‘후지’ 사과박 분말 함유 머핀의 품질 및 항산화 특성

본 연구에서는 ‘후지’ 사과박을 첨가하여 제조한 머핀의 품질 및 항산화 특성에 대하여 분석하였다. 머핀에 밀가루 대신 사과박을 첨가함으로써 밀가루 함량이 적어져 글루텐 형성이 약화하면서 머핀의 높이, 굽기손실률, 부피 및 비용적이 감소하였고, 사과박에 함유된 유기산 및 phytochemicals에 의해 pH는 감소하였다. 그리고 머핀의 색도는 사과박 고유의 색에 영향을 받아 사과박 함량이 증가할수록 적갈색이 진해지는 경향을 나타내었다. 또한 사과박 첨가 머핀의 조직감에서 사과박 함량이 증가할수록 밀가루의 글루텐 형성이 약화하여 가스 포집 능력이 저하되면서 부피가 감소하고 밀도가 증가해 경도가 증가하는 경향을 나타내었다. 또한 사과박 첨가에 따른 머핀의 총 폴리페놀 함량과 ABTS 라디칼 소거능 및 DPPH 라디칼 소거능이 증가하여 머핀의 항산화 성분 및 효능이 향상되었고, 총 식이섬유 함량도 증가함을 확인할 수 있었다. 그리고 ‘후지’ 사과박 첨가 머핀의 높이, pH 및 색도는 머핀의 항산화 특성과 음(-)의 상관관계를 나타냄을 알 수 있었다. 따라서 본 연구에서는 사과박을 밀가루 대신 첨가함으로써 머핀의 품질 및 항산화 특성을 향상함을 확인할 수 있었으며, 제빵 분야에서 밀가루 대체 소재로서 사과박의 이용 가능성 및 부가가치 향상을 위한 정보를 제시하였다. Muffins were prepared with various amounts of ‘Fuji’ apple pomace powder, and the quality and antioxidant properties of the muffins were investigated. The muffins were prepared with sugar, butter, eggs, milk, wheat flour, and 5, 10 and 15% (w/w) ‘Fuji’ apple pomace powder. The height, pH, volume, specific volume, baking loss rate, texture, and chromaticity, as quality properties; and the total polyphenol content, 2,2’-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, as the antioxidant properties of muffin containing various amounts of apple pomace powder were investigated. First, in the quality properties, the height and pH of the muffin decreased significantly with increasing amount of apple pomace powder (P<0.05). Regarding the texture and chromaticity of muffins prepared with increasing amounts of ‘Fuji’ apple pomace powder, the hardness and L (bright) and b (yellow) values decreased, whereas the cohesiveness and a (red) value increased (P<0.05). The total polyphenol content, DPPH, ABTS radical scavenging activities, and total dietary fiber content increased with increasing amount of apple pomace powder (P<0.05). These results support the possible use of apple pomace powder as baking foods in the food industry because the addition of apple pomace powder enhances the quality and antioxidant properties of muffin, and provides better information for improving the benefits of apple pomace.

