        아로니아 부산물 분말 첨가 쌀 영양바의 품질 특성

        The quality characteristics, total phenolic content, anthocyanin content, and DPPH radical scavenging activity of rice nutritional bar with added powder of aronia byproducts were investigated in this study. The rice nutritional bar was prepared by adding aronia byproducts powder at concentrations of 0%, 2%, 4%, and 6%. The pH of the rice nutritional bar batter was lowered for the control and 2% aronia byproducts powder was added. The moisture content, baking loss rate, leavening rate and specific volume of the rice nutritional bar decreased with as the aronia byproducts powder content increased. In relation to measurements of the colors of the rice nutritional bar crust and crumbs, as the content of aronia byproducts powder increased, the L and b values decreased while the a value increased. From texture analysis, the hardness and chewiness increased according to the level of added aronia byproducts powder, but the springiness and cohesiveness decreased. The total phenolic content, anthocyanin content, and DPPH radical scavenging activity showed the highest values in the rice bar with 6% aronia byproducts powder added. According to a sensory evaluation, overall preference was highest for the rice bar with 4% added aronia byproducts powder, whereas the color and taste was rated higher for the rice bar added with 4% and 6% aronia byproducts powder.

        느타리버섯 물 추출물 투여에 의한 마우스 비장세포 및 사이토카인 활성효과

        In vitro 실험을 통한 느타리버섯 물 추출물 첨가가 마우스의 면역세포 증식에 미치는 영향에 대한 연구 결과, 음의 대조군에 비해 느타리 물 추출물을 첨가한 모든 농도에서 비장세포 증식능이 증가하였으며, 특히 $100{\sim}1,000{\mu}g/mL$ 농도에서 유의적으로 증가하였다. 반면, 사이토카인 생성의 경우, IL-2, IFN-${\gamma}$, TNF-${\alpha}$ 사이토카인 생성량을 측정한 결과, 느타리버섯 물 추출물 $50{\sim}500{\mu}g/mL$ 농도에서 생성된 IL-2, IFN-${\gamma}$, TNF-${\alpha}$ 사이토카인은 대조군보다 높은 생성량을 보였다. IFN-${\gamma}$, TNF-${\alpha}$ 사이토카인 모두 50, 100, 250, $500{\mu}g/mL$의 농도에서 높은 생성량을 나타내었다. IL-2의 경우, 생성량이 유의적인 차이는 보이지 않았지만, $50{\mu}g/mL$ 이상에서 증가하는 경향을 보여주었다. 이상의 결과에 의하면 느타리버섯 물 추출물은 마우스 비장 세포를 증식시키고, 사이토카인 생성량에도 영향을 주어, 면역 기관의 주요 기능을 증진시킬 가능성이 있을 것으로 사료되며, 느타리버섯이 면역 증진 기능성 식품 개발의 소재로 활용될 가능성이 있을 것으로 기대된다. Pleurotus ostreatus have been used as a traditional remedy and food source. Its anti-inflammatory, anti-oxidation effects have been previously reported. The production of cytokines (IL-$2{\beta}$, IFN-${\gamma}$, and TNF-${\alpha}$) secreted by LPS- and non LPS-stimulated macrophages, were detected by ELISA assay using a cytokine kit. Mouse splenocytes proliferation increased with Pleurotus ostreatus water extracts supplement at 5, 10, 50, 100, 250, 500, $1,000{\mu}g/mL$ after a 48hr pre-treatment with the mitogen (ConA or LPS). The cytokine production (IL-$2{\beta}$, IFN-${\gamma}$, and TNF-${\alpha}$), measured by a cytokine ELISA kit, increased on water extracts supplementation. This in vitro study suggested that supplementation with Pleurotus ostreatus water extracts may enhance the immune function by regulating the splenocyte proliferation and enhancing cytokine production.

        도라지 물 추출물의 경구 투여가 마우스 면역 세포 활성에 미치는 효과

        Platycodon grandiflorum have been used as a traditional remedy and food source. This study was performed to investigate the immunomodulating effects of Platycodon grandiflorum in mouse, using ex vivo experiments. Six to seven-week old mice were fed ad libitum on a chow diet, and water extract of Platycodon grandiflorum was orally administrated at two different concentractions (50 and 500 mg/kg B.W./day) every other day for four weeks. In ex vivo experiments, the highest proliferation of splenocytes and levels of cytokine (IL-$1{\beta}$, IL-6, TNF-${\alpha}$) production were observed in 500 mg/kg BW/day supplementation group for all three cytokines stimulated by LPS. In conclusion, this study suggests that Platycodon grandiflorum extracts may enhance the immune function by regulating the splenocytes proliferation and cytokine production capacity by activating macrophages in mice.

