      • 식육처리기구 및 신선돈육의 위생적 처리방법에 관한 연구

        식육처리시 사용되는 실내의 공기, 도마, 칼, 장갑, 육절기 등의 위생적인 살균방법 및 지육, 정육을 가공용수(온수, 냉수), 알콜(70%), 유기산(acetic acid, citric acid, lactic acid, formic acid, chloride)을 처리하여 식육의 초기오염도를 조사한 결과는 다음과 같다. 70% 알콜 및 온수를 이용하여 식육처리기구의 오염원을 제거하기 위한 효과는 두 방법 모두 처리구가 대조구에 비하여 우수한 것으로 나타났으며, 온수와 70% 알콜의 처리방법은 온수가 뛰어났다(P<0.05). 지육의 처리는 온수처리를 통하여 오염원을 최소화할 수 있었다. 정육의 처리는 70% 알콜 처리로 총생균, 대장균의 증식을 억제할수 있었다. 유기산 처리를 통한 돈육의 오염원 최소화는 전체 처리구 모두 대조구에 비하여 우수한 경향을 나타내었으며, 이중 젖산균이 가장 우수한 것으로 나타났다. 유기산 처리시 육색은 차이를 나타내지 않았으며, 유기산 처리 후 관능검사에서는 생육, 가열육의 경우 모두가 차이를 발견할 수 없었다. 이상 본실험에서 온수, 알콜을 통한 소독과 유기산을 통한 정육의 처리는 오염최소화를 시킬 수 있는 방안으로 나타났다. This study was determine the effects of sanitary treatments that air conditioning, kitchen board, knife, glove, slicer, carcass and pork meat were treated water(hot and cold), alcohol(70%), organic acid(acetic acid ; AA, citric acid : CA, lactic acid : LA, formic acid ; FA) and chloride(200ppm). This study results obtained were summarized as follows ; Treatments of water and 70% alcohol were superior to control in the effect of removing contamination of carcass equipments. Hot water treatment was better than the other treatment(P<0.05). Carcass treatment gives the lowest contamination for Hot water. Pork meat was repressed all total plate count and E. coli by 70% alcohol. Pork meat treatment treated organic acid for the lowest contamination was better than control. Lactic acid was remarkable superior. Change o meat color by organic acid treatment did not take. Sensory evaluation by treatment of organic acid did not show difference in both of raw and cooked meat. Treatment of pork meat by disinfection of hot water, alcohol and organic acid was the way for the least contamination.

      • 대두 식이섬유를 이용한 특수 영양식품의 유효성 평가

        In the development of enteral foods for the patients with diarrhea, soybean hull, by-products of soybean processing, was used to prepare crude dietary fiber extracts (soybean hull fiber, SHF). Total dietary fiber content of SHF is 85% and their composition are 86.1% cellulose, 8.1% hemi-cellulose, and 4.7% lignin. The effects of SHF on the prevention of diarrhea were studied in animal. Spraque-Dawley (SD) rats were fed AIN93G diets containing 5% dietary fiber for 3days simultaneously inducing diarrhea with the phenolphthalein Mg citrate solution. On day 4, feces were collected at different time point. Dietary fibers used for the animal study were SHF, soybean cotyledon fiber (SCF), psyllium husk fiber (PHF), and chicory fiber (CF). α-cellulose was used as a control. Body weight gain, calorie consumed and food efficiency ratio among the experimental groups were not different. However, water content in the feces of SHF group was significantly lower by 10%, compared with other groups at 24hrs. time point. This effect was even greater in the feces collected later than 24 hrs. time point. SHF seems to have a greater effects on slow the symptom of diarrhea. Based on the previous results, enteral food enriched with SHF were prepared and its effect was compared with other commercially available products from domestic or imported ones. Weight changes among experimental groups were not different, but the moisture content of feces consumed SHF enriched products were lower than that of other products. Approximately 10% decrease in water content was observed from feces collected at 24 hr time point. According to the sensory evaluation, overall acceptability of the enteral food enriched with SHF was 3.24 out of 5 indicating that taste of this product is acceptable. 대두가공에 부산물로부터 얻어지는 대두 식이섬유를 이용하여 설사환자를 위한 경장 영양 식이를 개발하기 위하여 쥐에게 투여한 후 체중증가율, 변의 수분감소, 사료효율 등을 측정하여 다음과 같은 결과를 얻었다. 대두피 중의 식이섬유함량은 85% 이었고 cellulose 가장 높았으며 hemi-cellulose, lignin의 순 이었다. 대두 식이섬유가 대조구에 비하여 체중 감소율은 약간 낮았고 사료효율은 약간 높았다. 대두 식이섬유를 섭취시킨 쥐가 치커리 식이섬유, 차전자 피에 비하여 24시간 후의 변의 수분함량은 10% 낮았다. 대두 식이섬유를 첨가한 경장영양식이로 사육한 쥐의 체중변화와 사료효율은 3제품 간에 차이가 없었으나 다른 하나의제품은 대조군에 비하여 낮았다. 대두 식이섬유를 이용하여 가공한 경장영양식이 다른 상업용 제품에 비하여 실험쥐의 변 수분함량은 10% 이상 낮았다.

