      • Consumer Recognition Survey for Establishing the Reasonable Expiration Dates of Health Functional Foods

        This study investigated consumers` recognition on shelf life of health functional foods to set up their rational expiration date. For this study 107 male and female adults aged 20 to 59 years were randomly selected as major consumers of health functional foods. And their data were analyzed with SPSS 17.0. The questionnaire included questions asking a consumer`s recognition on the shelf life of health functional foods and how to treat health function food passing its shelf life. In this study, the consumers were found to pay attentions considerably to the shelf life. But most of them did not know an accurate meaning of the shelf life of health functional food and mistook it for expiry date. In addition, the consumers doubted safety of health functional foods passing the shelf life. Therefore, education for consumers about an accurate meaning of the shelf life was needed. The results of this study were considered to be helpful to set up a reasonable expiration date for health functional food.

        1997~2001년 제주도 고산지역 PM2.5 미세분진의 오염 특성

        PM_(2.5) fine particles have been collected at the Gosan measurement station in Jeju Island, and the major water-soluble components have been analyzed in order to investigate the aerosol compositions and pollution characteristics. The mean concentrations of the components were in the order of SO₄²^(-) > NH₄^(-) > NO₃^(-) >Na¹ > K > Cl^(-) > Ca²^(+) > Mg²^(+). The major components were SO₄²^(-), NH₄^(-) and NO₃^(-), whose compositions were 58%, 18% and 10% of the total ions, respectively. Most of the components showed higher concentrations in spring season, and especially Ca²^(+), NO₃^(-) and SO₄²^(-) concentrations were increased 2.8, 1.9 and 1.2 times higher than the annual mean concentrations. The most parts of SO₄²^(-) and NH₄^(-) were distributed in the particles below 2.1μm size, but the Ca²^(+), Na^(+) and Cl^(-) showed relatively higher concentrations in coarse particles. Based on the factor analysis, the PM_(2.5) line particles were considered to be largely influenced by anthropogenic sources, and followed by sea salt and soil sources. In the variations of concentrations as a function of wind direction. Most components have shown higher concentrations natably as the northwesterly prevails.

      • 당뇨병 백서의 간세포에서 Glucokinase 활성도 및 유전자 발현에 대한 인슐린의 영향

        목적 당대사의 조절 상태에 따른 생체 변화를 분자 수준에서 이해하고자 식이 조건을 달리한 정상 백서와 화학적으로 유도된 당뇨병 백서의 간조직에서 혈당수준과 인슐린치료 정도에 따라 나타나는 글루코키나제 활성도 및 유전자 발현을 분석하였다. 방법 스트렙토조토신 정맥투여 후 당뇨병의 유발을 확인하고, 인슐린을 1일 3회 3일간 복강내로 투여하여 상태를 안정시킨 후, 인슐린 투여군은 인슐린 투여 6시간이내에 그리고 인슐린 비투여군은 24시간 후 단두하여 채혈하고 복강을 열어 간조직을 채취하였다. 채취한 간조직에서 글루코키나제 활성도는 인산화된 포도당에서 NADH의 형성을 형광분광계로 측정하였으며, 글루코키나제 유전자 mRNA발현은 Northern 분석법을 이용하였다. 성적 정상 백서에서 공복상태와 식이를 섭취한 경우에 간조직의 글루코키나제 효소의 활성은 차이가 없었으나, 글루코키나제 유전자 mRNA 발현은 증가되었다. 당뇨병이 유발된 백서의 간조직에서 글루코키나제 효소의 활성 및 글루코키나제 유전자의 mRNA 발현은 정상 백서에 비하여 낮았다. 인슐린 투쳐 후 글루코키나제 효소의 활성 및 글루코키나제 유전자의 mRNA 발현이 증가되었고, 특히 혈당이 정상화된 경우에서 글루코키나제 유전자의 mRNA 발현이 증가도었다. 결론 인슐린에 의한 간조직에서 글루코키나제 효소의 활성 및 글루코키나제 유전자의 mRNA을 증가를 볼수 있었다. 당뇨병 백서에서 인슐린 투여 후에 혈당조절이 안된 경우 간조직의 글루코키나제 유전자의 mRNA 발현이 증가가 없는 것으로 보아 글루코키나제 mRNA의 발현에는 인슐린 이외의 다른 요소가 관여할 것으로 생각된다. The liver-specific hexokinase isoenzyme, referred to as glucokinase, is thought to play a key reglulatory role in hepatic glucose metabolism. The glucokinase gene is, therefore, of interest both because of its tissue-specific expression and because of the several regulatory processes that can be analyzed. The level of hepatic glucokinase activity appears to be determined essentially by regulation of the rate of enzyme synthesis, with insulin playing a leading role as an inducer. We investigated the role of insulin for the induction of glucokinase in the liver of diabetic rats. Experimental diabetes was induced by injection of streptozotocin 7 days before the experiment. Regular insulin was given by three days intraperitoneal injection at 8-h interval. The glucokinase mRNA in the liver was estimated by Nothern blot assay, as well as by fluorometric enzyme activity assay. Glucokinase activity was not reduced in the liver of normal fasting rats as compared to normal fed rats. And glucokinase activity was reduced in the liver of diabetic rats as compared to normal rats. In diabetic rats treated with insulin, glucokinase enzyme activity were increased. But glucokinase mRNA expression was only increased in normoglycemic diabetic rat with treated with insulin as compared to hyperglycemic rat. These data indicate that insulin stimulates hepatic glucokinase enzyme activity and mRNA expression. But other hormonal or metabolic factors may be contribute to regulation of glucokinase mRNA expression.

