Cheju`s local foods are various but Island being geographically surrounded by water, sea-foods play a greater part in the diet that is quite different from the mainland Most of dishes are prepared from local foods and the marine products. That traditional food that have been developed through the lifestyle are now becoming the great interest to both foreign and domestic guests. In this research, we have concluded that developing a cheju`s traditional food manu and local manu cooking method. 1. Improvement of cooking method. -development of cheju`s traditional Food material and spice. 2. Use not raw fish-boiling, grilling, frying 3. Improvement of cheju`s local Food`s name. 4. Use the only Boneless fish. 5. taste reformation of Fermentation Food-Masking the TMA etc. 6. Use the many Spice in local food.

In this study, the prevalence of microbiological hazard on water purifiers at lunchroom in child care center was investigated. A total of 49 water purifiers and their purified cold water were sampled to test about the total aerobic bacteria, coliform bacteria, Bacillus cereus, Staphylococcus aureus, and Salmonella spp. Total aerobic bacteria was detected over 2.0 log CFU/mL in 6 out of 49 purified cold water (12.2%), ranged from 2.0 to 2.4 log CFU/mL, and the average number of total aerobic bacteria was showed to be 3.3 log CFU/drain spout. The drain spout turned out to be a major contaminant in water purifier and needs to be improved. Coliform bacteria were also detected in 7 out of 49 cold faucets (14.3%) and 7 out of 49 drain spouts (14.3%), but not detected in purified cold water. All samples were not contaminated with the pathogens tested in this study, except for B. cereus, which was contaminated on 2 out of 49 cold faucets (4.1%) and 4 out of 49 drain spouts (8.2%). All of B. cereus isolates produced enterotoxin, such as heamolysin BL enterotoxin (HBL) or non-heamolytic enterotoxin (NHE). The HBL was detected in 5 out of 6 B. cereus isolates (83.3%), including B. cereus PCF-11 and B. cereus PDS-30 isolate only produced NHE (16.7%). These results showed that the sanitary conditions of cold faucets and drain spouts should be improved promptly.
도서관 장애인 자료실 OCR기기 통합 가이드 시스템 구축

본 논문에서는 도서관 장애인자료실의 OCR기기들을 통합 관리하고 이용할 수 있도록 안내하는 시스템의 분석과 프로토타입을 설계해 제안한다. OCR기기 통합 가이드 시스템을 통해서 소수를 대상으로 하던 일대일 사서 대면 형식의 안내 서비스 한계를 보완하고 인력 자원과 순환의 효율성을 추구하고자 한다. OCR기기통합 가이드 시스템 연구를 통해 도서관 장애인자료실을 이용하는 모든 사람들이 신체적 장애 및 환경과 관계없이 균등한 독서 문화 활동을 자발적으로 실천할 수 있을 것이다. 그러면 장애인자료실 본연의 운영취지를 살릴 수 있음은 물론, 더 나아가 효율적인 시스템을 통해서 도서관이 ‘만인을 위한 민주적 공간’이라는 비전을 도모할 수 있을 것이다.
감귤류 종자 추출물의 N-nitrosodimethylamine 생성억제에 관한 연구

The effect of inhibition on N-nitrosodimethylamine (NDMA) formation by methanol extracts from 6 kinds of citrus seed (Citrus sunki, Citrus natsudaidai, Citrus suleata, Citrus tangerina, Citrus grandis and Citrus obovoidea) were investigated. The contents of moisture, crude protein, crude fat, carbohydrate, ash, flavonoid and totat phenol in citrus seeds were 4~6, l1~15, 32~46, 22~45, 2~4%, 12~24mg% and 53~133㎎%, respectively. The solid contents and yield of citrus seed extracts were 0.8~1.0 and 0.7~1.1%, respectively. Nitrite-scavenging activity by methanol extracts from citrus seeds increased with increasing extract dosage. Furthermore, the nitrite scavenging activity was pH dependent being the highest at pH 1.2 (42.7~96.9%) and the lowest at pH 6.0 (19.9~62.6%). Scavenging effects of nitrite by reaction time showed high effects under 3hr reaction time. The inhibition effect of NDMA formation by the citrus seed was strengthened as the amount of extract increased. The inhibition rate of methanol extracts from citrus seeds on NDMA formation showed 1.2~39.8%, 21.3~60.1% and 47.4~94.0%, according to add 1, 3 and 5㎖, respectively. Therefore, the inhibition effect of NDMA formation by the citrus seed was strengthened as the concentration of extract increased.

알로에 베라(Aloe vera)와 아보레센스(Aloe avoresence)를 증류수, 메탄올, 에탄올, 헥산 및 에칠에테르로 각각 추출한 후 이들 용매별 추출물을 수용성 분획과 비수용성 분획으로 분리하여 NPD메 대한 항변이원성을 검색하였다. 알로에 베라와 아보레센스의 수용성 획분 모두 직접변이원 물질인 NPD에 대하여 4∼56%의 항변이 효과를 보였다. 반면, 알로에 베라의 용매별 비수용성 분획은 TA97 및 TA98 균주에서 54∼100%의 높은 활성을 보였다. 특히 에칠에테르 추출물은 두 시험균주 모두에서 항변이 활성이 높게 나타났다. 알로에 아보레센스의 비수용성 분획은 74∼100%의 높은 항변이 활성을 나타내었는데, 시료를 plate당 20 ㎕ 투여했을 때 모든 추출물들이 두 시험균주에서 90% 이상의 높은 항변이 활성을 나타내었다. Desmutagenic effects of water-soluble and water-insoluble fractions from Aloe vera and Aloe avoresence with different solvents against the mutagenicity of 4-nitro-o-pheny1enediamine(NPD) were investigated. Desmutagenic effects of water-insoluble fractions from Aloe vera and Aloe avoresence against NPD-induced mutations in TA97 and TA98 strains were very high compared with water-soluble fractions: whereas water-soluble fractions from two kinds Aloes showed the inhibition effects of 4∼56% water-insoluble fractions showed the activities of 54∼100% for Aloe vera and 74∼100% for Aloe avoresence. Especially, the addition of 20 ㎕ of water-insoluble fractions per plate snowed high activities up to 90% in TA97 and TA98 strains.