        국내 트리티케일 품종의 품질 및 이화학적 특성

        본 연구에서는 국내산 트리티케일 3품종(신영, 조성, 신조성)의 이화학적 특성을 조사하고 이를 국내 품종의 밀(백강, 새금강) 및 호밀(씨드그린)과 비교하였다. 트리티케일은 7.77-9.69%의 단백질을 함유하여 밀과 호밀의 단백질 함량보다 다소 낮았지만, 전분함량이 높아(81.57-85.25%) 에너지원 또는 전분 기반 소재에 활용도가 높을 것으로 생각된다. 신영과 조성의 탄산나트륨 보유능은 각각 72.5와 82.0%로 이는 새금강과 백강과 비슷한 수준이었으며 신조성은 97.6%로 트리티케일 중 제분에 의한 전분 손상이 가장 많이 발생한 것을 알 수 있다. 50% 자당 보유능에서는 조성과 신조성은 신영보다 펜토산에 의한 수화 능력이 높았지만, 트리티케일의 젖산 보유능은 밀과 호밀보다 현저하게 낮아 글루텐 형성에는 취약함을 알 수 있다. 이는 wet gluten의 결과에서 트리티케일의 글루텐형성능이 밀가루의 30-50% 수준이었던 것과도 상응하며 트리티케일 중 신조성이 다른 품종보다 높은 GPI와 wet gluten을 나타내 양적 및 질적으로 가공에 유리할 것으로 생각된다. 조성과 신영은 peak viscosity가 200cp 미만으로 빵용 밀인 백강보다 낮은 반면, 신조성은 백강과 새금강의 중간 수준의 점도를 나타내었고 최종적으로 조성과 신영은 저점도의 페이스트 특성을 보였지만 신조성의 경우 다른 두 품종보다 5배 높은 점도를 가지고 있었다. 트리티케일은 낮은 호화 피크와 호화 엔탈피 값이 관측되었다. α-amylase에 의한 전분 가수분해 특성에서 트리티케일은 밀과 호밀보다 초기 20분 동안 가수분해가 더 많이 진행되었으며 120분이 경과하였을 때 밀과 호밀은 38.2-42.2% 수준인 반면 트리티케일은 47% 이상으로 가수분해 정도가 현저히 높았다. 국내산 트리티케일 품종과 특성에 대한 기초연구와 이를 기반으로 한 가공 연구를 다각적으로 수행한다면 국내 식량작물로부터 새로운 식품소재 창출과 더불어 식량안보문제 해결에도 기여할 수 있을 것이라 생각된다. This study investigated the physicochemical properties of domestic triticale flour and compared it with domestic wheat and rye flour. The triticale flour had a low protein content (7.7-9.7%) but a high total starch and amylose content compared to that of the wheat and rye flour. Shinjoseong showed the highest solvent retention capacity for four solutions (water, Na₂CO₃, lactic acid, and sucrose) among the triticale flour. The wet gluten content of triticale ranged from 13.6- 20.4%, which is lower than that of wheat flour (35.7-39.0%). Joseong showed low viscosity behavior in rapid visco analyzer (RVA), and Shinjoseong showed ranges between Baekkang and Saekeumkang flour. The differential scanning calorimetry (DSC) results showed that Shinyoung had a higher gelatinization temperature and enthalpy compared to that of the other triticale flours. All the triticale flour was hydrolyzed over 50% by α-amylase solution for 120 min, which is higher than wheat and rye flour. This study is expected to provide basic information regarding domestic triticale for the food industry and expand its utility by identifying the physicochemical properties.

