        The location, merchandise of food, value making by hotel brand, good service, and highly educated personnel management should be a key in a successful factor of hotel restaurant. And so hotel restaurants not only should be satisfied desire of guests but also be the place offering opportunity of new desire through their concept, special menu and good service. The results of business of food and beverage department of recent domestic deluxe hotel should be increased every year. It should be helpful to activate food and beverage business presenting the plan for the sale promotion of more effective event menu. The first, marketing for event menu sale should be practised systematically. It is real situation practising the event with a link in the chain of program of the off season policy and hotel restaurant should be central role in order to be closely related with guests, constructing the guest data base and understanding need of guests throughly as a plan for competitive power strengthening. The second, It is very important to secure capable cook who has professional knowledge and skill. It should be the restaurant presenting the creative menu fitting in the atmosphere of event menu and restaurant; that is creative and special menu to guests developing a sort of cuisine, cooking methods, traditional local food, healthy food. The third, It should be regards of guest as reasonable cost decision. A comparative decision method to select the cost, comparing with competitive hotel, is general, but it is judged more reasonable to decide cost including food making cost and estimating goals profit, and in any case it is a case to be settled high cost in one way in order to pursue high class image.

      • 호텔 식음료 부문의 매출촉진 방안에 관한 연구

        Recently characteristics of hotel management are that the food and beverage revenues are increasing remarkably and that they are greater than the revenue from rooms. As the food and beverage departments grow in quality and quantity to be comparative to the amount of sales from rooms the hotel's competitiveness is strengthened. It is further strengthened through the systematical marketing education through training professional salesmen for the sales promotion of the food and beverage departments. This study recommends an improvement plan by analyzing facts to promote the food and beverage sales, adopting methods to increase sales and to eliminate existing hotel sales problems. Hotel management has a higher dependence on manpower than other industries. Therefore, securing of a fixed clientele should be an immensely important strategy in the running of a restaurant. Techniques are needed to improve the promotion of sales of food and beverage in order to maximize overall hotel sales. When such conditions are fully attained the promotion of restaurant and hotel sales should be accomplished.

        The linkage study as a part of firm organization approach is a major interesting and important field of the locational analysis in industrial georgraphy of which the study of spatial linkage is most basic element. But there were no systematic study on the spatial linkages of textile industry in Korea. This study puts the purpose to clanify the characteristics of the Spatial linkage of Daegu textile industry which is most important and highly specialized one in Daegu industries and economies. Thw basic data used are the questionnair results of 193 firms selected by stratified sampling which occupy about 10% of the total textile firm in Daegu. Through the analysis the major findings are as follows. (1) Strong localization is a dominant phenomena in the whole spatial linkage system especially in business service and procurement linkages. Such localization can be explained both by neighborhood effect and external economy(agglomeration economy) as general terms and specific conditions of Daegu textile industry such as dominance of small and medium size of firms. (2) Relative to strong localizational orientation in bubiness service and procurement linkages marketing linkage system reveals so decentralization orientation that the centrifugal force facilitating decentralization surpass the centripetal force accelerating localization. (3) Spatial structure of linkages of Daegu textile industry is composed of three main linkage area; ① the local area developed by centripetal forces, and consisted of the core area of radius 20㎞ and the outer area delimited by radius 20-8O㎞ from Daegu city. The formation of local area is explained effectively by distance term such as neighborhood effect and external economy. ② Peripheral polarized area consisted of huge Seoul market area characterized by long distance and highly strengthen linkages. Development of this polarized area could be explained not by distance term but by gravity model or marketing theories. ③ The scattered overseas area with most long distance linkage. explanation of this area is indifference of linkage distance but concerned with economic terms such as market size and cost. (4) The factors accelerating localization and decentralization in spatial linkages refer to intraregional and interregional factors respectively. Though various intra and interreginal factors can be discernable by the type of textile industry, firm size and pattern of firm organization, it is not difficult to find common factors of spatial linkage applicable to whole textile industry. In procurement linkage system human relation, procurementablity of raw materials within the local (inter-procurement), advantage of personal contact as intraregional factors, and capitals, procurementablity of materials from outer regions(outer procurement), linkage among affiliated firms as inter-regional factors are identified respectibly. Similarly in marketing linkage system personal contact and market size as intra-regional factors, selling agent and market size as inter-regional factors are identified. Beside of these common linkage factors there are notable special linkage factors such as local loyalty,danger disperson and monopoly. OF these common and special factors it is noticeable that humam relaton, personal contact, and local loylty, nearly un- concerned in classical location theories, are appeared as specifically interesting and important linkage factors, and this validiates the significance of behavioral, humanistic and contextual approaches in linkage studis. (5) It is apparent that different type of textile industry produce different in stregth of localization, number and kind of linkage factors, mode of linkage. Consequently while chemical fiber fabric industry that occupy most important position in number of firms, labors and production defined as the standard linkage industry, wool and silk fabric industries are defined to the special linkage industries. (6) It also remarkble that there is close relationship between firm size and spatial linkages. In General it could be said that the smaller the firm size, the higher degree of decentralization. This suggests the application of the spatial principle of firm size clarified in precedent linkage studies. (7) Linkage is no more than the spatial expression of firm organization that the pattern of firm organization also differentiate the spatial linkage pattern. As the pattern of firm organization transfer to outside owned firm, through insider owned multi-plant firm to insider owned sing1e plant firm the localization wlod be strengthen. In conclusion the characteristics of spatial linkage of Daegu textile industry should be explained not only by general linkage theories or spatial concepts but also by the unique regional characteristics of Daegu and Daegu textile industry such as the dominance of small and medium size of firms, the tradition of Daegu textile industry and conservative value of entrepreneurs and citizens.

        건조 홍합의 방사선 조사여부를 확인하기 위한 지방분해산물 분석

        건조된 홍합을 방사선 조사시켜 생성된 hydrocarbon류를 분리하기 위하여 Soxtec 기기를 이용하여 지방을 추출한 뒤, florisil column chromatography하였으며, GC/MS 분석기기로 성분을 확인하였다. 0.5~10 kGy의 선량별로 조사된 건조된 홍합에서 방사선 조사에 의해 생성된 hydrocarbon류 함량이 조사선량에 따라 증가하였으며, 동일한 선량으로 조사된 시료임 에도 방사선 조사에 의해 생성된 hydrocarbon류 각각의 함량이 다르게 정량되었다. 건조된 홍합의 방사선 조사에 의해 생성되는 hydrocarbon류와 2-alkylcyclobutanone류는 0.5 kGy 이상 조사된 시료에서 모두 검출되었으며, 비조사 시료에서는 검출되지 않았다. Radiolytic compounds of lipids, as hydrocarbons and 2-alkylcyclobutanones, were determined to detect the irradiated dried Mytilus coruscus. The detection methods were composed of fat extraction by Soxtec apparatus from dried Mytilus coruscus, isolation of hydrocarbons and 2-alkylcyclobutanones with a florisil column chromatography and identification of GC/MS. Concentrations of the radiation-induced hydrocarbons and 2-alkylcyclobutanones increased with the irradiation dose. The major hydrocarbons in irradiated Mytilus coruscus were pentadecane and 1-tetradecene originated from palmitic acid, and heptadecane and 1-hexadecene originated from stearic acid. 2-(5'-Tetradecenyl)cyclobutanone of 2-alkylcyclobutanones was high relatively. The radiation-induced hydrocarbons and 2-alkylcyclobutanones from dried Mytilus coruscus were detected at 0.5 kGy over and not detected at the non-irradiated.
