically, and what kind of effect will be impacted on the Credibility and Word-Of-Mouth Intention by this characters. Because SNS is one part of social media, in this study the characters of social Commerce is selected form between social media and e-commerce, and determine whether the characters are social commerce’s characters.

        조선 후기 민가 정원 쌍산재의 조영과 변화 과정

        쌍산재는 1800년대 중반에 조성된 민가 정원이다. 북으로 지리산 줄기를 등지고 남으로는 섬진강을 내려다보는, 전형적인 한국의 배산임수 형국을 이루는 터에 입지하고 있다. 조성된 이후 6대를 거쳐 오면서도 정원에 큰 변화 없이 조선 후기 민가 정원의 면모를 잘 간직하고 있는 정원이다. 본 연구는 현장 조사와 인터뷰, 작정자의 유고집과 편액, 주련의 내용 분석을 통해 역사 정원으로서 쌍산재의 변화하는 경관에 대해 고찰하였다. 완만한 구릉지에 위치한 쌍산재는 크게 내원과 외원으로 분류되며, 내원은 진입 공간, 주거 공간, 전이 공간, 후원 영역으로 구분된다. 후원은 서당채와 그 정원, 경암당 등으로 구성되며 외원인 사도저수지 영역으로 이어 진다. 쌍산재의 특징적인 식생 경관은 13,000㎡의 죽녹차밭과 잔디밭을 가로지르는 길 양쪽에 열식된 모란과 작약, 그리고 동백이나 사철나무의 휜 가지가 보여주는 액경, 마지막으로 탱자나무와 대나무로 이뤄진 생울타리를 꼽을 수 있다. 쌍산재는 지형과 원식생(原植生)을 고려한 공간 구성과 배치가 돋보인다. 주요 건축물은 후손들이 선대의 아호를 따 이름 지었는데, 벼슬길에 오르지 않고, 은일하며 후학을 양성하고자 했던 선대 조영자들의 철학관이 묻어난다. 오주석 선생이 세운 입석과 하얀 경계석은 쌍산재만의 독특한 정원 시설이다. 현 소유자가 가족들과 방문객의 편의를 위해 조성한 석상, 돌의자, 수영장 등 또한 특징적인 경관을 연출한다. 쌍산재는 거주자에게는 살림집이자 친우들과의 교류의 장, 수신(修身)과 은일(隱逸)의 장이었으며, 아이들에게는 배움의 장이었다면 현재는 여러 사람들이 힐링할 수 있는 민가 정원으로서 성격을 갖는다. 200여 년의 시간이 흐르는 동안 쌍산재의 내외원의 경관은 일부 변화를 겪었다. 이렇듯 변화하는 속성을 가진 역사 정원의 특성은 살아 있는 유산으로서 정원 고유의 속성으로 인식할 필요가 있다. 본 연구는 쌍산재를 조경학 관점에서 다룬 최초의 연구로서, 현존하는 조선조 민가 정원이 매우 적다는 점에서 앞으로 보다 심층적인 연구가 필요할 것으로 본다. 아울러 현재 점차 관심이 높아지고 있는 정원 관광 상품으로서 역사 정원의 가치와 효용을 가늠해 볼 여지도 있을 것으로 판단된다. Ssangsanjae was created in the mid-1800s, It is located at Jiri Mountain to the north and the Seomjin River to the south. This garden has not changed much even though it has passed through the sixth generation since its creation, so it still retains the features of a private garden in the late Joseon Dynasty. This study focused on the changing landscape of Ssangsanjae as a historical garden; through field surveys, interviews and analysis of builder's collection, boards and couplets. Ssangsanjae is largely classified into inner and outer gardens, and the inner is divided into an entry space, a residential space, and a backyard. The backyard consists of Seodangchae, it's garden, Gyeongamdang, and swimming pool, and is connected to the Sado Reservoir area, which is the outer garden. The distinct vegetation landscape of Ssangsanjae are a 13,000㎡ bamboo and green tea field, Peony(Paeonia suffruticosa Andr. and Paeonia lactiflora var. trichocarpa(Bunge) Stern) planted on both sides of the road that crosses the lawn, the view through a frame(額景) shown by the twisted branches of Camellia and Evergreen spindletree, and a fence made of Trifolia Orange(Poncirus trifoliata) and Bamboo. Ssangsanjae stands out for its spatial composition and arrangement in consideration of the topography and native vegetation. The main building was named by the descendants based on the predecessor's Aho(pseudonym), and it is the philosophical view of the predecessors who tried to cultivate the younger students without going up on the road. The standing stone and white boundary stone built by Mr. Oh Ju Seok are Ssangsanjae's unique gardening facilities. The stone chairs, and swimming pool which were created by the current owner for the convenience of families and visitors also make a distinctive landscape. Ssangsanjae, for residents, was a place for living, exchanging friendships, training himself and seculusion, for children was a place for learning, but now is ‘the private garden’ where many people can heal themselves. Over the 200 years, the landscape of Ssangsanjae's inner and outer gardens experienced large and small changes. As such, it is necessary to recognize the historical gardens with changing properties as a living heritage. This study is significant in that, as the first study to approach Ssangsanjae in the view of landscape research, it provides basic data on Ssangsanjae as a destination of garden tourism.

      • A Phenome-Based Functional Analysis of Transcription Factors in the Cereal Head Blight Fungus, <i>Fusarium graminearum</i>

        <▼1><P><I>Fusarium graminearum</I> is an important plant pathogen that causes head blight of major cereal crops. The fungus produces mycotoxins that are harmful to animal and human. In this study, a systematic analysis of 17 phenotypes of the mutants in 657 <I>Fusarium graminearum</I> genes encoding putative transcription factors (TFs) resulted in a database of over 11,000 phenotypes (phenome). This database provides comprehensive insights into how this cereal pathogen of global significance regulates traits important for growth, development, stress response, pathogenesis, and toxin production and how transcriptional regulations of these traits are interconnected. In-depth analysis of TFs involved in sexual development revealed that mutations causing defects in perithecia development frequently affect multiple other phenotypes, and the TFs associated with sexual development tend to be highly conserved in the fungal kingdom. Besides providing many new insights into understanding the function of <I>F. graminearum</I> TFs, this mutant library and phenome will be a valuable resource for characterizing the gene expression network in this fungus and serve as a reference for studying how different fungi have evolved to control various cellular processes at the transcriptional level.</P></▼1><▼2><P><B>Author Summary</B></P><P>Large collections of mutant lines allow for identification of gene functions. Here we constructed a mutant library of 657 putative transcription factors (TFs) through homologous recombination in the head blight fungus, <I>Fusarium graminearum</I>, providing a resource for understanding gene regulation in fungus. By screening these mutants in 17 phenotypic categories, we constructed a dataset of over 11,000 phenotypes. This study provides new insight into understanding multiple phenotypes caused by single TF as well as regulation of gene expression at the transcription level in <I>F. graminearum</I>. Furthermore, our TF mutant library will be a valuable resource for fungal studies through the distribution of mutants and easy access to our phenotypic and genetic data.</P></▼2>
