The polyphenol quercetin found in Onions has been shown to improve inflammatory bowel disease (IBD). Quercetin increased in fermented onions. We investigated the effect of fermented onion on dextran sodium sulfate-induced inflammatory bowel disease (IBD) in rats. Rats were divided into six groups and treated orally: Control (saline, 3 ml/days), PC (commercial prebiotics, positive control, 440 mg/kg rat), LO (low dose fermented onion, 10 g/kg rat), HO (high dose fermented onion, 20 g/kg rat), and FO (fresh onion solution, 10 g/kg rat) for 3 weeks where after two weeks rats were given either normal drinking water (Control) or drinking water containing 0.2% DSS (DSS, PC, LO, HO, FO) for 5 days, followed by two days of regular water. The short-chain fatty acids (SCFA) results, colonic histomorphology, host immunity (IgA, IgG), oxidative stress, and biochemical analysis results showed improved IBD condition induced by DSS treatment in fermented onion groups (LO and HO). These results suggest that consumption of a fermented onion, especially in high doses, can ameliorate IBD symptoms.
Effects of Fermented Glasswort on Aging Gut Health

Salicornia herbacea (glasswort), contains various phytochemicals, dietary fiber, and higher mineral content. Many phytochemicals in plants are present as glycosides which are not absorbed through intestine. This study aimed to investigate the effects of fermented glasswort on intestinal function. Rats were divided into five groups and given different oral treatments: Control and CD (saline), PC (fructooligosaccharide, positive control, 350 mg/kg rat), LGW (low dose fermented glasswort, 0.01 mg/kg rat), and HGW (high dose fermented glasswort, 0.02 mg/kg rat). Except for the control group, all groups were given an intraperitoneal injection of D-galactose (150 mg/kg rat). To make aging model analyze of colonic content and tissue showed that LGW and HGW groups have lower oxidative stress and lower expression of inflammatory response factors, and higher SCFAs contents, the number of goblets cells and mucous layer thickness increased in LGW and HGW groups compared to those in the CD group. These findings suggest that glasswort may help to enhance gut health in the elderly.
