Prediction of the Shelf-life of Chilled Foods at Various Temperatures

This study was designed to estimate the shelf-life of the popular chilled foods kimbab (rice rolled in dried laver), samgak kimbab (triangular rice rolled in dried laver), eomook (fish surimi, boiled fish paste) mook (acorn-starch jelly), and tofu (soybean curd) in large discount markets and convenience stores. Different types of chilled foods were stored at 5, 7, and 10 for 7 and 28 days, and changes in the total numbers of the aerobic bacteria were monitored. Values of 6 and 7 log cfu/g were used as the standard. Ready-to-eat foods stored at 5 showed a much longer shelf-life compared to storage at 10. The respective percentage increases in the shelf-life observed at both 7 and 5 were kimbab (70%, 171%), samgak kimbab (87%, 143%), soybean curd (46%, 95%), fish surimi (46%, 99%), and mook (45%, 87%). To reduce the microbiological contamination, storages at 7 and 5 are recommended for the increases of 45-88 and 87-171% in the shelf-life of these chilled foods.
Inhibitory activity of minor phlorotannins from <i>Ecklonia cava</i> on α-glucosidase

<P><B>Abstract</B></P> <P> <I>α</I>-Glucosidase is an enzyme that plays a key role in raising blood sugar level and is considered a good target for developing drugs to treat type 2 diabetes. This study was performed to evaluate the inhibition of the catalytic reaction of α-glucosidase by minor phlorotannin derivatives (<B>1</B>–<B>5</B>) from <I>Ecklonia cava</I>. These derivatives demonstrated inhibitory activity, with IC<SUB>50</SUB> values ranging from 2.3 ± 0.1 to 59.8 ± 0.8 μM. Among the phlorotannins identified, compounds <B>2</B> and <B>3</B>–<B>5</B> were revealed to be non-competitive and competitive inhibitors, respectively. Furthermore, a fluorescence-quenching study of receptor–ligand binding was performed to calculate the kinetic parameters (<I>Ksv</I>, <I>Kq</I>, and <I>K</I>). These signal data indicated a 1:1 ratio of ligand–receptor binding. The binding conformations of the phlorotannin ligands were visually solved through molecular simulation. In conclusion, these minor phlorotannins may serve as α-glucosidase inhibitors targeted for the treatment of type 2 diabetes.</P> <P><B>Highlights</B></P> <P> <UL> <LI> Minor phlorotannin derivatives (<B>1</B>–<B>5</B>) were isolated from the ethyl acetate fraction of the ethanolic extract of <I>Ecklonia cava</I>. </LI> <LI> 8,8′-Bieckol (<B>3</B>) and 2-<I>O</I>-(2,4,6-trihydroxyphenyl)-6,6′-bieckol (<B>5</B>) showed α-glucosidase inhibitory activity at about 2.3 μM. </LI> <LI> Compounds <B>2</B>–<B>5</B> inhibited the catalytic reaction of <I>α</I>-glucosidase in non-competitive and competitive manners, respectively. </LI> <LI> The kinetic parameters of compounds <B>2</B>–<B>5</B> were calculated in a fluorescence-quenching study. </LI> <LI> Our molecular docking study suggested the predicted binding position of the ligand with the receptor. </LI> </UL> </P>

Methanol extract of Juncus diastrophanthus (Juncaceae) was found to show potent antioxidant activity. Subsequent activity-guided fractionation of methanol extract of J. diastrophanthus led to the isolation of seven flavonoid compounds, isorhamnetin-3-O-${\alpha}$-L-rhamnopyranosyl(1${\rightarrow}$6)-${\beta}$-D-glucopyranoside, narcissin (1), quercetin-3-O-${\alpha}$-L-rhamnopyranosyl(1${\rightarrow}$6)-${\beta}$-D-glucopyranoside, rutin (2), kaempferol-3-O-${\alpha}$-L-rhamnopyranosyl(1${\rightarrow}$6)-${\beta}$-D-glucopyranoside (3), quercetin (4), quercetin-3-O-${\alpha}$-L-rhamnopyranoside, quercitrin (5), quercetin-3-O-${\beta}$-D-xylopyranoside (6), and luteolin (7). These compounds were isolated for the first time from this plant. Compounds 4 and 7 showed significant antioxidative effects on 1,1-diphenyl-2-picrylhydrazyl, and compound 5 showed significant riboflavin-originated superoxide and xanthine-originated superoxide quenching activities.

<P>The first gold-catalyzed intermolecular coupling of alkynoates and allylic ethers invoking alkoxy addition and [3,3]-sigmatropic rearrangement as the key mechanism has been developed. Remarkably, the reaction showed complete chemoselectivity toward the pathway initiated by the alkoxy addition to alkynes. <P><B>Abstract</B></P> <P>A cross-linked fibrous composite separator was prepared by thermal cross-linking between reactive silica nanoparticles and tri(ethylene glycol) diacrylate on a fibrous polyacrylonitrile (PAN) membrane. The cross-linked fibrous composite separator exhibited a three-dimensional and fully interconnected network structure in which the silica particles were firmly attached onto the PAN nanofibers through the chemical cross-linking. The separator showed good electrolyte wettability and excellent thermal stability at elevated temperatures. A lithium-ion cell composed of a graphite negative electrode, the cross-linked fibrous composite separator soaked with liquid electrolyte and a LiNi<SUB>0.6</SUB>Co<SUB>0.6</SUB>Mn<SUB>0.2</SUB>O<SUB>2</SUB> positive electrode exhibited cycling performance and thermal safety superior to those of a cell prepared with a conventional polypropylene separator.</P> <P><B>Highlights</B></P> <P> <UL> <LI> A cross-linked separator was prepared by using silica particles on fibrous membrane. </LI> <LI> The cross-linked composite separator showed good wettability and thermal stability. </LI> <LI> The cell with cross-linked composite separator exhibited good cycling performance. </LI> </UL> </P>

A polymer porous sheet, which can be applied to diverse wearable devices, has some advantages such as light-weight, high flexibility, high elongation, and so many others. In order to fabricate a porous sheet, water-soluble particles like sugar were utilized frequently, and there has been great advances. However, with our best knowledge, there are not enough reports on the mechanical behavior of porous sheets having different porosity. So, in this work, we tried to find out the relationship between porosity and mechanical deformation of a porous sheet. The process parameters such as a particle size, sheet thickness and PDMS mixing ratio with curing agent were analyzed on the effect of increasing the porosity of a sheet. Also, mechanical deformation of a sheet was tested using a tensile experiment. Through the experimental results, we make a conclusion that a highly porous sheet with thin thickness has high flexibility, and it deformed nearly double elongation comparing to worst one among nine cases.
