Relative content(% weight) of proteins, carbohydrates, lipids, and crude ashs in seed of korean green tea plant(Camellia simecis L.) are not different from those in seed of sunflower and safflower. However, the Camellia seed contains much higher crude saponin content(12.2%) than that of sesame(0.29%) or peanut(0.63%). It also contains 82% unsaturated fatty acids including oleic acid and contains tocopherol (22 ㎍/g, α-form only) that is significantly Less than of other oil-seed.

Quantutative analysis of catechins by HPLC was studied. When the mobile phase was switched from the conventional(AOAC) Methanol, Acetonitril and Acetic acid solution in Hz0 to 0.06% Phosphate solution with Acetonitrile, N,N-Dimethyl formamide, and Ethyl acetate, retention time could be reduced from 45 min to 28 min, especially, we obtained sharper chromatogram of the compounds, either (-)EGCG or (-)ECG, which resulted in minimization of analytical erros. CVs of retention time (0.32∼3.97%) and peak area (1.61∼7.01%) indicated that the data were more reliable. Content of catechins in commerical teas analyzed by the method was 120.3∼153.7 ㎎/g in green teas which was about 4 times that in black tea.

The study was carried out to develope quantitative analysis method of individual sugars in licorice extract. Individual sugars were analyzed by HPLC equipped with Refractive Index(RI) Detector. R values of sucrose and glucose were 1.0000 and R values of fructose and maltose were 0.9999. Standard calibration curve showed good linearity. Detection limit of sugars was in the range of 1.58 to 3.92 ${\mu}g$. Recovery rate of fructose, glucose, sucrose and maltose was $99.4\~102.2\%,\;92.3\~97.9\%,\;99.4\~102.0\%,\;91.1\~101.0$ respectively. Measure uncertainty was calculated to confirm trust and accuracy of analytical results. Main uncertainty factors were standard purity and HPLC replication injection. In $95\%$ trust level expanded uncertainty of sugars in licorice extract were fructose $1.98\pm0.047,\;glucose\;1.32\pm0.065,\;sucrose\;11.69\pm1.177,\;maltose\;1.06\pm0.042\;g/100\;g$.

The occurrence of falcarinol(n-heptadeca-1, 9-dien-4,6-diyn-3-o1)in the umbelliferous plants such as Ledebouriello seseloides WOLFF., Cnidium officinale MAKINO, Foeniculmn vulgare GAERTNER, Torilis japonica(HOLTT.) DC. Bupleurum falcatum L.,Angelica gigas NAKAI, Oenanthe javanica (BL.) DC. and Daucus carota var. satin DC. was investigated using gas chromatography/mass spectrometry(GC/MS). Falcarinol was found in the root of Ledebouriella seseloides, the stem and the root of Oenanthe javanica, and the root of Daucus carota var. sativa in which its contents were 1,055 ㎍/g, 289 ㎍/g , 179 ㎍/g , and 212 ㎍/g , respectively, while it was not found in the other plants.
