유산균을 이용한 발효 고구마의 품질 특성 및 항산화 활성

The purpose of this study was to investigate the quality and antioxidant properties of three fermented sweet potato cultivars (Shinyulmi, Hogammi, and Shinjami) using lactic acid bacteria. During the fermentation, the pH was lowered and the titratable acidity increased. The viable cell counts of lactic acid bacteria increased 8.44-9.62 log CFU/g. Organic acid content (especially lactic acid) of sweet potatoes increased by fermentation. Also, ${\gamma}$-Aminobutyric acid increased more than 8.6 times by fermentation in all samples. The total polyphenol and flavonoid contents of sweet potato, showed insignificant changes in all samples by fermentation. ABTS radical scavenging activity of all samples slightly decreased by fermentation, but not significantly. DPPH radical scavenging activity decreased slightly by fermentation except Shinyulmi. However, when compared with the varieties, Shinjami showed the highest activity. The reducing power of Shinjami decreased slightly by fermentation, but activity was the highest among all samples. Based on these results, most of the chemical properties and functionality of fermented sweet potato are retained after fermentation, although some antioxidant activity decreases. We suggest that three fermented sweet potato cultivars (Shinyulmi, Hogammi, and Shinjami) using lactic acid bacteria can be used in various applications because of their effective functional properties.
섬애약쑥(Artemisia argyi H.) 추출물의 향장소재 특성

본 연구에서는 섬애약쑥의 화장품 소재로서 기능적 특성을 조사하였다. 섬애약쑥의 물추출물, 60% 에탄올 추출물, 100% 에탄올 추출물은 Escherichia coli를 제외하고 Propionibacterium acnes,Staphylococcus aureus, Staphylococcus epidermidis, Enterobacter aerogenes 등 4종의 미생물에대하여 모두 항균활성이 있는 것으로 나타났다. 미생물 최소저해농도(MIC) 분석결과 60% 에탄올 추출물의 P. acnes에 대한 MIC가 1.25 mg/mL의 농도로 활성이 가장 높았다. 섬애약쑥 추출물의tyrosinase 활성 억제능은 농도 의존적 경향을 나타냈으며, 물 추출물에 비해서 60%와 100% 에탄올추출물에서 상대적으로 높은 값을 보였다. B16/F10 melanoma 세포에 의한 멜라닌 함량을 분석한 결과60%와 100% 에탄올 추출물의 농도가 증가할수록 감소하였다. 특히 60% 에탄올 추출물은 125 μg/mL의 농도에서 51.9%의 elastase 저해능을 보여서 우수한 주름개선 특성을 나타내었다. 또한 약쑥 추출물은 UV-B(290-320 nm) 영역에서 강한 UV 흡수 효과를 나타내었는데 60%와 100% 에탄올 추출물에서물 추출물보다 상대적으로 우수한 흡수도를 나타내었다. 이러한 결과들은 섬애약쑥 추출물이 향장산업소재로서 활용될 수 있는 가능성을 제시하는 것으로 판단된다. This study was carried out to investigate and verify the functionality of Artemisia argyi H. ascosmetic substances. Antimicrobial activity of water, 60% ethanol and 100% ethanol extractsshowed inhibitory effects against Propionibacterium acnes, Staphylococcus aureus, Staphylococcusepidermidis, and Enterobacter aerogenes except Escherichia coli. As the results ofMIC(Minimun inhibitory concentration) test, 60% ethanol extracts inhibited the growth of P. acnes at a concentration of 1.25 mg/mL. The mushroom tyrosinase inhibitory activity of water,60% ethanol, and 100% ethanol extracts of A. argyi H. was increased inconcentration-dependent manner. Melanin syntheses of B16/F10 mellanoma cells was alsoreduced by the extracts of A. argyi H. Especially, 60% ethanol extracts showed a excellentelastase inhibition of 51.9% at 125 ug/mL. In addition, the samples also showed a strongabsorption in the range of UV-B(290-320nm). Overall, these results suggest that the extracts ofA. argyi H. might be used for cosmetic industry such as anti-wrinkle or whitening substances.
