The effects of several sources of dietary fiber on the water and sodium (Na) metabolism of rats were investigated. Wheat bran (D2), pure cellulose (D3), and ground rice straw (D4) replaced corn in the control diet (D1) at the level of 10%: pectin (DS), which is water-soluble, replaced corn at 5% level. In the growth trial with 45 female weanling rats (Sprague Dawley strain), the growth rate of DS was significantly (P≤.05) lower than those of D1 and D2. No difference in growth rate was found among D3, D4 and D5. With regard to water intake of growing rats, there was no difference among all treatments. In metabolism trial with 30 adult male rats, the dry matter (DM) digestibilities of D3 and D4 were significantly lower than those of D1, D2 and D5. Similar DM digestibilities were found in D1, D2 and D5. As in the case of growing rats, no difference was found in water intake among five treatments. With regard to water holding capacity (WHC) of feces, D3 and D4 showed significantly larger values than D2. The WHC of D1 and D5 were even lower (P≤.05) than D2. The bulls density (BD) of feces was exactly in the inverse relationship with WHC. The BD of D3 and D4 were significantly smaller than the other treatments. D1 and D5 showed significantly larger BD than did D2. In terms of Na excretion routes of urine and feces, D1 and DS excreted significantly more Na via urine than did D3 and D4. The D2 showed intermediate values in this respect. No difference was found in Na^+ and osmotic concentrations either in plasma or urine among dietary treatments. With regard to plasma clearances, there was no difference among all treatments in C_(Na)^+, C_(osm) anti C_(H₂O), The C_(H₂O) values from all treatments showed negative values, indicating that the rats were removing excess solutes in body fluids via urine. Among the water-insoluble fibers, wheat bran appeared to be less fibrous than pure cellulose or ground rice straw in several respects, i.e., growth rate, feral WHC and BD, and the route of Na excretion. Except that it inhibits the growth rate of young rats, pectin brought about the same effect as did the control diet, indicating that the gut microflora fermented the water-soluble pectin. Different nutritional and physiological effects might be expected from rats fed dietary fibers having different solubility in water.

효모(Saccharomyces cerevisiae, SC)의 구성성분인 yeast cell-extract(YE)과 yeast cell-wall(CW)이 육계의 생산성, 장내융모 발달 및 혈청 콜레스테롤에 어떠한 영향을 미치는지 알아보고자 사양실험을 실시하였다. 육용 수평아리(Ross) 240수를 4처리 6반복, 반복당 10수를 공시하였다. 옥수수 및 대두박 위주 기본사료에 SC, YE 그리고 CW를 각각 0.5, 0.25 그리고 $0.25\%$로 첨가한 실험사료를 제조하여 육계에 5간 급여하였다. 효모의 급여는 육계의 생산성에 어떠한 영향을 미치지 못하였으며, villus height, crypt depth 및 villus:crypt ratio 역시 처리간 유의성은 발견되지 않았다. SC 급여 받은 육계의 혈청 콜레스테롤은 대조구에 비하여 $19.7\%$ 감소(P<0.05)를 나타내었다. 특히, 효모성분 중 YE가 혈청 콜레스테롤을 유의적으로 낮추었다(P<0.05). 결론적으로 사료내 효모의 첨가는 육계의 혈청 콜레스테롤을 유의적으로 감소시켰으며(P<0.05), 콜레스테롤을 감소시키는 성분은 효모의 세포내용물에 포함되어 있는 것으로 본 연구결과 알 수 있었다. An experiment was conducted to investigate whether dietary yeast (Saccharomyces cerevisiae, SC) and its' structural components, i.e., yeast cell-extract (YE) and yeast cell-wall (CW) could influence growth performance, ileal morphology and serum lipids of male broiler chickens. There were four dietary treatments, each consisting of 6 replicates (10 birds per replicate). Chickens were fed a corn-soybean meal base control diet and diets containing SC ($0.5\%$), YE ($0.25\%$) and CW ($0.25\%$), respectively for 5-wk-experimental period. Dietary SC, YE and CW versus the control diet did not affect growth performance of male broiler chickens. Ileal morphology as to villus height, crypt depth and villus:crypt ratio of birds fed on the control diet was not significant from those fed on diets rich in SC, YE and CW, respectively. Dietary SC significantly lowered (P<0.05) serum total cholesterol by on average $19.7\%$ as compared to the control group. In addition, chickens fed on diets with either YE or CW lowered serum cholesterol by on average 15.3 and $12.5\%$, respectively as compared to the control albeit that the former only reached statistical significance. In conclusion, our study observed the hypocholesterolemic effect of SC in male broiler chickens. Moreover, YE, i.e., an extract of intracellular components of SC contains active molecules that are responsible far lowering serum cholesterol concentrations, but their identification at the molecular level needs to be assessed.

This study was conducted to determine the optimum level of dietary salt in barley-based diets for growing chickens. In Feeding Trial 1, day-old 180 Rhode Island Red chickens were fed corn- and barley-based diets, each containing 0.1, 0.3 and 0.5% level of added salt, for 3 weeks. It was found that the growth rate of barley-fed chickens improved significantly(P≤.05) as the added salt level increased. The growth rate of corn-fed birds was not affected by the salt level. The result of Feeding Trial 1 also indicates that the drop in energy value of diets caused by the use of high levels of barley can be overcome by the proper level of fat supplementation. In Feeding Trial 2, day-old 200 chickens(Maniker strain) were fed barley-based diets containing 5 levels (0.05, 0.2, 0.4, 0.6 and 0.8%) of added salt for 4 weeks. The growth rates of chickens kept increasing until plateaued at 0.6% salt level. From the results of Feeding Trials 1 and 2, it was found that the optimum level of added salt in barley-based diets for growing chickens was ∼0.6%, 2 to 3 times higher than the levels usually added. Data from the Metabolism Trial with 18 adult SCWL roosters fed diets used in Feeding Trial 1 showed that barley contains more fiber than does corn. The possible influence of high fiber contents in barley-based diets on the sodium requirement of chickens was discussed.