영화 ‘우리 생애 최고의 순간’ 개봉 전ㆍ후 핸드볼 종목의 신문매체 보도경향에 관한 비교연구

본 연구는 신문매체에서 생산하는 핸드볼 종목에 대한 기사를 조사하여 시기별 보도 추이를 분석하는데 목적이 있다. 특히 대중의 신드롬을 일으킨 영화 ‘우리 생애 최고의 순간’이 신문 기사에는 어떻게 반영되고 있으며 핸드볼 종목이 신문매체에서 어떠한 형식과 내용으로 생산, 분배되고 있는지를 탐색하기 위하여 영화 ‘우생순’을 전후로 열렸던 2004 아테네올림픽과 2008 베이징올림픽 시기 동안의 종합 중앙일간지에 보도된 핸드볼 관련 기사를 조사하여 내용분석을 실시하였다. 수집된 기사들은 설정된 분석유목으로 분류하여 각 기사의 내용을 코딩화한 다음 분석 목적에 따라 전산처리하였으며, 빈도분석과 대응일치분석이 본 연구에 사용되었다. 그 결과 보도빈도 및 글자 수, 보도게재면, 기사유형, 보도태도, 필자에 있어 보도경향의 변화를 확인하였으며, 베이징올림픽 본선 기간 중 보도된 핸드볼 관련 기사 중 단어 ‘우생순’을 게재한 기사의 빈도가 높아지는 경향을 확인하였다. The purpose of this study is to analyze the progress of reporting according to times by examining the report articles on the handball event that are produced or reproduced by the news media. Especially, a content analysis was conducted by analyzing the report articles that came out during the 2004 Athens Olympic and the 2008 Beijing Olympic that were held around the release of the movie 'The Best Moments of Our Lives' in order to find how the movie, which became a social syndrome of the public, is being reflected in the news articles and research what kind of contents are being produced and distributed through the use of which methods by the news media for the report articles of the handball event. The collected articles have been computerized according to analytical purposes after coding the content of each article by classifying the articles according to the established categories for analysis, and frequency analysis, correspondence analysis have been used in this study. As a result, the reporting trend(the report frequency, the average number of characters, print section, the content aspect of the type, the attitude of reporting, the article author) change has been confirmed. And among the handball related articles during the final selection period of the Beijing Olympic, the term 'Woo-Sang-Soon' print frequency increased.

2004-2009년 종합스포츠잡지 표지모델의 경향성 분석

The purpose of this study is to investigate whether sports media make indiscriminate reports about the neglected class of people. Accordingly, the content analysis was conducted by collecting the cover page of 3 domestic/foreign sports magazines, namely Sports On, Sports 2.0 and Sports Illustrated and consequently the following outcomes came out. The type and gender of the cover models were all popular types and mostly male in those 3 magazines. The backgrounds of the cover page were the stadium for Sports On and Sports Illustrated, and the studio for Sports 2.0. For the make-up of the cover models, all the 3 magazines used the type-related images. For the frame motion of the cover models, domestic magazines preferred to use half-length shots whereas the foreign magazine Sports Illustrated seemed to prefer full-length shots and the ratio of mug shots was relatively and remarkably lower than those of domestic magazines. In addition, all those 3 magazines commonly showed a variety of background, make-up and frame motion in popular and swimming among unpopular types.

태권도 수련 초등학생의 수련 몰입과 자아탄력성, 문제행동의 관계

The purpose of this research is to examine the effect of Taekwondo training during a child’s development process by establishing a casual relationship that exists between a child’s sport commitment to its training and ego-resilience with problem behaviors. In order to achieve this goal, the data is analyzed and collected from 201 elementary school students who are training in Taekwondo. The following results are obtained from this research. First, higher the students are committed to Taekwondo training, higher their ego-resilience are. Thus, It shows that they have a higher frequency of the internalized problem behaviors. Conversely, no significant difference was found with respect to externalized problem behaviors statistically. Third, the higher the student’s ego-resilience, the lower the frequency of the internalized and externalized problem behaviors. Therefore, the research is confirmed that the students’ Taekwondo training and egoresilience directly and indirectly affect problem behaviors. It is believed that the empirical data obtained from this research proved its effect and the value of Taekwondo training as a material for exploring its aftermath.

여자 중학교 체육교사의 언어적 · 비언어적 커뮤니케이션과 수업태도 및 수업만족의 관계

The purpose of this study is to identify relations between Verbal Communication, Non-Verbal Communication, Learning Attitude and Classes Satisfaction in girls middle school physical education teachers. To achieve the purpose, the study conducted a survey on those students who studied in girls middle school with questionnaires consisting of 24 items. As a result, a total of 253 questionnaires were selected using a convenience sampling method for the final analysis. For data analysis, a frequency analysis, reliability analysis, confirmatory factor analysis, correlation analysis, structural equation modeling analysis and bootstrapping were carried out using SPSS Statistics 18.0 and AMOS 18.0 programs. The conclusions are made as follows; first, verbal communication had a positive (+) influence on learning attitude; second, non-verbal communication had a positive (+) influence on classes satisfaction; third, verbal communication had not influence on classes satisfaction but it had indirect effect on classes satisfaction through learning attitude; forth, non-verbal communication had not influence on classes satisfaction but it had indirect effect on classes satisfaction through learning attitude; fifth, learning attitude had a positive (+) influence on classes satisfaction.

