담금원료(原料)에 따른 고추장의 성분(成分)과 품질(品質)에 관(關)한 연구(硏究)

전분질원료(澱紛質原料)인 쌀, 찹쌀, 보리쌀, 밀쌀 옥분을 주원료(主原料)로 해서 고추장을 담금하고 숙성기간 중의 환원당(還元糖), 아미노태질소(態窒素), ethanol의 소장(消長)을 경시적(經時的)으로 관찰(觀察)하고 숙성(熟成)후의 고추장의 성분분석과 품질을 시험한 결과(結果)는 다음과 같다. 1) 고추장 담금용으로 제조(製造)한 각종(各種) 국중(麴中)에서 단백질분해효소력가(蛋白質分解酵素力價)는 밀쌀국(麴)이 가장 강력하였고 당화력(糖化力)은 찹쌀국(麴)이 가장 강력하였다. 2) 숙성기간중(熟成期間中) 수분, 조단백, 조지방, 식염은 변동(變動)이 거의 없었으며 총당(總糖)은 감소되었다. 3) 담금 60일(日) 후의 아미노태질소(態窒素) 생성량(生成量)은 밀쌀 고추장이 가장 많았으며 환원당(還元糖)과 etbanol의 생성량(生成量)은 찹쌀 고추장이 가장 많았다. 4) 담금 60일(日) 후의 아미노산(酸) 분석(分析) 결과(結果)는 다음과 같다. I) 각 시험구 같이 총(總) 17종(種)의 아미노산(酸)이 검색(檢索)되었다. II) 총(總)아미노산(酸)에 대한 유리(遊離)아미노산(酸)의 비율(比率)은 35%였다. III) 유리(遊離)구루타민산(酸)의 함량(含量)은 다른 아미노산(酸)보다 그 구성비율(構成比率)과 유리율(遊離率)이 높았으며 유리(遊離) metbionine의 함량(含量)은 낮았다. IV) lysine 의 함량(含量)은 높은 반면에 histidine 과 glycine 의 함량(含量)은 흔적 정도로 적었다. 5) 관능검사(官能檢査) 결과(結果) 맛은 밀쌀 고추장이 가장 좋았으며 향기와 색은 찹쌀 고추장이 가장 좋았다. 옥분 고추장은 맛, 향기, 색이 모두 나쁘게 판정되었다. Red pepper paste were prepared by using various raw materials such as rice, glutinous rice, polished barley, polished wheat and corn powder, and their chemical compositions including reducing sugar, amino-N and ethanol were analyzed during the period of aging in order to elucidate effects of these starchy materials on the compositions and qualities of the products. The results obtained are summarized as follows: 1) Koji of these materials were manufactured respectively by inoculating a strain of Asporyzae and their activities of protease and saccharifying amylase were determined. Wheat koji was found to have the highest level of protease activity among the koji, while glutinous rice koji had the strongest amylase activity. 2) Contents of moisture, crude protein, crude fat, and sodium chloride in the red pepper pastes were not changed significantly, however total sugar content was decreased during the period of aging. 3) After 60 days of aging, the highest amount (160mg%) amino nitrogen was detected in the red pepper paste of polished wheat, but higher levels of reducing sugar and ethanol contents were detected in that of glutinous rice. 4) Amino acids in the products were analyzed after 60 days of aging: a) Total 17 amino acids were detected. b) Free amino acid ratio to total amino acid content was approximately 35 percent in average. c) Free glutamic acid was higher than any other free amino acid In the amount and free ratio, but free methionine was lower. d) Lysine content was relatively high, while histidine and glycine were detected in trace. 5) Sensory tests including color, odor and taste on the products resulted in the highest mark for the red pepper paste of glutinous rice but in the lowest mark for that of corn powder.
신체활동이 게임중독수준에 따른 고등학생의 스트레스호르몬에 미치는 영향

This study aims to find the effect of game addiction on stress hormone of high schoolers. We classified juniors (2nd grade) of H highschool in W city according to the level of game addiction into the groups of general users (12 persons), potential risk (12 persons), and high risk (12 Persons). We made them exercise three times in a week - for 12 weeks with 50 - 60% of intensity, and analyzed cortisol, epinephrine, and norepinephrine which are stress hormones. Regarding the levels of game addiction, we made a teenagers" internet game addiction index checklist by Korea Agency of Digital Opportunity and Promotion (2010). The subjects kept their stomachs empty while having their bloods taken before and after the exercise. Based on collected data, was technical statistics were calculated through a SPSS(18.0) program. To verify the difference among three groups, paired sample t-tests and one way AVOVA were performed. If a statistic significance were found at a=.05 level, Tukey was performed. As a result, all three groups showed decreased cortisol, epinephrine, and norepinephrine after the twelve weeks of exercise. The result of cortisol was significant at the group of general users, and there were no significant difference among the groups. The change of epinephrine was not significant for all three groups while the change was significant after the exercise. Norepinephrine was significantly decreased for all three groups as well as the result among the groups after the exercise. Therefore, it was found that exercise of 50 - 60% of intensity does not have an effect according to the levels of game addiction, but it has a positive effect on reducing stress hormone. There should be studies on the effect of exercise on teenagers who are addicted to game with many different views through the diversity of forms and period of exercise.
