        The Effects of Stress Related Genes on Carcass Traits and Meat Quality in Pigs

        The current study was conducted to investigate the relationship between stress related gene and meat quality in pigs. A total number of 212 three-way cross bred (Landrace-Yorkshire횞Duroc) and 38 Duroc were sampled from the Korean pig industry to determine genotype requency of porcine stress syndrome (PSS) and heat shock protein 70 kDa (HSP70) genes and their relationship with carcass traits and longissimus meat quality. Screen of HSP70 was performed by the single strand conformation polymorphism (SSCP) technique. Based on the analysis of restriction fragment length polymorphism (RFLP) in ryanodine receptor 1 (RYR1) gene, genetic disorder of PSS was related to a mutation at 18,168th (C to T) of exon 17. There was no significant difference in ultimate meat pH and backfat thickness between HSP70 K1-AA type and -BB type in pure Duroc breed. In Landrace-Yorkshire횞Duroc (L-YxD) cross bred pig, our results indicated that HSP70 derivate type in Duroc had a limited effect on backfat thickness, but L-YxD type had a noticeable linkage with HSP70 K1-AA and K3-AB. This tendency was also observed in hot carcass weight where HSP70 K1-AA and K3-AB resulted in heavier weight with 86.3 kg compared to HSP70 K1-AB and K3-BB of 74.3 kg. Results imply that stress related HSP70 genotype has a potential association with backfat thickness and carcass weight.

        재래 흑돼지와 중국 재래돈간의 Melanocortin Receptor 1(MC1R) 유전자의 유전자형 분석

        PCR-RFLP analysis of Melanocortin receptor 1 (MC1R) gene was carried out to investigate the genotype distribution in Korean-Native and Chinese-Native pig breeds(Neijiang, Putian, Wannanhua and Jinhua). Allelic variants of MC1R in pigs were analyzed by digestion of BspH I , AccII and Hha I . Ncijiang. Wannanhua and Jinhua had only MC1R*2 allele which is considered to be typical genotype for Meishan and Large Black. Among 20 Korean-Native Pigs and 5 Putian pigs, 10 and 2 heads had the MC1R*3 allele (*2/3 or 3/3), respectively, which was detected in European pig breeds such as Hampshire, Large White, and Pietrain. The remaining animals possessed the genotype MC1R*2/2, probably reflecting the genetic introgression of MC1R*3 allele into Korean-Native and Putian pig breeds by the crossbreeding for improvement. The alleles MC1R*l and MC1R*4, which are considered to be typical allele for European Wild Boar with wild-type coat color and Duroc with red coat color, respectively, were not detected in pig breeds used in this experiment. These results indicate that the analysis of genotype frequencies of MC1R gene may be a useful tool for the conservation of Korean-Native and Chinese-Native pig breeds.

      • Accelerated cardiac <i>T</i><sub>2</sub> mapping using breath‐hold multiecho fast spin‐echo pulse sequence with <i>k‐t</i> FOCUSS

        <P><B>Abstract</B></P><P>Cardiac <I>T</I><SUB>2</SUB> mapping is a promising method for quantitative assessment of myocardial edema and iron overload. We have developed a new multiecho fast spin echo (ME‐FSE) pulse sequence for breath‐hold <I>T</I><SUB>2</SUB> mapping with acceptable spatial resolution. We propose to further accelerate this new ME‐FSE pulse sequence using <I>k</I>‐<I>t</I> focal underdetermined system solver adapted with a framework that uses both compressed sensing and parallel imaging (e.g., sensitivity encoding) to achieve higher spatial resolution. We imaged 12 control subjects in midventricular short‐axis planes and compared the accuracy of <I>T</I><SUB>2</SUB> measurements obtained using ME‐FSE with generalized autocalibrating partially parallel acquisitions and ME‐FSE with <I>k</I>‐<I>t</I> focal underdetermined system solver. For image reconstruction, we used a bootstrapping two‐step approach, where in the first step fast Fourier transform was used as the sparsifying transform and in the final step principal component analysis was used as the sparsifying transform. When compared with <I>T</I><SUB>2</SUB> measurements obtained using generalized autocalibrating partially parallel acquisitions, <I>T</I><SUB>2</SUB> measurements obtained using <I>k</I>‐<I>t</I> focal underdetermined system solver were in excellent agreement (mean difference = 0.04 msec; upper/lower 95% limits of agreement were 2.26/−2.19 msec, respectively). The proposed accelerated ME‐FSE pulse sequence with <I>k</I>‐<I>t</I> focal underdetermined system solver is a promising investigational method for rapid <I>T</I><SUB>2</SUB> measurement of the heart with relatively high spatial resolution (1.7 × 1.7 mm<SUP>2</SUP>).       • Effects of ultraviolet-C treatment in Teflon®-coil on microbial populations and physico-chemical characteristics of watermelon juice

        The efficacy of UVC radiation for inactivation of bacteria (aerobic, coliform) and yeast/mold in watermelon juice using helix Teflon®-coil was investigated. Changes in microbial load, pH, <SUP>o</SUP>brix, color (L*, a*, and b*), lycopene, and phenolics in juice, after UVC treatment were evaluated for 37days of storage at 5+/-1<SUP>o</SUP>C. Microbial inactivation was dependent on the UVC intensity between 2.7 and 37.5J/mL. UVC treatment inactivated all (2.6logCFU/mL) coliform bacteria. UVC (37.5J/mL) reduced total aerobes and yeast/mold by 1.47 and 0.99logCFU/mL, respectively. The microbial load in treated juice remained lower than 6.0logCFU/mL until the 31st day of storage. UVC treatment resulted in no-significant effects on pH, <SUP>o</SUP>brix, color change, lycopene, and phenolics, the values of which remained consistent with those of a control until 25th day of storage. UVC treated juice had lower b* (yellowness) and higher a* (redness) colors than untreated juice. Industrial relevance: Watermelon juice is a potential health food and strategies to increase its shelf-life with minimal or no damage to nutritional components are crucial for obtaining more commercial benefits. Our study suggests that a Teflon®-coil UVC system can be effectively used as a non-thermal method for microbial inactivation in watermelon juice and to improve the product shelf-life with no significant effects on different physico-chemical and nutritional characteristics.

