This paper is a 3D extension of a pseudo-potential multi-phase lattice Boltzmann model proposed in the literature. The new terms included in the forcing source enable us to change surface tension independent of density ratio without modifying the velocity formula in the original Shan and Chen multi-phase model. The Peng-Robinson equation of state is used in this research. For validation, some benchmark cases including thermodynamic consistency, Laplace law, and contact angle tests are performed using a D3Q27 multi-relaxation time lattice Boltzmann model. In addition, for the first time, we added a D3Q27 single-relaxation time lattice Boltzmann model to the current multi-phase model for solving energy equation during the droplet evaporation, admitting the D<SUP>2</SUP>-law. Results show that the proposed method is reliable for modelling flow and heat transfer problems as long as the reduced temperature is higher than 0.75.

본 연구는 방울토마토 장거리 수출을 위한 적정 유통저장 조건을 확립하기 위하여, 온도관리가 방울토마토의 품질과 저장성에 미치는 영향에 따른 외관상 품질변화와 저장성에 미치는 영향에 대해 알아보고자 연구를 진행하였다. 소과종인 ‘유니콘’ 품종을 대상으로, 저장 전 3일간 각각 5, 11, 25℃에서 저장한 후, 각각 5℃와 11℃에서 25일간 저장하였다. 저장온도는 봄, 여름, 겨울철 외부 평균온도에 준하여 설정하였다. 저장 최종일에 25℃/11℃(저장 전 온도/저장온도) 처리구에서 높은 호흡률과 에틸렌 발생량을 나타냈고, 5℃/5℃ 처리구에서 가장 낮은 호흡률과 에틸렌 발생량을 나타냈다. 5℃/5℃ 처리구가 가장 높은 시장성을 나타냈고, 저장 23일간 외관상 품질의 부패 현상은 나타나지 않았다. 생체중 감소율은 저장 전 5℃와 11oC에서 저장된 처리구에서 대체적으로 느리게 증가하였다. 저장 최종일에 5℃/5℃ 처리구와 5℃/11℃ 처리구가 다른 처리구보다 높은 경도와 당도를 나타냈으며, 또한 5℃/5℃ 처리구는 다른 처리구에 비해 높은 비타민 C 농도를 나타냈다. 저장 중 과숙 되어짐에 모든 처리구에서 titratable acidity가 대체적으로 증가하였으나, 과숙이 어느 정도 진행된 후에는 오히려 감소하는 경향이 보였다. 이상의 결과로, 5℃ 3일 저장 후, 5℃로 25일 저장하는 것이 바람직하며, 담적색기의 과실을 저장 유통하는 것이 저장성과 시장성에 적합한 것으로 판단된다. 또한 여름철 25℃ 이상의 고온에서 저장 하였음에도 11℃에서 저장하여 2주간의 저장이 가능하여, 여름철 일본 수출조건으로 적용 가능하다. 이와 같은 조건 조건의 유통조건이 이뤄진다면, 안정적인 시장경제와 소비자들에게 보다 신선한 품질의 방울토마토를 공급하는 데에 효과적일 것으로 생각된다. This study was carried out in order to investigate the effect of temperature of treatment and storage on the longevity of ‘Unicorn’ tomatoes of light red maturity stage during commercial handling conditions encountered while exporting over long distances. Tomato stored at 5℃ and 11℃ temperature with 85% relative humidity by pre-treating handling temperature that was using from field to before shipment as a winter temperature 5℃, spring temperature 11℃ and summer temperature 25℃ for 3 days. On the final storage day, 25℃/11℃ (treated/stored) tomatoes showed the highest respiration and ethylene production rate; whereas the lowest respiration and ethylene production rate was found for 5℃/5℃ treated and stored tomatoes. Tomatoes treated and stored at 5℃/5℃ showed higher marketability, without evidence of fungal rot, decay or spots for 23 days. The fresh weight loss under all treatment conditions increased gradually during 5℃ and 11℃ storage temperatures. The higher firmness and soluble solids were determined from 5℃/5℃ and 5℃/11℃ treated and stored tomatoes repectively, than from others tomatoes on the final day of storage. In addition, 5℃/5℃ tomatoes showed higher vitamin C contents than tomatoes stored at other temperatures, on the final day of storage. As the ripening and storage period progressed, the titratable acidity increased, but declined (P < 0.05) thereafter, due to over ripe tomatoes under all treatment conditions. These results show that 5℃/5℃ treated and stored light red maturity stages of ‘Unicorn’ tomatoes are optimum to export because they show the highest storability and marketability. Moreover, the marketability of light red maturity stage of ‘Unicorn’ tomato maintained for 2 weeks in 25℃/11℃ treated and stored temperature that might be the export temperature from Korea to Japan in summer season. This research result could be useful in helping tomato growers and exporters to get optimum market value by satisfying the buyer and consumer with a fresher product.