      • 水源汚染에 따른 高度 淨化處理 시스템 開發에 관한 硏究 : 洛東江 水源을 중심으로 with regard to water resourse of Nakdong river

        The experimental results of pilot-scale plant of water treatment using the water resource of Nakdong river are summarized as follows. 1. At flow rate of 100-120 m/day, Biofilm filtration process as pretreatment process showed that the removal rates of NH₄-N and ABS ranged from 90 to 100 percent and from 50 to 70 percent, respectively. 2. For flocculation process, alum dosage in reducing turbidity were more effective to be decided by K value obtained from GCT than by Jar-test. 3. Dual-layer filter, in case of filtration time, was longer of 2 times as 50 hours tan that of single-layer filter, as well as to produce good quality of treated water compared to the single-layer filter.

        당류 첨가가 김치 성분 및 관능검사에 미치는 영향

        김치의 단맛을 내기 위하여 일반 제조에 이용되고있는 sucros 대신 xtevioside나 sorbitol과 같이 당의 종류를 달리하여 제조한 김치의 이화학적 성분, 미생물의 변화 및 관능적 특성에 미치는 영향을 조사하였다. pH와 적정산도는 stevioside와 sorbitol이 첨가된 처리구가 sucrose가 첨가된 처리구보다 산의 생성 억제 효과가 있는 것으로 나타났다. 총균수의 경우 전반적으로 당의 종류와 저장온도와는 관계없이 미생물의 생육 억제효과가 없는 것으로 나타났으나 젖산균의 경우 10℃에서는 균의 생육 억제 효과는 없는 반면 5℃에 저장한 김치의 경우 stevioside와 sorbitol이첨가된 김치는 젖산균의 생육에 억제효과가 있는 것으로 나타났다. 관능검사를 실시한 결과 stevioside 첨가된 김치 sucrose 첨가구에 비하여 기호도에서는전적으로 우수한 것으로 나타났다. Effects of sugars addition in Kimchi preparation on physiochemical characteristics, sensory evaluation of Kimchi were investigated. Sugar sources added were sucrose, stevioside and sorbitol. Changes of pH and titratable acidity in Kimchi with addition of stevioside or sorbitol were similar to ones of control Kimchi with addition of sucrose during storage at 10℃, while ones of Kimchi with addition of stevioside or sorbitol were different from control during storage at 5℃, Comparison with control Kinich, addition of stevioside or sorbitol was inhibited acid production in Kimchi during storage at 5℃. Total number of viable cells were not significantly different among those of Kimchi samples during storage at 5 and l0℃ The number of lactic acid bacteria were not significantly different among those of Kimchi samples during storage at 10℃, but ones of Kimchi with addition of stevioside or sorbitol were less than those of Kimchi with addition of sucrose during storage at 5℃. Among sweetness, taste, flavor, color, texture and overall acceptability, the results of sensory evaluation except sweetness were showed that Kimchi added with stevioside or sorbitol was superior to ones added with sucrose.