        가시오가피 물 추출물에 의한 마우스 비장세포 및 대식세포 활성의 항진효과

        In vitro 실험을 통한 가시오가피 물 추출물 첨가가 마우스의 면역세포 증식에 미치는 영향에 대한 연구 결과, 음의 대조군에 비해 가시오가피 물 추출물을 첨가한 모든 농도에서 비장세포 증식능이 증가하였으며, 특히 고농도인 $500{\sim}1,000{\mu}g/mL$ 농도에서 유의적으로 증가하였다. 반면, 복강 대식세포로부터 유도된 사이토카인 생성의 경우, IL-2, IFN-${\gamma}$, TNF-${\alpha}$ 사이토카인 생성량을 측정한 결과, TNF-${\alpha}$ 사이토카인은 가시오가피 물 추출물 $50{\mu}g/mL$ 농도와 $250{\sim}1,000{\mu}g/mL$ 농도에서 대조군보다 유의적으로 높은 분비량을 보인 반면, IFN-${\gamma}$에서는 변화를 보이지 않았다. IL-2의 경우, $100{\sim}500{\mu}g/mL$에서 유의적으로 증가하는 경향을 보여주었다. 이상의 결과에 의하면 가시오가피 물 추출물은 마우스 비장 세포를 증식시키고, 사이토카인 분비량에도 영향을 줄 것으로 보이며, 면역 기관의 주요 기능을 증진시킬 가능성이 있을 것으로 사료된다. 따라서 가시오가피 물 추출물이 면역 증진 기능성식품 개발의 소재로 활용될 가능성이 있을 것으로 기대된다. Acanthopanax senticosus is an herb that has been used as a traditional remedy and medicine source. Its anti-inflammatory and, anti-oxidative effects have been reported in previous studies. This study aimed to investigate the effect of Acanthopanax senticosus water extracts on mouse macrophage cell in vitro. Mouse splenocyte proliferation increased after application of Acanthopanax senticosus water extract supplement of 5, 10, 50, 100, 250, 500, $1,000{\mu}g/mL$ after 48 h pre-treatment with a mitogen (ConA or LPS). The production of cytokines secreted by LPS and non LPS stimulated macrophages was detected by ELISA assay using a cytokine kit. Cytokine production (IL-2, IFN-${\gamma}$, and TNF-${\alpha}$) increased after water extract supplementation. The result of this in vitro study, showed that splenocyte proliferation and cytokine production by activated peritoneal macrophages were increased after Acanthopanax senticosus water extract in the range of $500{\sim}1,000{\mu}L/mL$. Thus, it is suggested that supplementation with Acanthopanax senticosus water extracts may enhance immune function by regulating splenocyte proliferation and enhancing cytokine production by activated macrophage.

        연근 열수추출물 투여가 마우스의 비장세포와 사이토카인의 분비량에 미치는 영향

        Nelumbo nucifera Gaertn has been usedas a traditional remedy and food source in South Korea. It promotes gastrointestinal function and controls blood pressures. Nelumbo nucifera Gaertn water extracts supplement at 5, 10, 50, 100, 250, 500, $1,000{\mu}g/mL$ after a 48 h pre-treatment with the mitogen (ConA or LPS) increased the mouse splenocytes proliferation. Water extract supplement also increased the cytokine production ($IL-1{\beta}$, $TNF-{\alpha}$ and $IFN-{\gamma}$), measured by a cytokine ELISA kit. For the result of in vitro study, the proliferation of splenocytes and cytokine production activated by peritoneal macrophages increased when water extracts were supplemented in the range of $50{\sim}500{\mu}L/mL$ concentration. Specifically, the levels of the splenocytes proliferation, $IL-1{\beta}$, $TNF-{\alpha}$ and $IFN-{\gamma}$ were the highest at $250{\mu}L/mL$ concentration. This in vitro study suggestedthat supplementation with Nelumbo nucifera Gaertn water extracts may enhance the immune function by regulating the splenocyte proliferation and enhancing the cytokine production activating macrophage in vitro.

