The buffer layer of a side-polished fiber-slab coupler was optimized by using a 3-dimensional alternating-direction implicit (ADI) beam propagation method, where the refractive index and the thickness of the buffer layer and the distance between the fiber core and the buffer layer for effective coupling were gained by tuning. For a buffer layer thickness of 0.4µm, a refractive index of the buffer layer of 1.4675, and a distance between the fiber core and the buffer layer of 0.9 µm, we were able to achieve maximum coupling.

A method for obtaining the mode characteristics of a tunable filter by a polymer-dispersed liquid crystal (TSFP) is presented, where the optical characteristics are analyzed using the coupled-mode theory. The TSFP is modeled as a fiber-to-planar waveguide (PWG) coupler with 4 layers, including a fiber cladding layer, a polymer-dispersed liquid crystal (PDLC) as a buffer layer, a PWG layer, and overlay layer. When applied to a 3-layer waveguide without a buffer layer, the proposed model gave more exact solutions for the TSFP. The coupling is easily tuned by using the heat of the electrode, and more occurred for the buffer layer with a higher index of refraction.

The submersion monitoring system based on a reflective side-polished optical fiber submersion sensor with an optical fiber mirror was shown to be an effective alarm system with remote monitoringwhen the drainage capacity of a common utility duct is exceeded due to heavy rainfall. The proposed sensor was connected to an existing installed optical fiber network at a height of 250mm in a common utility duct, and then tested under sample materials (distilled water, river water, sea water, foul water, muddy water, petroleum, edible oil) at a distance of 1km from the sensor for remote sensing. In experiments, the proposed real-time sensor system reduced maintenance cost and improved monitoring efficiency by using a reflection-type side-polished optical fiber submersion sensor efficient for remote monitoring of a common utility duct.
Determination of the phytic acid levels in infant foods using different analytical methods

<P><B>Abstract</B></P><P>The analytical methods of phytic acid determination in infant foods were evaluated, and then, the method suggested in this study was applied to determine the phytic acid level in commercially available infant foods for both the flour and paste types. The spectrophotometric (AOAC and Wade reagent) and chromatographic (GC-FID and HPLC) methods were compared, and the spectrophotometrically determined value showed higher phytic acid levels than that of the chromatographic methods (<I>p</I><0.05). The AOAC method showed a complete recovery for the infant foods after spiking the phytic acid, while a poor recovery was observed by GC-FID and HPLC-RI. The average levels of phytic acid in the infant foods determined by the AOAC methods were 363mg/100g for the flour type and 46.3mg/100g for the paste type on a wet basis. When the phytic acid level was converted into a dry basis, the phytic acid levels of the paste types were much higher than that of the flour type. Thus, the amount of phytic acid intake per meal was calculated, and the phytic acid level per meal was high in the paste type as wells as the flour type. Therefore, a problem with phytic acid might be considered for the infant foods of both the flour and paste types.</P>

The evolution of Korean fish fermentation technology was reviewed from the old literature. and the on going proceses were surveyed. The principles involved in the traditional fermentation methods were explained by the recent acientific findings. The fish fermentatlon technology can be classified into two groups: jeot-kal process, where salt is the only material added to the fish for fermentation and aik-hae process, where cooked cereal, garlic and red pepper powder are added to the salted fish. A total of 46 kinds of jeot-kal was identifed in a survey, depending on the raw materials used. The characteristic feature of Korean jeot-kal process is to produce fermented products which still has original shape after 2·3 months of fermentation to be used for add-dishes of rice meal, as well as fish sauce by keeping these products for longer time(over 6 months) for severe enzymematic hydrolysis to be used for the subingredient of Kimchi(Korean fermented vegetable food). The taste of Jeot-kal is formed by the protein hydrolysates due to the action of salt-tolerant Pediococcus, Bacillus, Halobacterium etc. When the taste of joet-kal deteriorates, yeasts appear to dominate. In aki-hae fermentation, the safety of preserved fish is kept by the rapid decrease in pH resulting from the acid fermentation of added cereals. The roles of cid forming bacteria and proteloytic bacteria are important. The fermentation is completed in 2 weeks and the excess production of acid during prolonged storage limits the taste acceptability. The fish fermentation technology in Korea stands at important position in Korean food science and technology, since the processes of jeot-kal and soysauce have same root in the principle of microbial proteolysis and the processes of aik-hae and Kimchi in the microbial acid production principles.
Reflection-type Fiber Submersion Sensor Using an Optical Fiber Mirror

A side-polished optical fiber coupler exhibits band-rejection filtering characteristics at a coupling wavelength, and the coupling wavelength is sensitively shifted by the refractive index of the external material on the upper plane waveguide (PWG). This property has already been applied to the sensing of various physical parameters, such as the refractive index of liquids, temperature, humidity, and water etc. A reflectiontype side-polished optical fiber submersion sensor with an optical fiber mirror in a manhole is proposed. When this sensor is submerged into distilled water in a manhole and the measurement is made at about 1㎞ from the sensor, the throughput power gain is changed by about 2.04㏈ at 1540㎚ and the resonance wavelength shifts from 1540㎚ to 1541.6㎚.
