        에어로빅댄스 수행과 비 운동 중년 여성의 신체 구성 및 혈청 Oxidized LDL 농도의 비교

        It is known that appropriate exercise changes body composition and improves coronary artery disease. This study was undertaken to evaluate the relationships between aerobic exercise, body composition, and the blood lipid levels in the middle-aged women(33 to 54 years old). The 57 subjects were divided into two groups based on their exercise: the aerobic exercise group(A group: 44) which performed at about $60\%$ of $VO_2max$ during over 6 months and the sedentary one(S group: 13). The percentages of body fat waist/hip ratio(WHR), body mass, and lean body mass of two groups were measured and compared in serum HDLC level and oxidized LDL level, the two most effective factors of coronary artery disease. The subjects in A group showed the lower percentages of body fat and WHR, when compared with the ones in S group. The body mass and lean body mass of A group subjects were higher than those of S group subjects. The serum HDL-C level$(58.6\pm12.7mg/mL)$ was significantly higher for A than S group subjects.(p<0.05) The sem ox-LDL level $(6.64\pm4.11Eu/mL)$ for A group subjects was lower than S group ones. The fat mass showed significantly positive correlations with atherogenic index(AI)(r=0.301, p<0.05), and with blood glucose levels(r=0.334, p<0.05). Also the WHR whowed significantly positive correlations with LDL-C levels(r=0.277, p<0.05), and with AI(r=0.466, p<0.01). In summary, the subjects in A group have the lower percentages of body fat and WHR, when compared with the ones in S group. Also, A group subject showed a tendency that exercise enhances serum HDL-C levels and decreases oxidized LDL levels. And aerobic exercise showed positive results which change body composition and improve blood lipid levels. There were significantly positive correlations among the percentages of body fat At and blood glucose level. These results suggest that moderately intensive exercise is a significant factor in reducing coronary artery disease.

        뽕잎추출액을 첨가한 발효유의 이화학적 특성

        뽕잎추출액을 첨가한 발효유의 이화학적 특성을 분석한 결과, pH는 배양시간이 경과함에 따라 뽕잎추출액 첨가군의 pH가 낮아졌으며, 산도는 발효유의 뽕잎추출액 첨가 농도가 증가함에 따라 증가하였다. 생균수는 뽕잎추출액 0.5% 첨가군의 생균수가 가장 많았고, 뽕잎추출액의 첨가량에 따라 무지유고형분, 조단백질, 조지방 및 조회분 함량은 증가하였으며, 수분과 lactose 함량은 유의하게 감소하였다(p<0.05). 무기질함량에서는 칼슘, 마그네슘, 칼륨 함량이 뽕잎추출액 첨가군에서 유의하게(p<0.05) 증가하였고, 색도는 발효유의 뽕잎추출액 함량이 높을수록 L값과 a값은 낮았으며 b값은 증가되었다. 관능검사에서 색은 뽕잎추출액 1.0% 첨가군에서 가장 높았으며, 향미는 뽕잎추출액 0.5% 첨가군이 가장 높았고, 맛과 질감은 뽕잎추출액 1.0% 첨가군이 가장 높아 전체적인 기호도에서 뽕잎추출액 1.0% 첨가군이 높게 나타났다. 따라서 뽕잎추출액을 첨가한 발효유의 이화학적 특성과 관능적 특성을 분석한 결과 뽕잎추출액 1%를 첨가한 발효유가 가장 적합하였다. This study was carried out to evaluate the physicochemical characteristics of fermented milks containing mulberry leaf extract. The mulberry leaf extracts were added to fermented milk at 0~2.0%. The pH, acidity, numbers of viable cells, chemical composition and color values of fermented milk preparation were analyzed, and these samples were subjected to a taste test panel. As the ratio of mulberry leaf extract increased, the pH value of the fermented milk decreased proportionally and acidities increased significantly. The numbers of viable cells was highest in the fermented milk sample containing 0.5% mulberry leaf extract. In the chemical composition analyses, increases in the concentration of mulberry leaf extract led to a significant increase in crude protein, crude fat, and crude ash contents and a significant decrease in lactose content. Ca, Mg and K in the fermented milk were also significantly increased with the addition of mulberry leaf extract. As mulberry leaf extract amount increased, the lightness and redness values decreased, while the yellowness value increased. From the sensory evaluation of the fermented milk containing mulberry leaf extract, color, taste, texture and overall acceptability of the fermented milk sample containing 1% mulberry leaf extract was found to be much better than those of the other groups.

