This study was conducted to investigate the effect on the growth of soybean sprouts under control of various water supply, and to develop the culture methods for the production of clean soybean sprouts. The yield and characteristics of soybean sprouts was more affected by the watering interval(hours) than the quantity of supplied water (minute). However, the hypocotyl/whole length ratio of soybean sprouts was more affected by the quantity of supplied water than the yield, whole length and hypocotyl length of soybean sprouts. The hypocotyl/whole length ratio of soybean sprouts was increased about 55∼63% under the control of 2hrs-4min water supply, and about 57% under the 4hrs-4min water supply, respectively. The α-naphthylamin oxidation activity was tested on the soybean sprouts under the watering interval and quantity of water supply. The α-naphthylamin oxidation activity was decreased after 7 days of germination, and the activity of cotyledon removed soybean sprouts was lower than that o� intact soybean sprouts. The α-naphthylamin oxidation activity had the signficant quadratic regression with the yield, whole length, hypocotyl length, and hypacotyl/whole length ratio. Hardness and chewiness of the boiled soybean sprouts was more improved by 2hrs-4min and 4hrs-4min water supply than those of others water supply controls.

The objective of this study was to examine the physicochemical characteristics of the soybean sprouts according to culture period. The texture characteristics and extensibility of hypocotyl of cooked soybean sprout during culture were increased continuously. Also the acid detergent fiber(ADF) contents of soybean sprout was increased during culture periods. The cellulose contents increased from 8.52% at 3rd day to 17. 16% at 8th day on dry basis. Vitamin C and total amino acid content were the highest at the 5th day. In sensory evaluation, preference score of 6th day was the highest during culture period. The more culture period is short, the more preference score is high.
작약(Paeonia lactiflora) 뿌리로부터 항산화활성 물질의 분리

On the purpose of development of novel antioxidative compounds from natural sources, 38 plants expected to show antioxidant activity have been examined concerning DPPH radical scavenging activity. Among them, thirteen plants, including Paeoniae radix, the root of Paeonia lactiflora, exhibited the activity. In order to isolate active component, the root was extracted in 80% aqueous MeOH and solvent fractionated with EtOAc, n-BuOH and water, successively. Silica gel column chromatographies of the EtOAc and n-BuOH fraction exhibiting antioxidant activity. were repeatedly carried out with monitoring by DPPH assay to afford three active compounds. On the basis of spectral data and the chemical characteristics, the structures of the compounds were determined as (+)-catechin, 1,2,3,4-tetragalloyl-6-digalloyl-β-D-glucose and 1,2,3,4,6-penta-galloyl-β-D-glucose.
생강(Zingiber officinale R.) 근경으로부터 항산화 활성물질의 분리

The root of Zingiber officinale R. was extracted with 80% aqueous MeOH, and the concentrated extract was fractionated with EtOAc, n-BuOH and water phases. The EtOAc fraction exhibited most potent antioxidant activity among them, and two active compounds were isolated by activity-guided separation using repetitive silica gel column chromatography. On the bases of spectral data and the chemical characteristics, the structure of the compounds were determined as 6-shogaol and 12-shogaol, respectively. The EC_(50) values of them were evaluated as 26.4 μM and 22.5 μM, respectively, where these values were higher than the commercial antioxidants, such as, BHA, BHT and α-tocopherol.