      • Effect of Yb<sub>2</sub>SiO<sub>5</sub> addition on the physical and mechanical properties of sintered mullite ceramic as an environmental barrier coating material

        In this study, ytterbium monosilicate (Yb<SUB>2</SUB>SiO<SUB>5</SUB>)-added sintered mullite ceramics are prepared as candidate materials for environmental barrier coatings (EBCs). The effect of adding Yb<SUB>2</SUB>SiO<SUB>5</SUB> on the physical and mechanical properties of the sintered mullite ceramics is investigated. The Yb<SUB>2</SUB>O<SUB>3</SUB>-SiO<SUB>2</SUB>-Al<SUB>2</SUB>O<SUB>3</SUB> ternary phase diagram indicates that adding Yb<SUB>2</SUB>SiO<SUB>5</SUB> to the mullite goes beyond simply mixing; instead, liquid sintering occurs. Therefore, when we add Yb<SUB>2</SUB>SiO<SUB>5</SUB> to the mullite, the sintered body possesses a denser microstructure and faster densification rate than does pure mullite. The density rapidly increases with the addition of 6wt% Yb<SUB>2</SUB>SiO<SUB>5</SUB> in the mullite, and almost full densifications are achieved with the addition of 12wt% and 18wt% Yb<SUB>2</SUB>SiO<SUB>5</SUB>. In this study, mullite ceramic that contains 12wt% Yb<SUB>2</SUB>SiO<SUB>5</SUB> exhibits the smallest plastic deformation and the highest elastic modulus among ceramics containing 6, 12, and 18wt% Yb<SUB>2</SUB>SiO<SUB>5</SUB>, according to Hertzian indentation results. The results suggest that 12wt% Yb<SUB>2</SUB>SiO<SUB>5</SUB>-doped mullite may be expected to act as a potential EBC material based on its excellent elastic properties, dense microstructure, and appropriate coefficient of thermal expansion.

        Effect of Fermented Soybean, "Natto" on the Production and Qualities of Chicken Meat

        Natto is a Japanese traditional soybean product fermented by Bacillus natto. The effect of natto supplement on the production and qualities of chicken meat was studied since the effective use of various waste foods is required in Japan. Dried natto prepared by heating at $60^{\circ}C$ was added to a basic diet at an amount of below 2%. The supplementation of dried natto did not influence the weights of the carcass, breast and thigh meat, fillet or abdominal fat. Growth of the thighbone such as the length, thickness of cortex bone, and Ca/P ratio in bone ash were not altered by the addition of natto. However, the pH of male meat decreased following the supplementation of dried natto from days 28 to 80. The water-soluble protein content in male thigh meat increased in the group fed 2% natto from days 28 to 80. Free peptides increased in male thigh meat by feeding 2% natto from days 0 to 80. The supplementation of natto increased free glutamic acid in thigh meat regardless of sex. Moreover, the supplementation of natto specifically decreased meat cholesterol in female chickens though the effect was not shown in male chickens.

        Exchange coupling in ferromagnetic/antiferromagnetic/ferromagnetic [Pd/Co]<sub> <i>n</i> </sub>/NiO/Co trilayers with different [Pd/Co] anisotropy

        <P><B>Abstract</B></P> <P>Exchange coupling in NiO/Co bilayers and [Pd/Co(<I>t</I> <SUB> <I>Co</I> </SUB>)]<SUB> <I>n</I> </SUB>/NiO/Co trilayers prepared by magnetron sputtering has been investigated. With decreasing thickness (<I>t</I> <SUB> <I>Co</I> </SUB>) of the Co layers in [Pd/Co] multilayers (MLs) and increasing number of [Pd/Co] repeats (<I>n</I>), the ferromagnetic easy axis of the [Pd/Co] MLs switches from in-plane to out-of-plane direction. Ferromagnetic and non-collinear interlayer couplings between the [Pd/Co] MLs and the Co layer across the antiferromagnetic NiO spacer are found in trilayers. After cooling at in-plane and out-of-plane remanent state, respectively, for <I>t</I> <SUB> <I>Co</I> </SUB>=1nm and <I>n</I>=2, a larger in-plane exchange bias field of 724Oe is observed which vanishes at temperatures above 90K which is the same as the in-plane blocking temperature observed in the NiO/Co bilayer.       • Security Threats among DICOM Imaging Communications in Public Networks

        Picture archiving and communication systems (PACS) require high-speed networks to transmit large image files between components. Image-data transmission from one site to another through public network is usually characterized in term of privacy, authenticity, and integrity. However, public network’s security issues had always been the significant problems. Recent years, IPv6 brings significant improvements in mechanisms for assuring a higher level of security and confidentiality of the transmitted information. Thus, it is still necessary to take care of some particular aspects. In this paper, we first analyzes how actual security threats and different types of attacks affect IPv6 networks while transmitting Digital Imaging and Communications in Medicine (DICOM) files through the public Internet. Second, illustrate some shortcomings of IPv6 and IPv6’s traffic loads. Finally, some possible solutions against a number of security threats in IPv6 DICOM files transmitting networks have been given.
