        Synthesis of α-linolenic acid-rich triacylglycerol using a newly prepared immobilized lipase

        <P><B>Abstract</B></P> <P>An α-linolenic acid (ALA)-rich triacylglycerol (TAG) was synthesized from an ALA-rich fatty acid (FA) from perilla oil and glycerol, using a newly prepared immobilized lipase under vacuum. The ALA-rich FA (purity >90wt%) used as the substrate was prepared by urea complexation from perilla oil FAs. Liquid Lipozyme TL 100L lipase from <I>Thermomyces lanuginosus</I> was used for immobilization. Nine different hydrophilic and hydrophobic carriers for immobilization were tested, and Duolite A568, which is a hydrophilic resin, was selected as the best carrier. This immobilized lipase was used to synthesize TAG by direct esterification under vacuum. The parameters investigated were temperature, enzyme loading, and vacuum level. The optimum reaction conditions were a temperature of 60°C, an enzyme loading of 15% (based on the total weight of the substrate), and a vacuum of 0.7kPa, respectively. The maximum conversion to TAG of ca. 88wt% was obtained in 12h under the optimum conditions.</P> <P><B>Highlights</B></P> <P> <UL> <LI> α-Linolenic acid-rich triacylglycerol was successfully synthesized. </LI> <LI> A newly immobilized lipase was employed as the biocatalyst. </LI> <LI> Enzyme employed for immobilization was liquid Lipozyme TL 100L. </LI> <LI> Duolite A568 was used as carrier. </LI> </UL> </P>

      • Production of stearidonic acid-rich triacylglycerol via a two-step enzymatic esterification

        <P><B>Abstract</B></P> <P>The aim of this study was to synthesize stearidonic acid (SDA)-rich triacylglycerol (TAG) via a two-step lipase-catalyzed esterification under vacuum. SDA-rich fatty acid, which was prepared from echium oil via <I>Candida rugosa</I> lipase-catalyzed selective esterification, was used as the substrate. Two different immobilized lipases, Novozym 435 from <I>Candida antarctica</I> and Lipozyme TL IM from <I>Thermomyces lanuginosus</I>, were employed for the synthesis of SDA-rich TAG. In the first step, Novozym 435-catalyzed esterification of the SDA-rich fatty acid with glycerol was carried out for 2 h. In the second step, Lipozyme TL IM-catalyzed esterification of the reaction mixture from the first step was performed for an additional 10 h. The optimal reaction conditions for the second step were a temperature of 65 °C, an enzyme loading of 20%, and a vacuum of 0.7 kPa.         Effects of Monoacylglycerols on the Oil Oxidation of Acidic Water/ Perilla Oil Emulsion under Light in the Presence of Chlorophyll

        Monoacylglycerol (MAG) effects on the oil photooxidation of an emulsion containing chlorophyll were studied. The emulsion consisted of equal weights of hexaneextracted perilla oil and 0.5% acetic acid, and 4 ppm chlorophyll b and MAG at 0, 1, or 1.5% were added. The oxidation was performed under 1,700 lx light at 25oC for 48 h. Singlet oxygen was involved in the oil oxidation of the emulsion containing chlorophyll under light. MAG protected chlorophyll and polyphenol compounds from degradation during the oxidation of the emulsion under light. MAG significantly decreased and decelerated headspace oxygen consumption and hydroperoxide production in the emulsion, and thus acted as antioxidant in photooxidation of the acidic water/perilla oil emulsion containing chlorophyll. Antioxidant activity of MAG in the photooxidation of the emulsion could be due to combined results of increased retention of polyphenols and decreased oxygen diffusion by forming a physical barrier.