The purpose of this study was to examine whether exercise participation of the elderly acts as a major mechanism for the socioeconomic status and the prevalence of chronic diseases in a rapid aging phenomenon. In other words, the purpose of this study is to identify the relationship between socioeconomic status, exercise participation and the prevalence of chronic diseases in the elderly, and to identify the direct and indirect roles of exercise participation in these relationships. The analysis data used in this study were 2,028 elderly people over 65 years of age from the National Health and Nutrition Examination Survey in 2017. Our findings are as follows. First, the higher the socioeconomic status of the elderly, the higher the exercise participation. Second, the higher the socioeconomic status of the elderly, the lower the prevalence of chronic diseases of circulatory system diseases, musculoskeletal disorders, and endocrine and metabolic disorders. Third, the higher the exercise participation in the elderly, the lower the prevalence of chronic disease of musculoskeletal disorders, and exercise participation serves as a parameter to amplify the negative effects between socioeconomic status and the occurrence of musculoskeletal disorders. The results of this study verified the importance of exercise in elderly and suggested the necessity of social welfare intervention measures for the prevention of chronic diseases of the elderly.

본 연구는 태권도학과 재학생들의 사회적 지지와 학과만족 및 진로의식의 관계 규명하는데 목적이 있다. 이러한 연구의 목적에 따라서 경기도 소재 K대학의 체육대학 태권도학과 재학생을 대상으로 41문항으로 구성된 설문지를 편의표본추출법을 이용하여 총 202부의 자료를 최종분석에 사용하였다. 자료 분석은 SPSS Statistics 20과 AMOS 18.0 프로그램을 사용하여 빈도분석, 신뢰도 분석, 탐색적 요인분석, 확인적 요인분석, 상관관계 분석, 구조방정식 모형분석을 실시하였다. 이에 따른 결론은 다음과 같다. 첫째, 태권도학과 재학생들의 사회적 지지는 학과만족에 영향을 미쳤다. 둘째, 태권도학과 재학생들의 사회적 지지는 진로의식에 영향을 미쳤다. 셋째, 태권도학과 재학생들의 학과만족은 진로의식에 영향을 미쳤다. 끝으로, 후속연구에서는 태권도학과 학생들의 진로와 관련된 다양한 변인들을 연구하여 학생들의 진로개발 및 진로에 실증적인 도움을 가져올 수 있는 다각적이고 실증적인 연구가 수행되기를 기대해 본다. The necessity and purpose of this study are to determine relationship between social support, major satisfaction and career awareness of students in Department of Taekwondo. In order to achieve the purpose of this study, data was collected and analyzed undergraduate students majoring in Taekwondo at College of Physical Education, K University located in Gyeonggi-do. The research tool consists of question paper including 41 questions. Convenience sampling method among non-probability sampling methods was adopted and total 202 question papers used for this study. The data was collected and analyzed by such as Frequency Analysis, Reliability Analysis, Exploratory Factor Analysis, Confirmatory Factor Analysis, Correlation Analysis, Structural Equation Modeling Analysis using SPSS Statistics 20 and AMOS 18.0 Programs. The conclusions obtained from those analyses are as follows. First, social support to the students in the Department of Taekwondo had effects on satisfaction of major and department. Secondly, social support to the students in the Department of Taekwondo had effects on career awareness. Thirdly, satisfaction of major and department had effects on career awareness of students in the Department of Taekwondo. Finally, it is expected to see the subsequent studies may investigate diversified variables related to the career of the students in the Department of Taekwondo so that multi-dimensional and empirical studies can be performed to provide positivistic help for students in career development and the way forward.