몇가지 방울토마토와 송이토마토의 품종별 숙기별 수확 후 생리 및 품질 비교

This study was conducted to compare the postharvest physiological characteristics and qualities of 5 different tomato cultivars; `Koko`, `Suncherry-250`, `Unicon`, `Aranka` and `Campri`. Tomatoes were harvested by 3 different maturities; turning (30% orange color), pink (80% orange color), and light red (30% red color) stages. The respiratory rate and ethylene production rate was higher in cherry tomato cultivars (`Koko`, `Suncherry-250`, `Unicon`) than the truss cultivars (`Aranka`, `Campri`). The firmness of fruit decreased with increase of maturity, and it was the highest in `Unicon` among cherry tomato cultivars and `Aranka` between truss tomato cultivars. As maturity increased, soluble solids increased and it was higher in cherry tomato cultivars than the truss cultivars, and the highest in `Suncherry-250` among cherry tomato cultivars. However, the titratable acidity decreased with the increase of maturity, and it was higher in `Aranka` among all cultivars. The sugar/acid ratio was lower in truss cultivars than the cherry tomato cultivars, because of titratable acidity. The vitamin C content increased as maturity progressed and it was higher in cherry tomato cultivars than the truss tomato cultivars. The firmness that should be the one of the most important quality for exporting tomato was higher in `Unicon` among cherry tomato cultivars, but there was not any significant difference in qualities between truss cultivars.

방울토마토의 수경재배 중 붕소+칼슘+규소 및 칼슘+규소의 복합 엽면시비가 수확 후 품질과 MAP 저장 중 저장성에 미치는 영향을 알아보고자 본 연구를 실시하였다. 엽면시비한 방울 토마토(‘Unicorn’)는 반숙과 상태에서 수확하여 산소투과성 필름으로 포장한 5℃, 11℃, 그리고 24℃에서 25일, 15일, 10일간 저장하였다. 붕소+칼슘+규소 복합처리한 방울토마토가 3가지 저장온도 모두에서 호흡과 에틸렌 발생이 억제되어 MAP 저장중 가장 낮은 생체중 감소와 가장 높은 외관상 품질을 보였다. 수확 후 조사한 방울토마토의 경도, 산도, 비타민 C 함량은 붕소+칼슘+규소 복합처리에서 가장 높았으며, 3가지 온도 모두에서 MAP 저장 후에도 모두 높게 유지되었다. 그러나 과피색, 라이코펜 함량과 당도는 수확 후에는 엽면시비 처리로 차이가 없었으나, 3가지 온도 모두 붕소+칼슘+규소 복합처리에서 가장 낮은 수치를 보였다. 이상의 결과로 볼 때 붕소+칼슘+규소 복합처리는 방울토마토의 수확후 생리 작용을 억제하고 경도, 산도, 비타민 C 함량을 높여 저장성을 향상시키는 것으로 판단되었다. This study was analyzed the effects of boron (B), calcium (Ca), silicon (Si) on quality and shelf life of ‘Unicorn’ cherry tomato at the light red maturity-stage. The storage conditions were modified atmosphere packaging (MAP) by oxygen transmission rate (OTR) packaging film at 5℃, 11℃, and 24℃. Respiration and ethylene production were the lowest in B + Ca + Si -treated tomato fruits. The lowest fresh weight loss and the longest shelf life resulted from the B + Ca + Si treatment. And the firmness was enhanced by B + Ca + Si treatment at harvest time, and it was retained after storage at 5oC, 11oC, and 24℃. Significantly lower soluble solids, lycopene, and color development were found at B + Ca + Si-treated tomato fruits compared with control after storage. Moreover, the highest titratable acidity and vitamin C content were observed in B + Ca + Si-treated tomato fruits after storage. From the above results, it was concluded that B + Ca + Si combined treatment can delay the maturity of cherry tomato after harvesting, and retained the firmness and prolong the shelf life.
