        논문: 고 Mn 오스테나이트계 스테인리스강의 가공유기 마르텐사이트 변태 및 기계적성질에 미치는 결정립크기의 영향

        The effect of grain size on the deformation induced martensite transformation and mechanical properties in austenitic stainless steel with high amount of Mn was studied. a`-martensite was formed by deformation and deformation induced martensite was formed with surface relief. With increase of grain size, volume fraction of deformation induced martensite was increased. With the increase in degree of cold rolling, hardness, and tensile strength was rapidly increased with linear relationship, while, elongation was decreased rapidly and then decreased slowly. With increase of grain size, hardness and tensile strength was rapidly increased with linear relationship, while elongation was decreased rapidly. The hardness, tensile strengths, and elongation were more strongly influenced by deformation induced martensite than the grain size.

        고 Mn 오스테나이트계 스테인리스강의 기계적 성질에 미치는 역변태의 영향

        This study was carried out to investigate the effect of reverse transformation on the mechanical properties in high manganese austenitic stainless steel. Over 95% of the austenite was transformed to deformation-induced martensite by 70% cold rolling. Reverse transformation became rapid above an annealing temperature of 550℃, but there was no significant transformation above 700℃. In addition, with an increasing annealing time at 700℃, reverse transformation was induced rapidly, but the transformation was almost completed at 10 min. There was a rapid decrese in strength and hardness with annealing at temperature above 550℃, while elongation increased rapidly above 600℃. At 700℃, hardness and strength decreased rapidly, and elongation increased steeply with an increasing reverse treatment time up to 10 min, whereas there were no significant change with a treatment time after 10 min. The reverse-transformed austenite showed an ultra-fine grain size less than 0.2 ㎛, which made it possible to strengthen the high manganese austenitic stainless steel.

        수송시간이 돼지의 혈액성상과 육질에 미치는 영향

        In a trial involving 120 pigs, the effects of transport time on blood profile and meat quality in pigs were investigated. One group of 60 animals was subjected to 20min and the others to 2 h transport time, and held in lairage for 1 h 30min. There was not significantly different in the carcass weight, backfat thickness and carcass grade between groups. Cortisol and lactic dehydrogenase(LDH) concentrations were significantly(P<0.05) higher in the group transported for 2 h compared with the group transported for 20min. There was not significantly different(P>0.05) in meat quality(?_(1), ?_(u), drip loss, cooking loss, hardness, CIE L^(*), a^(*), b^9*) and NPPC) and skin damage of port carcass between groups. These results imply that the stress could be affected by transport time in transit without meat quality.

        성별 혼합수송이 돼지행동과 육질에 미치는 영향

        In a trial involving 130 pigs, the effect of mixed-gender(gilts 50% + barrows 50%), gilts and barrows groups transportation on pig behaviour, skin damage of carcass, muscle pH and color were investigated. They were transported for on average 1hr 30 min from the farm to a slaughter house, and held in lairage for 1hr. Stocking density during transport was 0.4㎡ per 110㎏ live weight, and population density in lairage was 0.7㎡. The percentages of standing pigs were high for gills and low for barrows during their transport. The percentage of sitting or lying pigs were high for barrows during (heir transportation. The muscle pH and meat color were not significantly (p$gt;0.05) different among the mixed gender, gilts and castrates transportation. The skin damage scores of carcasses were significantly (p$lt;0.05) lower in mixed sex transportation than those in the transportation of gilts and castrates.

        In a trial involving 172 pigs, the effects of transport stocking densities of 0.3, 0.4 and 0.5㎡/per 110㎏ pig on blood profile, skin damage of carcass, muscle pH and color were investigated. The pigs came from a fawn and were transported by six times. They were transported for on average 1hr 30 min from farm to slaughter house, and held in lairage for lhr. Blood profile including cortisol, β-endorphin, glucose and lactate dehydrogenase was not significantly (p$gt;0.05) different among al! stocking densities. However, the Creatine phosphokinase (CPK) level of a stocking density of 0.3㎡ was significantly (p$lt;0.05) higher than those of other stocking density groups. This result suggested that higher transport density resulted in more physical stress to pigs during transportation. There were no significant difference in skin damage scores of carcasses among stocking density groups. However, samples of 0.4㎡ stocking density group showed significantly (p$lt;0.01) higher pH₂ and pH_u levels compared to 0.5㎡ stocking density group. There were no significant differences in meat color (CIE L and a) among stocking density groups.

        In a trial involving 124 pigs, the effect of spring, summer and winter transport on pig behaviour, skin damage of carcass, muscle pH and color were investigated. They were transported for on average 1hr 30 min from farm to slaughter house, and held in lairage for 1hr. Stocking density during transport was 0.4㎡ per 110㎏ live weight, and population density in lairage was 0.7㎡. The percentage of standing pigs during the journey were highest in spring, and lowest in summer. The percentage of lying pigs were examine highest in summer. The skin damage scores of carcasses was significantly (p$lt;0.05) higher in spring transport than those in summer and winter. The pH₂ and pHu values of pork were significantly (p$lt;0.05) higher in spring transport than those in summer and winter transport. In analysis of meat color, lightness (CIE L) values were significantly (p$lt;0.05) higher in summer transport than those in spring and winter transport. Redness (CIE a) and yellowness (b) was significantly (p$lt;0.05) lower in spring transport than those in summer and winter transport.

        돼지 수송밀도와 계류시간이 돼지행동과 육질에 미치는 영향

        In a trial involving 306 pigs, the effects of transport stocking densities of 0.3, 0.4 and 0.5 ㎡/per 110 ㎏ pig and lairage time on pigs behaviour and meat quality were investigated. The pigs came from a farm and were transported far 1hr 30 min on average from farm to slaughter house. Stocking density of lairage experiments was 0.4㎡ per 110㎏ live weight, and population density was 0.7㎡. The pigs were held in lairage for 1h, 2h or 4h before slaughter. The percentages of standing pigs during the journey were higher in a stocking density of 0.3㎡ pigs, but the percentage of standing pigs were decreased from 35 minutes to 60 minutes after departure, whereas the percentages of sitting pigs were increased. Also, it was observed that more pigs were standing than sitting or lying pigs in a stocking density of 0.4 and 0.5㎡ during transportation. As the transporting times were elapsed, the percentages of standing pigs were decreased and the percentage of sitting or lying pigs were slightly increased. In shoulder regions, carcass skin damage of 4 hours lairage groups was significantly (p$lt;0.001) higher than those of 1 hour lairage group. The pH_u values of 4 hours lairage group were significantly (p$lt;0.001) higher than those of 1 hour and 2 hours lairage group. The NPPC color scale of 2 hours lairage group were significantly (p$lt;0.05) higher than those of 1 hour lairage group. The CIE L* and b* values of 1 hour lairage groups were significantly (p$lt;0.05) higher than those of 4 hours lairage groups.
