        호텔 식자재 관리의 현황과 개선방안에 관한 연구

        As the sales of food and beverage has increased in hotel management, the importance of food material management has become higher. Food material management includes the purchase, take-over, storage and issuance of food. During the process from the purchase to issuance of food and beverage, the research and the subsequent analysis should be carried out to minimize the wasteful expenditure caused by vicious stock, to visualize actual and stepwise food material management and to solve the concomitant sanitary problems. In this paper, the perspectives to lower the various types of economic losses and waste products were suggested. This study investigated the present status of purchase, storage and stockpile management in "S" hotel. Questionnaires were distributed to hundreds of cooks, who were asked to respond concerning the current problems and suggestions for improvement in dealing with foods. In "S" hotel, the purchase control system for food ingredients using the computer has been introduced. The variety of routes for purchasing imported food, cooperative market search between cooking and purchasing departments, and the use of semi-prepared food were investigated. However, the lack of purchasing experts, the inconsistent maintenance of business connections, and the exclusion of chief cooks in purchasing food materials, etc. were pointed out as main problems. The study results were summarized as follows: Cooks regarded the preservation of freshness of the food ingredients as the most important factor. The communication between the purchase, production, and sales departments should be improved. In addition, they pointed out the necessity of purchasing experts who were well aware of the operating system of purchase and cooking departments. The balance between demand and supply was maintained by estimating the turnover rate, and the quantities and period of consumption and storage. Such problems as unexpected and vicious stocks of cheeses, imported fruits, frozen fruits or frozen shellfishes could be solved by developing the non-seasonal new menu. Also, it is necessary to continue to make a constant investigation using statistical methods. Finally, the use of a new 'sticker-type' in food material management was suggested which could be more easily controlled and distinguishable for processed and unprocessed foods.

        한식레스토랑의 메뉴선택속성이 고객만족과 재방문의도에 관한 연구

        The purpose of this study is to make an evaluation on menu selection and satisfaction levels of the tourists who visit Korean restaurants in Busan. This study aims to propose general, strategic plans for improving the menu quality management of Korean restaurants in the future and find out measures to make restaurant users satisfied and revisit. A survey was conducted on ordinary people who had visited Korean restaurants in tourist hotels in Busan. A total of 310 copies of questionnaire were distributed to them from September 1 to 30, 2008. The SPSS/PC+ for Window 12.0 was used for data processing and analysis. As a result, it was found that selection attributes of Korean restaurant menu had an effect on customer satisfaction and revisit intention, and the most influential factors were health and menu designs. These days, people are getting more interested in keeping in shape with the Well-being trend. Such a modern trend is an important factor when selecting menu items. Therefore, when menu management is considered, health-related factors need to be considered more than anything else. In addition, various and unique menu items need to be designed to draw people`s curiosity and make customers revisit.

        LSTM Auto Encoder 이용한 접근 이상 항적 탐지 모형

        항공 수요가 글로벌화와 함께 지속적으로 증가하고 있으며, Urban Air Mobility(UAM)의 도래로 도시 지역에서의 항공 이동이 중요한 이슈로 부상하고 있다. 이러한 배경 속에서 안전한 항공 시스템의 구축은 더욱 중요해지고 있다. 이상 징후 또는 비정상 작동을 탐지하기 위해 Auto Encoder(AE) 기반 이상 항적 탐지 연구가 이루어지고 있다. 항적은 환경에 영향을 받기 때문에 이상 항적 탐지 모형에 환경을 반영해야 한다는 어려움이 있다. 이를 해결하기 위해 본 연구는 환경 데이터와 궤적 데이터를 입력으로 사용하면서, 궤적 데이터만을 출력하는 Long Short Term Memory-Auto Encoder(LSTM-AE) 모형을 새롭게 제안한다. 일부 항적에 대한 Mean Absolute Error를 산출하여 모델의 재구성 능력을 확인하였다. 또한 전형적인 이상 항적인 착륙 복행 항적에 대한 Area under the ROC curve(AUC)를 비교하여 이상 항적 탐지 능력을 확인하였다. 이를 통해 일반적인 AE 모형, LSTM-AE 모형보다 제안 모형이 환경 변수에 대한 궤적의 패턴을 성공적으로 학습하며 이상 패턴 탐지 능력이 우수하다는 것을 확인하였다. 본 연구의 결과를 바탕으로 향후 더욱 다양한 환경 변수의 적용과 함께 더욱 정교한 모형 개발이 기대된다. With the rise in aviation demand and the emergence of Urban Air Mobility, developing a safe aviation system in urban areas is becoming increasingly important. This study addresses the challenge of detecting anomalous flight trajectories, which can be influenced by environmental factors. We propose a novel Long Short-Term Memory-Auto Encoder (LSTM-AE) model that processes both environmental and trajectory data but only reconstructs trajectory data in its output. This approach was validated by assessing the average reconstruction error for specific trajectories. Additionally, the model's ability to identify anomalies was confirmed by evaluating the Area under the ROC curve (AUC) for typical anomalous trajectories, such as go-around maneuvers. Our findings indicate that the proposed LSTM-AE model effectively learns trajectory patterns in relation to environmental variables and shows enhanced anomaly detection capabilities compared to traditional AE and LSTM-AE models. These results contribute to the development of advanced models that incorporate a wider range of environmental factors, enhancing safety in urban air travel.

