This study investigates the quality characteristics of soybean dasik made with various levels(0, 3, 6, 9 and 12%) of Platycodon grandiflorum(Jacq.) A. DC. flour additions. In soybean dasik added with Platycodon grandiflorum(Jacq.) A. DC. flour, moisture contents range from 24.47±0.35 to 26.31±0.81%. As Platycodon grandiflorum(Jacq.) A. DC. flour increased, lightness values were decreased and redness and yellowness values were increased significantly. The result of the mechanical evaluation showed that hardness increased after significantly decreasing while adhesiveness, gumminess and chewiness decreased with the amount of Platycodon grandiflorum(Jacq.) A. DC. flour increased. Cohesiveness and springiness did not change significantly according to the level of Platycodon grandiflorum(Jacq.) A. DC. flour. In conclusion, soybean dasik with the addition of 6% Platycodon grandiflorum(Jacq.) A. DC. flour has the most propper taste, flavor and overall acceptability on sensory evaluation.
노루궁뎅이 버섯 분말의 첨가량을 달리한 진말다식의 품질 특성

The objective of this study is to evaluate the quality characteristics of wheat flour Dasik added with different amounts (0%, 3%, 6%, 9%, 12%, 15%) of Hericium erinaceus powder. For the moisture contents by adding Hericium erinaceus powder, wheat flour dasik did not show significant difference. As the results of Hunter`s color value by increasing Hericium erinaceus powder, L-value decreased and a-value increased. Texture evaluation showed that, as the amount of Hericium erinaceus powder increased, hardness, gumminess and chewiness increased while springiness and cohesiveness did not show significant differences. As the results of sensory evaluation, the wheat flour dasik containing 9% Hericium erinaceus powder had the highest color, taste, flavor and overall acceptability scores. In conclusion, 9% of Hericium erinaceus powder would be optimal for Hericium erinaceus wheat flour Dasik.
감마선 조사 후 가속 저장된 분말수프의 이화학적 품질 특성

감마선 조사된 시판 인스턴트 분말수프의 가속 저장(60℃, 4주) 중 이화학적 품질특성을 평가하였다. 감마선 조사 직후 지방산패도는 조사선량이 증가함에 따라 증가하였으나 조사구 및 비조사구 모두 저장기간이 늘어남에 따른 변화는 없었다. 시료의 pH 변화는 비조사구에 비해 조사구에서 낮아지는 경향을 보였으며 저장기간이 길어질수록 pH값이 유의적으로 감소하였다(p<0.05). 감마선 조사된 수프의 점도는 비조사구에 비해 조사구에서 조사선량이 증가함에 따라 유의적으로 감소하는 경향을 보였으며(p<0.05) 저장기간에 따른 차이는 미미하였다. 감마선 조사된 수프의 색도는 저장기간이 늘어남에 따라, 그리고 조사선량이 증가함에 따라 명도가 감소하는 경향을 나타내었다. 이상의 결과에서 감마선 조사는 수프의 지질산화를 증가시키고 점도감소가 초래되어 이를 방지하기 위한 추가연구가 요구된다. The purpose of this study was to investigate the physicochemical characteristics of gamma irradiated-commercial powdery soup under accelerated storage condition (60℃, 4 weeks). TBA values increased with increment of irradiation dose, but were not affected by storage period. On the other hand, TBA values increased with increment of storage period in non-irradiated sample. pH of irradiated samples decreased as compared with that of non-irradiated sample and significantly decreased as elapse of storage period (p<0.05). Viscosity of irradiated samples significantly decreased as increment of irradiation dose and no significant difference was abserved as elapse of storage period (p<0.05). In Hunter's value, L value decreased but a value and b value were not significantly different with increment of irradiation dose and elapse of storage period. Because gamma irradiation was led to lipid oxidation and decrease in viscosity of commercial powdery soup, these results suggested that further studies should be investigated to reduce detrimental effects induced by irradiation.
고구마 분말을 첨가하여 제조한 dinner roll의 품질특성과 당뇨 유도 흰쥐의 혈당에 미치는 효과

SPP를 첨가하여 제조한 빵(dinner roll) 반죽의 pH는 대조구와 실험구 사이에 차이가 없었다. SPP 첨가량과 반죽의 밀도 사이에는 강한 양의 상관관계를, 반죽의 발효팽창력 사이에는 음의 상관관계를 나타내었다. Dinner roll의 굽기손실율은 SPP의 첨가량이 증가할수록 감소하였으나, 비용적은 차이가 없었다. Dinner roll crust의 L value, b value, chroma 및 Hue angle은 대조구보다 SPP 첨가구가 유의적으로 낮았고, a value는 대조구보다 SPP 첨가구가 유의적으로 높았다. Crumb의 L value와 Hue angle은 대조구보다 SPP 첨가구가 유의적으로 낮았고, a value, b value 및 chroma는 대조구보다 SPP 첨가구가 유의적으로 높았다. SPP 첨가량과 dinner roll의 hardness 및 cohesiveness 사이에는 강한 양의 상관관계가 있었으나, springiness 및 chewiness와는 상관관계가 형성되지 않았다. Streptozotocin 투여로 당뇨병이 유발된 흰쥐에 SPP가 첨가된 dinner roll을 4주간 섭취시킨 결과, SPP 첨가구의 혈당 농도가 대조구보다 유의적으로 감소하였고, 이는 SPP에 함유된 β-carotene 때문인 것으로 사료되었다. The present study was performed to increase the availability of sweet (Ipomoea batatas) and to develop dinner roll with the reducing ability of blood glucose levels. Different contents of lyophilized sweet potato powder (SPP) were added in dinner roll. Compare to the control group, batter density, a value, hardness, and cohesiveness of the SPP-treated groups were significantly increased while dough expansion rate, baking loss rate, L value, and Hue angle were significantly decreased. Twenty four Sprague-Dawley rats were administered with the SPP-treated diet for 4 weeks after diabetes was induced with the injection of streptozotocin. The blood glucose concentration of the SPP-treated group was significantly lower than that of the control. Although the SPP-treated groups possessed the ability of reducing blood glucose level, the sensory qualities were inferior to the control. Thus, follow-up study was required to improve the sensory characteristics as well as the texture properties.