        This study was conducted for national participants in leisure sports convention events, the strong opinion leaders in the leisure sports tourism market. They have specialized and high-level of insights into the leisure sports tourism market. and it could give very meaningful suggestions to identify the effect of Taekwondo park selection criterion on their potential revisit. The results of this study were found as follows: It was found that the male group thought more importantly of the economic efficiency and ease of access than the female counterparts in terms of the criterion for selection of the Taekwondo park. Second, it was found that the ground of high school graduates thought importantly of beautiful natural environment and scenery, while the well-educated group of college graduate school and more than graduate school thought importantly of the culture and history of Taekwondo and economic efficiency of development. Third, it was found that the age group of 21-30 years old attached more importance to the cultural and historical background of Taekwondon, its growability into world-class tourist attraction, economic efficiency of development than the age group of less than 20 years old. Fifth, it was found that such Taekwondo park selection criteria as the cultural and historical background of Taekwondo(differentiated history, native culture), its growability into world-class tourist attraction(specified image and high name recognition, economic efficiency of development(developable image, tourism industry infrastructure), ease of access(convenience of access to the traffic network from home and abroad, full local transportation(road, parking lots and the like) had a significant effect on the potential intention to revisit). The Korean Taekwondo park should highlight the phase of the country of its origin and grow into the world-class attraction for traditional martial arts. Only the region that can maximize the direct and indirect history and culture related to Taekwond can maximize the consumption value needs of quality tourists at home and abroad and globalize the prestigious and hihg-profile traditional Korean culture.

        감자 추출물의 아질산염 소거 및 전자공여 작용

        본 연구는 감자의 활용도 증진을 목적으로 수미와 대서 감자 2품종을 속과 껍질 부위로 나누어 열처리 후 열풍건조 분말을 제조하였고, 70% 아세톤 추출물 을 얻어 페놀성 화합물의 함량과 조성을 조사하고 아질산염 소거 및 전자공여작용 등 기능적 특성을 검토하였다. 분말의 색도는 속부위에서 열처리시 비열처리에 비해 백색도, 황색도 값이 높았고 특히 수미 감자의 색도 개선에 열처리는 효과가 있었다. 수미가 대서보다 총폴리페놀, 클로로겐산 함량이 높은 것으로 나타났으며 열처리로 증가하는 것으로 나타났다. 그러나 플라보노이드는 부위중 껍질과는 달리 속에서 거의 확인되지 않았다. 따라서 생 감자를 전처리시 스팀으로 열처리하더라도 페놀성 화합물의 함량은 감소되지 않았다. 아질산염 소거와 전자공여 작용은 1㎜ 두께의 껍질부위에서 높게 나타났다. 이상의 결과는 감자 품종에 따른 부위별 변색 정도, 페놀성 화합물 함량 등에 차이가 있으며, 부위중 껍질이 속보다 폴리페놀 함량이 높았다. 따라서 스팀으로 5분간 열처리 후 열풍건조한 감자로부터 얻은 껍질 추출물은 아질산염소거와 전자공여 작용 등 기능적 특성이 우수한 것으로 나타났다. This study was conducted to investigate functional properties of 70% acetone extract in different parts of two potato varieties. 'Superior' and 'Atlantic' potato were processed by following method. Potatoes are washed, peeled, sliced and steamed before hot air drying for flesh and peel powder. Hunter's L and b values of flesh powder from blanched 'Superior' potato were higher than flesh powder from fresh 'Superior' potato. Discoloration of 'Superior' potato was inhibited by steam blanching. Contents of total polyphenol and chlorogenic acid in the 70% acetone extract of 'Superior' potato were higher than those of 'Atlantic' potato, paticularly in the blanched flesh and peel. But flavonoid was not detected in flesh extract. The phenolic concentration was not decreased by the heat treatment. The nitrite scavenging and electron donating ability was greatest at the tuber peel, including the skin and cortex tissue 1mm beneath the skin. From the above results, browning reaction and polyphenol contents in different parts of potato slices were dependent on cutivars. Peels contained more polyphenols than those from the flesh. The results indicate that potato peel extract of steam blanched plus hot air dried potato tuber showed the effectiveness as a natural nitrite scavenger and antioxidant.