        한국 거주 고려인동포 청소년의 생활실태에 관한 탐색적 연구 - 광주광역시 고려인마을을 중심으로 -

        현재 한국 거주 고려인동포 사회의 가장 큰 이슈는 자녀들의 법적지위이다. 재외동포법 상 고려인동포는 3세까지만 인정이 되며, 4세대 이후부터는 외국인으로서의 지위를 갖는다. 이러한 불안정한 체류자격으로 인해 고려인동포 청소년들은 한국사회에 적응하는데 많은 어려움을 겪고 있다. 고려인동포 청소년들의 안정적인 한국사회 정착을 위해서는 그들의 삶의 실태를 파악하고 올바른 법적·제도적 장치를 마련하여 실효성을 확보할 필요가 있다. 따라서 이 연구에서는 광주광역시 지역에 거주하고 있는 고려인동포 청소년들의 가정생활, 학교생활, 지역사회생활, 언어생활을 중심으로 생활실태를 분석하였다. 분석결과, 고려인동포 청소년들은 생활 전반에서 적응의 어려움을 겪고 있는 것으로 나타났으며, 이러한 어려움은 부모 및 가족과의 관계, 언어, 문화적 차이가 가장 큰 요인이다. 반면, 부모와의 긴밀한 관계, 한국어 실력, 지역사회 활동 및 지원 등은 어려움을 완화시키는 것으로 나타났다. 이를 통해 정책적 시사점을 도출하면 다음과 같다. 첫째, 부모들의 한국어 교육을 강화하는 것이다. 둘째, 한국 청소년과의 지속적인 교류를 위한 장을 마련하고 상호 문화 이해를 위한 프로그램을 개발하는 것이다. 셋째, 진로를 계획하고 준비할 수 있도록 정보를 제공하고, 교육을 실시하는 것이다. 끝으로 가장 근본적인 것으로 재외동포법 개정, 귀환동포법 제정 등 법·제도적 개선이 이루어질 필요가 있다. The biggest issue in the Koryeoin who are living in Korea is their children’s legal status. Under the Act on the Immigration and Legal Status of Overseas Koreans, Koryeoins are recognized only until the third generation, and after the fourth generation, they will be foreigners. Due to this unstable status of residence, it is difficult for youths of Koryeoin to adjust to Korean society. In order for youths of Koryeoin to stable settle in Korean society, it is necessary to understand the current living conditions and prepare proper legal and institutional mechanisms to ensure their effectiveness. Therefore, this study analyzed the living conditions of youths of Koryeoin living in Gwangju Metropolitan City focusing on family life, school life, community life, and language life. As a result of the analysis, it was found that the youths of Koryeoin were suffering from difficulties in adaptation throughout their lives, and the main factors of these difficulties are the lack of parents and family relationship, language and culture gap. On the other hand, close relationship with parents, Korean language ability, community activities and support programs were found to alleviate the difficulties. Throughout these results, policy implications are as follows. First, it is necessary to strengthen the Korean language education of parents. Second, it should provide opportunities and programs for communicating and understanding between Korean youths and youths of Koryeoin. Third, information and education should be provided so that youths of Koryeoin can plan and prepare for their careers. Finally, it is necessary to improve legal and institutional such as amendment of Overseas Korean Act and enactment of law on returning Overseas Korean.

        자폐성장애 자녀의 식생활에 대한 어머니들의 인식과 경험

        자폐성장애인의 식행동과 영양섭취는 본인과 가족의 신체적·정신적 건강, 가족 상호작용, 대인관계 등 삶의 질 전반에 영향을 미치는 주요 요인이다. 본 연구에서는 자폐성장애 자녀의 식생활을 둘러싼 어머니의 인식과 경험을 알아보았다. 이를 위해 식행동 및 균형 잡힌 영양섭취 관련 어려움을 보이는 자폐성장애 자녀를 양육하는 10명의 어머니를 대상으로 면담을 실시하였다. 면담 자료를 분석한 결과, 자폐성장애 자녀의 식생활에 대한 어머니들의 인식과 경험은 자폐성장애 자녀의 식생활 특징, 자폐성장애 자녀와 가족이 서로에게 미치는 영향, 식생활 개선을 위한 노력, 식생활 개선을 위한 지원요구의 네 가지 주제로 범주화되었다. 본 연구는 자폐성장애 자녀의 식생활을 가장 가까이서 접하는 어머니들의 경험과 인식을 직접 수집하여 분석함으로써 자폐성장애인의 식생활에 대한 지식 기반을 구체적이고 사실적인 사례를 통해 확인하고 확장했다는 점과 특수교육학 및 식품영양학 연구자들이 융합하여 자료수집과 분석을 실시하고 후속연구를 위한 주제를 발굴했다는 점에 그 의의가 있다. Eating behaviors and nutritional intake of individuals with Autism Spectrum Disorder (ASD) are major factors affecting the overall quality of life, including physical and mental health, family interaction, and interpersonal relationships. This study investigates the perceptions and experiences of the mothers who raised children with ASD, regarding their children’s dietary life. Ten mothers whose children with ASD experienced issues related to eating behaviors and balanced nutritional intake were interviewed. Four themes emerged from data analyses: eating characteristics of children with ASD, reciprocal effects between children with ASD and family members, efforts to improve dietary life, and support needs to improve dietary life. This study confirmed and expanded the knowledge base of dietary life of individuals with ASD based on specific and realistic cases through examining the experiences and perceptions of mothers who work very closely with children with ASD. This study is also significant in that data collection and analyses as well as development of future research topics were conducted through collaboration between special education professionals and nutritional science professionals.