        Mutations in the gyrA and parC genes in ciprofloxacin-resistant clinical isolates of Acinetobacter baumannii in Korea.

        <P>Mutation with Ser-83-->Leu in gyrA gene was associated with the principal mutation for ciprofloxacin resistance in clinical isolates of Acinetobacter baumannii. Double mutation, Ser-83-->Leu in gyrA gene and Ser-80-->Leu in parC gene, was the most frequently detected among ciprofloxacin-resistant isolates. A novel mutation with Ser-80-->Trp in parC gene, in addition to mutation in gyrA gene, was associated with a high-level ciprofloxacin resistance. These results suggested that the presence of an additional mutation in the parC gene contributed to a higher-level of ciprofloxacin resistance than a single mutation in the gyrA gene (geometric mean MICs of ciprofloxacin, 44.1 versus 16 microg/ml, P < 0.05).</P>

        Alterations in the GyrA and GyrB subunits of topoisomerase II and the ParC and ParE subunits of topoisomerase IV in ciprofloxacin-resistant clinical isolates of <i>Pseudomonas aeruginosa</i>

        <P><B>Abstract</B></P><P>The presence of fluoroquinolone resistance-associated alterations in topoisomerase II and IV were investigated for 103 <I>nfxC</I>-like type <I>Pseudomonas aeruginosa</I> isolates. The most <I>nfxC</I>-like type isolates (98.1%) possessed the substitution of Ile for Thr-83 in GyrA. A single alteration in GyrA (Thr-83→Ile) was the most frequently detected and the next common alteration was two alterations with Thr-83→Ile in GyrA and Ser-87→Leu in ParC. A novel alteration at position Glin-106 of GyrA, which was suggested to be responsible for fluoroquinolone resistance, was identified. Our study revealed that the alterations in GyrB (Glu-468→Asp) and in ParE (Asp-419→Asn or Glu-459→Asp) play a complementary role in the acquisition of resistance to fluoroquinolone. There was a correlation between the ciprofloxacin MIC and the number of resistance-associated alterations in GyrA, GyrB, ParC and ParE of <I>P. aeruginosa</I> isolates.</P>

        In conventional method of supporting soil shuttering wall during excavation a system of struts and walls to provide cross-lot bracing is common in trench excavations and other excavations of limited width. This method, however, becomes difficult and costly to be adopted for large excavations since heavily braced structural systems are required. Other expensive and unsafe situations are expected when temporary struts must be removed for the construction of underground structures. This paper introduces innovative strut systems which can be used as permanent underground structures after its role as brace system to resist earth pressure during excavation phase. Underground structural system suggested from architect is checked against the soil lateral pressures before the analysis of stresses developed from gravity loads. In this technology, retaining wall is installed first and excavation proceeds until the first level of bracing is reached. Braces used as struts during excavation will serve as permanent girders when buildings are in operation. Simultaneous construction of underground and superstructure can proceeds when excavation ends with the last level of braces being installed. These projects demonstrate that technology contributes to the speed as well as the economy involved in construction.

        전화추후관리가 항암요법을 받는 암환자의 자가간호수행 및 가족원 역할스트레스에 미치는 효과

        Purpose: This study was conducted from January to March, 2004 to examine the effect of telephone follow-up on the performance of self-care in cancer patients undergoing chemotherapy and on role stress of family caregivers. Method: Research design was a nonequivalent control group non-synchronized design. Seventy-two participants were assigned to either the experimental group (18 cancer patients, 18 family caregivers) or the control group (18 cancer patients, 18 family caregivers). Data were collected before and after the intervention and were analyzed with paired t-test, t-test, Mann-Whitney U Test & Wilcoxon Signed Ranks Test. Results: Performance of self-care in the experimental group undergoing telephone follow-up was significantly higher than that of the control group (t=8.016, p=0.000). Role stress of family members in the experimental group was also significantly higher than that of the control group (t=2.133, p=0.042). Conclusion: This results suggest that the telephone follow-up is effective for cancer patients undergoing chemotherapy and their family caregivers. Telephone follow-up can be recommended as an effective nursing intervention for self-care performance in cancer patients undergoing chemotherapy and to reduce role stress of family caregivers.