        노년기 여성들의 혈장 타우린의 농도와 혈장 호모시스테인 및 혈청 지질농도와의 상관관계

        This study was conducted to assess blood components caused by metabolic syndrome increasing in postmenopausal elderly women. The blood samples of these subjects were analyzed to investigate the correlation of plasma taurine levels and plasma homocysteine levels, and serum lipid profiles. The subjects were 33 elderly women(72.8±4.4 years). Their mean height, weight and BMI were 150.5±5.7㎝, 57.5±6.3㎏ and 25.4±2.5㎏/㎡. 16 women of this study subjects have been chronic diseases such as hypertension or diabetes. Their fasting blood glucose was 98.2±24.0㎎/㎗, and their plasma total cholesterol (TC), HDL-C, LDL-C, triglyceride(TG) were 216.5±29.9, 52.1±10.7, 145.7±27.9 and 141.2±59.6㎎/㎗, respectively. Their blood lipid profiles were higher than the standard levels of metabolic syndrome, thus these levels of lipid profiles may play a role as risk factors on the elderly person. Plasma taurine level of the subjects was 278.5±48.1 μMol/ℓ, and their plasma homocysteine level was 12.8±2.9 μMol/ℓ. The concentration of plasma vitamin B12 was significantly decreased by aging(p<0.05). The correlation of plasma homocysteine and plasma folate showed significantly negative(p<0.05). Thus, the decreased levels of plasma vitamin B12 and folate by aging might affect on the plasma homocyteine concentration acting as a risk factor of cardiovascular diseases for elderly person. The correlation of plasma taurine and hemoglobin, and their platelet showed significantly positive(p<0.05). In conclusion, the diet on the elderly person is one of the important factors to prevent their health from chronic diseases. This study recommends that well balanced diets are needed for elderly person to keep their health and prevent from metabolic syndrome.