수경재배한 토마토의 품종별 품질특성 비교 및 품질특성간 상관관계

본 연구는 국내에서 주로 생산되고 있는 대과종 토마토 품종의 품질을 비교 조사하여, 토마토의 원활한 유통 및 수출을 위한 수확후 관리 분야의 연구의 기초 자료를 얻고자 수행되었다. 과피색은 품종별 일정한 경향 없이 a*/b 값은 2.8에서 4.8범위 안에 있었다. 호흡률과 에틸렌 발생률도 품종간 큰 차이를 보이지는 않았다. 내적 품질 중 경도는 ‘Picasso’, ‘Tymaxx’, ‘Madison’에서 가장 높았다. 당도의 경우 대체로 6°Brix 수준을 나타내었는데 ‘Hoyong’과 ‘Dotearang Dia’가 높았다. 비타민 C 함량은 ‘Super Sunroad’와 ‘Dotearang Dia’가 가장 높았다. 산도는 품종별 큰 차이 없이 ‘Hoyong’이 가장 높았으며, 이 때문에 당산비는 당도와 유사한 양상으로 유럽계 중 당도가 낮았던 ‘Amaral’, ‘Picasso’, ‘Tymaxx’에서 낮았다. 이상의 결과로 보면 수출 토마토에서 중요한 품질 요인인 경도는 유럽계가 당도와 비타민 C 함량은 동양계가 높았다. 품질 요인간 상관관계는 a*/b* 값으로 표시한 과피색이 여러 품질 요인과 높은 상관관계를 나타내었는데, 특히 당도와 가장 높은 상관계수(r = 0.801)를 나타내었다. 또한 수출현장에서 중요하게 다루는 경도와 당도는 부의 상관관계(r = ?0.601)를 나타내었다. This study was conducted to compare the quality characters of 15 different tomato cultivars (‘Dotearang Dia’, ‘Super Dotearang’, ‘Super sunroad’, ‘Hoyong’, ‘Mirokku’, ‘Baccuhs’, ‘Mascara’, ‘Poseidon’, ‘Radido’, ‘Madison’, ‘Rapsodie’, ‘Solomon’, ‘Amaral’, ‘Picasso’, ‘Tymaxx’) and find out the correlation among the quality characters in order to get basic informations for exporting tomato. The a*/b* value of fruit surface showed from 2.8 to 4.8, but there was no significant difference in fruit surface color value, such as a*, b* and a*/b* among the cultivars. The respiration and ethylene production rate also were not shown any significantly difference among cultivars. The firmness of fruit was higher in ‘Picasso’, ‘Tymaxx’ and ‘Madison’ cultivars. The contents of soluble solids was higher in ‘Hoyong’ and ‘Dotearang Dia’ cultivars. The vitamin C content was higher in ‘Super Sunroad’ and ‘Dotearang Dia’ cultivars. The titratable acidity was higher in ‘Hoyong’ cultivars. The sugar/acid ratio that depended on soluble contents was lower in ‘Amaral’, ‘Picasso’, ‘Tymaxx’ cultivars that showed lower soluble contents. Conclusionally, The firmness that was one of the most important quality character in exporting tomato was higher in European cultivars, but soluble solide and vitamin C content were higher in Japanese cultivars. The significant correlation coefficient values were determined (more than p = 0.05) between a*/b* and other quality characters. The results suggested that surface color was the most suitable character represented tomato qualities. The high coefficient value (r = 0801) between a*/b* and the contents of soluble solids. The firmness and the contents of soluble solids that is the most important factor for exporting showed significant negative correlation (r = ?0.611).