        면적속도 기반 DTW를 이용한 이탈 항적 탐지

        항공 안전 분야에서 데이터를 분석하여 항공 사고 전조 징후를 탐지하는 연구가 이루어지고 있다. 정상적인 궤도로부터 벗어나는 항공기의 궤적을 뜻하는 이탈 항적은 항공로 구간에서 발생하는 항공 사고의 전조 징후 중 하나이다. 항공로 구간은 출발 절차를 마친 이후부터 착륙 절차를 시작하기 전 구간을 의미한다. 항적 데이터는 시간에 따른 위치 정보를 의미하는 궤적 데이터이다. 항적 데이터와 같이 궤적을 이루는 샘플 포인트 개수가 상이한 궤적 데이터의 비유사도를 산출하는 일반적인 방법은 DTW(dynamic time warping)이다. 그러나 이탈 항적 탐지에는 거리 기반의 비유사도보다 정상 항적으로부터 면적 기반의 비유사도가 더 유용하다. 이에 본 연구에서는 면적에 상응하는 값을 산출하는 ‘면적 속도 기반 DTW(이하 ADTW)'를 개발하였다. ADS-B(automatic dependent surveillance-broadcast) 항적 자료를 이용해 DTW와 ADTW 방법으로 각각 비유사도를 산출한 후 클러스터링 기반 이상치 탐지 기술을 이용하여 이탈 항적을 판단하였다. 클러스터링은 k-medoids 방법인 PAM(partitioning around medoids)을 이용하였다. Average silhouette 산출 결과 2개의 클러스터로 분류되었으며 각 클러스터의 대표 항적으로부터 비유사도를 이용해 이탈 항적을 탐지하였다. 이탈 항적 탐지 기준은 분위수를 이용해 구축하였다. 클러스터의 평균 실루엣 너비를 이용해 평가하였을 때 ADTW가 DTW보다 높은 성적을 나타냈다. In the field of aviation safety, data analysis research is being conducted to detect the precursors of aviation accidents. A deviation trajectory, which means the trajectory of an aircraft deviating from its normal trajectory, is one of the precursor signs of an aviation accident that occurs in an en-route section. The en-route section means segment of flight from the termination point of a departure procedure to the origination point of an arrival procedure. trajectory data is track data meaning positional information according to time. A general method for calculating the dissimilarity of trajectory data having different numbers of sample points constituting the trajectory is dynamic time wrapping (DTW). However, area-based dissimilarity from normal tracks is more useful than distance-based dissimilarity for deviation trajectory detection. Therefore, in this study, ‘area velocity-based DTW (hereafter referred to as ADTW)' was developed to calculate the value corresponding to the area. Dissimilarity was calculated by DTW and ADTW methods using ADS-B (automatic dependent surveillance-broadcast) trajectory data, and then deviation tracks were determined using clustering-based outlier detection technology. For clustering, the k-medoids method, PAM (partitioning around medoids), was used. As a result of calculating the average silhouette, it was classified into two clusters, and the deviation track was detected using the dissimilarity from the representative track of each cluster. Detection criteria were constructed using quantiles. When evaluated using the average silhouette width of clusters, ADTW performed better than DTW.