        중년여성의 체력, 식이섭취와 혈청지질과의 상관관계에 대한 연구

        본 연구는 중년여성을 대상으로 운동수행기간 별로 구분한 에어로빅운동군과 좌식 생활자의 신체계측, 식이섭취조사, 체력검사, 혈청지질검사를 하였으며 혈청지질과 각 인자와의 상관관계 및 체력과 신체계측과의 상관관계를 산출하였고 그 결과 및 결론은 다음과 같다. 1) 체력검사의 결과 : 조사대사장의 최고, 최저 혈압측정치는 좌식생활자에 비해 운동군이 낮았고 맥박은 운동수행기간이 길수록 그 수치가 낮아졌다. 맥압은 45이상인 자가 17.1%로 심장질환에 주의가 필요하였다. 근지구력과 점프력은 대상자 모두 정상범위이며 A군이 우세하였다. 유연성에서 C군은 미달이고 A군 정상범위이었으며 상반신근력은 A, C군 모두 정상범위에 미치기 못하였으며 평형성은 운동수행기간이 긴 AⅢ군이 가장 우세하였다. 2) 식이섭취 조사 결과 : 조사대상자들의 1일 섭취칼로리는 권장량과 비교하여 큰 차이를 나타내지 않았지만 단백질 섭취는 권장량에 따라 월등히 많이 섭취하였다 칼슘의 1일 섭취량은 권장량 600㎎에 비해 모두 높았고 철분은 운동기간이 가장 긴 AⅢ군이 (16.1+43㎎으로) 권장량 18㎎/day에 비해 섭취미달이었다. 식이중 콜레스테롤의 1일 섭취량은 한국정상인 1일 섭취량인 200∼300㎎과 큰 차이가 없었으며 식이 지질중 P/S률은 AⅡ군만 1.0보다 낮고 모두 정상비율이었다. 3) 식이와 혈청지질과의 상관관계 조사결과 :조사대상자들의 힐청지질중 중성지질과 단백질 섭취와는 r=0.42(p<0.05)로 유의전인 양의 상관으로 나타났다. 이는 과잉의 단백질 섭취의 결과로 중성지질로 전환됨을 일 수 있었다. 혈청 TC와 식이 TC와는 r=0.21이나 유의적 상관관계를 보이지 않았다. 이는 식이로 섭취된 TC가 혈청 TC에 큰 영향을 미치지 않았다고 사려된다. 4) 체력 및 체위와 혈청지질과의 상관관계 조사결과 : 혈청 TG, TC, LDL-C와 체력과는 음의 관계이며 HDL-C, HDL-C/TC와 체력과는 양의 관계이었다. 운동에 의한 체중 감량이 클수록 혈청 HDL-C농도가 높아졌으며 체력이 향상되면 혈청지질도 개선될 수 있음을 알 수 있었다. 최고혈압과 TC는 r=0.49(p<0.05), LDS-C와는 r=0.47(p<0.05)로 유의적인 양의 상관으로 혈압이 높으면 혈청 TC, LDL-C도 높게 나타났다. 5) 신체계측과 체력과의 상관관계 조사결과 : 체중감량과 윗몸일으키기는 r=0.71 (p< 0.001), 팔굽혀펴기와는 r=0.54(p<0.001)로 유의적인 양의 상관관계를 나타냈다. 즉 운동에 의한 체중감량은 근지구력을 높힐수 있으며 운동후 체중과 서서위로뛰기는 r=0.49(p<0.()5)로 유의적 양의상관을 나타냈다. 즉 aerobic운동에 의해 점프력이 향상될 수 있음을 알 수 있었다. 6) 식생활에 대한 설문분석 결과 :조사대상자들의 체지방율이 30%이상인사가 14.8%로 운동을 하게된 동기가 비만해소보다는 건강증진에 목적이 있었으며 식사형태는 육, 채식 혼합식이 71.9%로 균형된 식사의식이 높았다. 그러나 적당히 당질식품과 당음료를 섭취한다가 53.6%로서 과잉의 당질섭취로 중성지방 전환의 우려를 고려해야 할 것이며 83.2%가 카페인 함유 음료를 음용하므로 혈압상승 및 철분흡수의 방해가 우려된다. This study was performed to investigate the correlations among physical anthropometric measurement, diet intakes, physical fitness test, and serum lipids in eight sedentary women(control group), and twenty seven exercising women(aerobic groups), aged 35∼45 years. The results of the study are as follows : 1) systolic blood pressure(SBP) and diastolic blood pressure(DBP) of aerobic groups were lower than sedentary. Pulse rate was decreased according to the length of aerobic periods. Muscular endurance and jump power of all subjects were stronger than standard range, and those of aerobic exercising groups were stronger than control group. Muscular power of the upper half of the body in all subjects were lower than standard range. 2) Daily calorie intakes of all subjects were in the range of recommanded dietary allowances (RDA) for Koreans. But daily protein intakes were higher than RDA. daily cholestrol intakes of all subjects were slightly less than 200∼300㎎, which is normal consumption of Koreans. 3) There was a significant positive correlation between serum TG and daily protein intakes. It was considered that excessive protein intake converted to serum TG. There was not a significant correlation between serum TC and dietary TC. Therefore, dietary TC seemed to have not much effect on serum TC. Physical fitness was negatively related to serum TG, TC, LDL-C, but positively related to HDL-C, HDL-C/TC. It was found that the serum lipids could be changed better according to improving the physical fitness. There were significant positive correlations between SBP and serum TC, LDL-C. (According to this results), the higher SBP, the higher serum TC, LDL-C tended to be. There were significant positive correlations between sit up and weightless with exercise r=0.7(p<0.001), push ups and weightless with exercise r=0.5(p<0.001). It was considered that muscle strengh could be improved according to the weightless. 4) The purpose of exercise in aerobic groups was rather promoting health than reducing body fatness. Most of all subjects (83.2%) drank caffeine-contained beverage therefore, we should concern about that absorption of Fe could be interrupted and blood pressure could be elevated by caffeine.

