Leucine and isoleucine were reacted with glucose in a propylene glycol solution and volatile compounds produced from these reaction were analysed by gas chromatography and mass spectrometry. A total of 24 compounds were identified in the leucine reaction volatiles and the major components were 2-isopropyl-5-methyl-2-hexenal, methylbutyraldehyde PGA, butyraldehyde PGA, 5-methylfur-fural, isopropylmethylhexenal PGA and 2-acetylpyrrole. From the isoleucing reaction volatiles, 20 compounds were identified and the major components were methylbutyraldehyde PGA, butyraldehyde PGA and 2-acetylpyrrole. The amino acids chosen for this study were considered as giving fruity and cocoa aroma when heated with glucose.

The purpose of this study was designed to examine the changes of the body temperature reaction during exercise. The measurements were made in oral, skin and rectum temperature and at three times in early morning, mid-day and evening on the bicycle ergometer in the intensity of 60% VO?? for 40 minutes each time. The subjects were selected 6 women volley ball players at B Universiy. The results of the study were as follows; 1. The temperatures of skin and rectum between early morning, mid-day and evening before exercise were different but not significant in the end of exercise. 2. The increases of the rectum temperature in accordance with differences of the body temperature before exercise were shown differently. The increasing temperature were about 1.18±0.30℃ in early morning, 0.91±0.27℃ in mid-day and 0.81±0.16℃ in evening. 3. The increases of the skin temperature in accordance with differences of the body temperature before exercise were shown differently. The increasing temperature were about 0.67‘0.14℃ in early morning, 0.50±0.19℃ in mid-day 0.41±0.18℃ in evening.

The purpose of this study was to compare the factors on body composition and cardiorespiratory function influencing the Swordmanship performance for the selection of the new excellent talents and to present the basic scientific information for the effective training prescription programs. The subjects recruited for this study were 33 high school students composed of 11 excellent swordmen, 11 non-excellent swordmen, and 11 normal students who do not exercise swordmanship. The statistical techniques utilized in this study were ANOVA and Logistic regression and Duncan test was used in post-hoc analysis. The .05 level was initially established in significance. The findings of this study are as follows: 1. The excellent swordsmen group was higher than the normal students group in lean body mass on body composition. 2. The excellent swordsmen group was significantly higher than the non-excellent swordsmen group in VO₂max and exercise duration on cardiorespiratory function during maximal effort but lower in RERmax. 3. In the variables assessment of the excellent swordsmen, body fat and LBM on body composition, RFmax on cardiorespiratory function, were functioned as variables.

The volatile oils of apricot(Prunus armeniaca var. ansu Max.) and Japanese apricot (Prunus mume Sieb. et Zucc.) were isolated by stem distillation-extraction. The resulting oils were analyzed by GC and GC-MS. A total of 80 components were identified in apricot, including 9 naphthalene derivatives of which had not been previously reported in apricot volatiles and 72 components were identified in Japanese apricot, The major components in apricot were n-hexanal(4.18% of total oil), traps-2-hexenal(11.57%), n-hexanol(14.38%), traps-2-hexen-1-ol(8.28%), cis-3-hexen-1-ol(2.60%) , linalool (12.61 %), α-terpineol (5.63%), geraniol (2.78%), trimethyltetra-hydronaphthalene derivatives(7.51%) and tetradecanoic acid(3.67%), while benzaldehyde(62.40%), terpinen-4-o1(3.97%), benzyl alcohol (3.97%) and hexadecanoic acid (4.55%) were major components in Japanese apricot. However, the characteristic aroma of apricot appeared to be due to combination of C_6 aldehyde and alcohols, terpene alcohols, lactones and β-ionone-related components and that of Japanese apricot could be due to the presence of benzaldehyde and benzyl alcohol.