        부산 지역 전통음식에 대한 세대별 인식 차이 분석

        This study is to analyze the difference of perception about Korean traditional food by generations in Busan area. For the analysis of this study, both the cross tabulation analysis and Frequency analysis were used, by choosing the random specimen of investigation from middle and high school students, college students and general people residing in Busan area. The result of the study is as follows. First, the frequency of preference for traditional food is different by generations. Second, Korean traditional food is the most preferred among all generations. Third, menu is decided mainly for a father in the family. Finally, standardized and simplified recipes are needed for busy people. To improve the difference by generation, herbs or seasonings should be added or ingredients should be changed into ones suitable to young generation`s taste. It is necessary for future studies to have extended samples nationwide for balanced specimen.

        위내시경으로 진단된 소화성 궤양환자 1501명에 대한 임상적 관찰

        N/A The epidemiology and clinical aspect of peptic ulcer is ever-changing along with changes in environment. Therefore, we had a clinical analysis in 1501 patients, who were diagnosed as peptic ulcer with gastroscopy in Chungnam National University Hospital from January 1984 to June 1988. The results were as follows: 1) Of the total 8912 cases of endoscopy, the numbers of patient with gastric ulcer were 784(8.8%), with duodenal ulcer, 591(6.6%) and with combined ulcer, 126(1.4%) 2) The mean age of patients with gastric ulcer was 50.9+14.9, and that with duodenal ulcer was 41.76+13.8. 3) The ratio of males to females was 3.7: 1 in gastric ulcer group and 2.4: 1 in duodenal ulcer group. 4) The most common stympom was epiagastric pain, 48.3% of gastric ulcer patients and 47.2% of duodenal ulcer patients, And the patients with hematemesis and/or melena were 19.5% of gastric ulcer patients and 12.9% of duodenal ulcer patients 5) During the period 1984-1988, the annual proportion of gastric ulcer were 58.8%, 51.4%, 53.3%, 50%, and 50.7%. And that of duodenal ulcer were 36.5%, 39.4%, 38.2%, 40.5%, and 41.1%. 6) The patients with multiple ulcers were 26.5% of gastric ulcer group and 15.7% of duodenal ulcer group. 7) The patients of 78.1% of total peptic ulcer was in active stage, 11% in healing stage, and 10.9% in scarring stage. 8) In 30.8% of gastric ulcers, the size of ulcer was within 1.0 to 1.4 cm and in 31.6% of duodenal ulcers the size of ulcer was less than 0.4 cm. 9) The most common site of gastric ulcer was angle of stomach (42.7%), and that of duodenal ulcer was bulb (98.6%). 10) The proportion of patients with combined ulcer of stomach and duodenum was 8.3% of total patients and that of channel ulcer was 3.1%.

        지방간의 임상적 고찰

        N/A The clinical, laboratory and pathological features were evaluated in 44 patients with fatty liver, those were proved by nedle biopsy. The following results were obtained. 1) The mean age of the patients was 40.2 ± 11.8 years old, and the most prevalent age group was 4th decade (40.9%). The male and female ratio was 3.4:l. 2) Suspected etiologies were obestity (61.4%), alcohol (18.2%), crytogenic (13.6%), Diabetes Mellitus (6.8%), and prednisolon (2.3%), in order of frequency. 3) Clinical symptoms were asymptomatic (50%), fatigue and/or weakness (43%) and anorexia (16 %) etc. 4) Degrees of fatty infiltration on biopsy specimens revealed mild (18.2%) moderate (45.5%) and severe (36.4%). 5) Degrees of ultrasonographic findings (20 cases) resemble those degree of biopsy findings and positive rate was 80%. 6) Liver scan showed mottlings in 44% of patients and 28% of patients had no abnormal findings. 7) HBsAb positive cases were 61.4%, and no HBV markers found in 31.8% of the patients. 8) Diagnoses without liver biopsy were NANB hepatitis about half of the patients and only 20% of cases were suspected as fatty liver. 9) At the time of diagnosis, hypertriglyceridemia revealed at rate of 75% (30/40 cases) and the differences of the levels of serum TG, ALT and AST according to the degrees of fatty infiltration were not presented significantly. 10) The differences of the TG, ALT and AST levels between before and after treatment were noted significantly. 11) The significant relationships between degrees of fatty liver and degrees of obesity were observed (Grade I and II: p<0.05, I and III: p<0.01).
