Sweetness profiles of glycosylated rebaudioside A and its binary mixtures with allulose and maltitol

Rebaudioside A is a promising natural alternativesweetener but they produce increased bitterness,astringency, and unpleasant aftertastes. Glycosylation andblending with different sweeteners are known to improvethe sensory characteristics of rebaudioside A. The presentstudy was conducted to identify the relative sweetness andsensory profile of glycosyl rebaudioside A (g-reb A). Therelative sweetness of g-reb A compared to 5% sucrose wasdetermined using the two-alternative forced choice method. The sensory profiles of g-reb A and its mixtures withallulose and maltitol (1:1 ratio) were compared to those ofrebaudioside A, rebaudioside D, rebaudioside M, sucralose,allulose, maltitol, and sucrose using descriptive analysisconducted by eight trained panelists. The relative sweetnessof g-reb A was 155, which was lower than that ofrebaudioside A. In addition, the bitter taste and aftertaste,astringency, and sweet onset of g-reb A were decreasedcompared to those of rebaudioside A.

The purpose of this study was to investigate the use of fad dieting as a method to lose weight among male and female college students. A total of 710 students participated in this study. Fad dieting was surveyed using a questionnaire about 11 fad diet methods. The mean age of the subjects was 21.4 years for males and 20.4 years for females. The proportion of students who had experience trying to lose weight was 52.8% for males and 78.6% for females (p<0.001). The diet method employed by the highest number of participants was the half meal diet (27.6% for males, 43.9% for females), followed by the cereal diet (8.8% for males, 43.9% for females), fasting (9.9% for males, 21.4% for females), and the chicken breast diet (13.1% for males, 9.2% for females). The female students were more likely than the males to try fad diets other than the chicken breast diet and the Atkins diet. The most frequent side effect of fad dieting was the yo-yo effect, followed by binge eating, weakness, anemia, and so on. The proportion of students who indicated that nutrition education is needed for healthy dieting was 39.1% for males and 45.4% for females. From these results, we concluded that a high percentage of college students attempt to lose weight through fad diets, with some gender differences. Therefore, in the future, nutrition education programs should focus more attention on providing healthy dieting methods to young college students to help them lose weight.
에너지신산업 교육 활동이 고등학생의 환경 인식과 태도에 미치는 영향

본 연구에서는 일반계 고등학교에의 교과 및 창의적 체험활동 교육과정에서 적용할 수 있는 에너지신산업 수업 프로그램을 적용하여 에너지신산업 교육 활동이 고등학생의 환경 인식과 가치 및 태도에 미치는 영향을 알아보았다. 에너지신산업 수업 프로그램은 ‘에너지와 기후변화’, ‘신재생에너지’, ‘에너지신산업’, ‘에너지신산업과 진로’ 등의 4개의 영역으로 구분하였고, 8차시의 수업 프로그램을 개발하여 적용하였다. 에너지신산업 교육 활동이 고등학생의 환경 인식과 가치 및 태도에 미치는 효과를 분석하기 위해 인지적 영역, 정의적 영역, 행동적 영역 등 3개의 영역으로 설문 문항을 개발하여 경기도에 소재한 A고등학교 2학년 4개 반을 대상으로 설문 조사를 실시하였다. 본 연구의 결과는 첫째, 에너지신산업 교육 활동이 고등학생의 인지적․정의적․행동적 영역에 긍정적 영향을 주는 것으로 나타났다. 둘째, 에너지신산업 교육을 진로교육과 연계할 경우, 에너지 절약 의식 함양과 함께 정부정책을 인식할 수 있는 계기를 형성하였다. 셋째, 에너지신산업 교육 활동은 학생들의 신재생에너지 및 에너지신산업에 대한 이해도와 진로 결정에 긍정적 영향을 미쳤다.
