고추는 가지科에 屬하는 1年生 草木으로 우리나라는 約 400年前에 導入된 겨레의 香辛料로서 食生活에서 매우 重要한 位置를 차지하고 있다. 우리나라의 고추 需要量은 每年 增加하고 있으며 그 品種 또한 多楊해지고 國際化되어 가고 있는 추세이다. 이에 各國産 고추의 capsacinoids와 고속액체크로마토그래피에 의한 遊離糖의 測定, Hunter-Lab Tristimulus Colorimeter에 의한 色相評價를 通하여 各國産 고추의 品質評價를 하는데 硏究目的이 있다. 그 結果는 다음과 같다. 1. 各國産 고추의 capsacinoids量은 Saemaul Kumkang(새마을 금강)이 0.339%, Palbang(팔방) 0.557%, Texans 0.709%, China 0.543%, Yeong ju(영주) 0.513%, Mexico 0.759%, Hongkong(홍콩) 0.418% 였다. 2. 各國産 고추의 遊離糖의 量은 Saemaul Kumkang(새마을 금강)이 14.5%, Palbang(팔방) 4.30%, Texans 2.40%, China 4.22%, Yeong ju(영주) 5.24%, Mexico 9.84%, Hongkong(홍콩) 8.90% 였다. 3. 各國産 고추의 色相은 L直 27~50 사이이며 a直는 9~20, b直는 15~29 사이로서 大部分 yellow orange~orange色相系統에 屬하는 것으로서 나타났으며 a/b直는 Saemaul Kumkang(새마을 금강)이 0.563, Palbang(팔방) 0.76, Texans 0.77, China 0.676, Yeong ju(영주) 0.655, Mexico 0.77, Hongkong(홍콩) 0.69 였다. The purpose of this study lies in investigating the history and estimating the quality of various hot peppers. According to the Ji Bong Yoo Seol, the hot peppers were introduced into Korea from Japan. The capsaicinoid content analysed by spectrophotometer results in as following: Saemaul kumkang-0.339%, Palbang-0.557%, Texas-0.709%, China-0.543%, Yeongju-0.513%, Mexico-0.759%, Hong kong-0.418%. The analysis shows that the capsaicinoid content of American Texax and Medico is twice as much as that of Korean Saemaul kumkang, and China and Palbang of Japan include more than Korean Saemaul kumkang in capsaicinoid. High speed liquid chromatography shows that the free sugar of each hot pepper is as this ; Saemaul kumkang-14.5%, Palbang-4.30%, Texas-2,40%, China-4.22%, Yeongju-5.24%, Mexico-9.84%, Hong kong-8.90%. The defference of the free sugar content was more remarkable in each kind than in each place of production. The free sugar content of Saemaul kumkang was 1.5 times as much as that of Mexico, 1.6 time of Hong kong and 3.4 times of Palbang. It was the most of them in free sugar content. C/FS ratio value shows that Korean Saemaul kumkang is valued 0.02 and it's the least hot, and American Texas is the most hot. Each color by Hunter-lab colorimeter shows that L value 27∼50, a value 9∼20, b value 15∼29. It is from yellow orange to orange. The color of China is the most bright orange and that of Medico and Saemaul kumkang is the most dark orange. The color matter of each is correlated to the capsaicinoid content and a/b ratio value and indicates the color estimates.