        중년여성의 에어로빅댄스의 수행기간이 혈청 HDL-Cholesterol에 미치는 영향

        에어로빅 댄스에 의한 혈청지질의 변화, 특히 에어로빅 운동 수행기간에 따른 혈청 HDL-C의 변화를 알아보기 위해 서울에 거주하는 35명의 중년여성(35∼45세)을 대상으로 체위측정 및 혈청지질 성분을 분석하였다. 즉 운동을 하지 않는 좌식생활자 8명을 control군으로 하고 에어로빅 댄스를 하는 자 27명을 2∼3개월 수행자군 (AⅠ군), 4∼10개월 수행주군 (AⅡ군), 1년 이상 수행자군(AⅢ군)으로 나누어 그들의 혈청내 total cholesterol, triglyceride, HDL-cholesterol의 농도를 측정한 바 다음과 같은 결과와 결론을 얻었다. 1. 혈청 TG농도는 에어로빅 수행군이 좌식생활자(C군)에 비해 현저하게 낮게 나타났으며(p<0.001) 에어로빅 수행기간이 길수록 낮아졌지만 유의적인 차이는 없었다. 2. 혈청 TC농도는 에어로빅 수행군이 좌식생활자에 비해 낮게(10%) 나타났으나 통계적으로 유의적인 차이는 없었으며 에어로빅 수행기간에 따른 구룹간의 혈청 TC의 농도도 유의적인 차이가 없었다. 3. 혈청 HDL-C농도는 2∼3개월 에어로빅 수행자가 좌식생활자들에 비해 유의하게 높았으며(p<0.05) 에어로빅 수행기간에 의한 구룹간의 HDL-C농도는 유의하게 차이를 나타냈다(p<0.05). 즉 에어로빅 수행 기간이 길수록 혈청 HDL-C농도가 높은 수치로 나타냈다. This study was designed to find out the effects of aerobic exercise on the serum lipids in the middle-aged women. The effects of aerobic dancing on serum total cholesterol (TC), triglyceride(TG) and HDL-cholesterol(HDL-C) were studied in eight sedentary women(control group) and twenty seven aerobic exercising women(aerobic group), aged 35∼45yrs. Aerobic exercising subjects were divided into 3 group; 2 to 3 months exercising group(AⅠ), 4 to 10 months exercising group(AⅡ), over 1 year exercising group(AⅢ) according to the periods of exercise. The serum lipid levels of aerobic exercising groups(AⅠ, AⅡ, AⅢ) were compared with those of control group. The results statistically analyzed were summarized as follows; 1) The serum TG levels of aerobic groups decreased very significantly compared with those of control group(p<0.001) and tended to be lower with the increase in aerobic periods. But there were no significant differences among aerobic groups by ANOVA. 2) The serum TC levels of aerobic groups decreased compared with those of control group and tended to be lower with the increase of aerobic periods. But there were no significant differences among groups. 3) Serum HDL-cholestrol level of AⅠ group was elevated significantly compared with that of control group and significant difference was observed according to the aerobic periods : AⅢ group exhibited higher serum HDL-cholesterol values than AⅡ group, and AⅡ group higher than AⅠgroup.

        뽕잎머핀에 대한 관능평가 및 이화학적 특성

        This study was carried out to evaluate the sensory evaluation of the muffins with mulberry leaf powder as well as their chemical characteristics. The muffins were prepared by adding 0%, 1%, 2% and 3% mulberry leaf powder to the recipe. As a result of the sensory evaluations, the color, flavor and texture of the muffins of 2% mulberry leaf powder were found to be much better than those of the other groups. In the chemical composition analysis, increasing the mulberry leaf powder led to a significant increase in the content of crude protein, moisture and crude ash, while crude fat was significantly decreased. As the ratio of mulberry leaf powder increased, Ca, Mg, Fe and Zn in the muffins increased proportionally (p<0.05). The lightness value, the redness value and the yellowness value decreased with the increase of mulberry leaves powder content. In a texture analyser test, hardness and cohesiveness decreased as the ratio of mulberry leaf powder increased. The adhesiveness of the muffins with 2% mulberry leaf powder was the strongest of all.