        호박고구마 물 추출물 투여가 마우스의 비장세포와 사이토카인의 분비량에 미치는 영향

        Pumpkin sweet potato (Ipomoea batas L.) has been known as a traditional remedy and food source, not only in South Korea but worldwide. It is rich in fiber, potassium, vitamin C, and other minerals and vitamins, making it a nutritional food loved by many. showed that pumpkin sweet potato had antioxidant biological effects. The in vitro study showed that both splenocytes and cytokine production byactivated peritoneal macrophages increased when water extracts were supplemented at 100 and 250 μL/mL. Notably, the production of IL-1β, TNF-α, and IFN-γ by splenocytes was significantly increased at 100 μL/mL. The results suggest that supplementation with pumpkin sweet potato (Ipomoea batas L.) water extract may enhance immune function by stimulating splenocyte proliferation and improving cytokine production, activating macrophages in vitro.

        새송이버섯, 팽이버섯 열수추출물의 항산화 및 항암 활성

        Various studies on the effect of mushroom, a member of phytonutrients, on inflammatory diseases have been reporter over the years, Among various species mushrooms, King oyster mushroom (Pleurotus eryngii) and winter mushroom (Flammulina velutipes) are popular dietary ingredients for Asian cuisine. The extracts from all the three mushrooms were used to determine the antioxidative effect and the cytotoxicity. Result analysis were repeated more than three times to get an average${\pm}$standard deviation, and statistical significance were confirmed by SPSS. As a result, total phenol content of the king oyster mushroom and the winter mushroom were $19.66{\pm}0.10mg/g$ and $22.08{\pm}1.10mg/g$, respectively. Also, the total flavonoid content was $15.21{\pm}1.31mg/g$ for the king oyster mushroom and $20.50{\pm}4.52mg/g$ for winter mushroom. The results in winter mushroom showed higher values in total phenol and flavonoid content than in the king oyster mushroom. All samples of extracts showed free radical DPPH (1,1-diphenyl-2-picrylhydrazyl) scavenging activity with their 10 mg/mL concentration. These results indicate that the extract of the king oyster mushroom (Pleurotus eryngii) and the winter mushroom (Flammulina velutipes) may be possible phytonutrients with the anti-inflammatory and the anti-cancer effect.

        유아교육과 신입생의 대학 입문경험에 관한 연구

        본 연구는 유아교육과 신입생이 대학에 입문하여 어떠한 경험을 하는지에 대해서 알아보고자 하였다. 본 연구는 2007년 3월부터 2007년 10월까지 총 8개월 동안 A대학의 유아교육과 신입생 6명을 대상으로 진행되었다. 연구방법으로는 내러티브 접근을 기초로 하여 저널쓰기와 심층면담 토론수입 채팅 등으로 진행되었으며, 자료는 저널과 토론수업과 채팅의 전사본 연구 참여자들의 레포트나 자기소개서 등의 각종 문서 그리고 연구자 저널 등이다. 이러한 연구과정에서 수집된 자료들은 여러 번 반복하여 읽으면서 핵심어를 적은 후 의미가 있는 주제를 분류하고 사례를 추출하는 방법으로 분석하였다. 연구결과는 다음과 같다. 첫째 유아교육과 신입생들은 대학에 입문하여 대학생활과 관련하여 대학생으로서 드라마와 다른 현실인식과 벅찬 자유를 누리게 되며 대학수업과 관련하여 적은 과목과 긴 수업, 다양한 강사와 수업방식 논술형 시험 등에 적응해야 하는 어려움 등을 겪고 있었다. 둘째, 유아교육과 신입생들은 대학에 입문하여 유아교육과 생활과 관련하여 학과 분위기에서는 여대 같은 곳 다양한 학생이 공존하는 곳으로 경험하며 전공의 이해와 관련하여 다방면의 교육과 실천적 지식들을 위한 수입을 경험하면서 적응해 가고 있었다. 또한 인간관계에 있어서는 친구와 선배, 그리고 교수와의 관계를 통해서 어려움을 겪으며 적응하고 있는 것으로 나타났다. The purpose of this study is to examine early childhood pre-service teachers' college induction experiences. The data collection was conducted for 8 months from March 2007 to October 2007, The participants of this study were 6 freshmen who entered the Department of Early Childhood Education at A located in B province, Their journals, in-depth individual or group interviews, discussions in the class, researcher's journals and messenger chatting were collected for the dara, From the collected data, key words were drawn through several repeated readings, and significant themes were classified, Two research questions were identified and the findings were as follows: The results were as follows. First, this results were categorized in two main themes, Those are were freshmaen's experiences as a students and as a pre-service early childhood teachers. First, the life as a college student they recognized that college life was a analyzed in such aspects as different reality from drama and enjoyed, formidable freedom. Next, They found it difficult to adjust to college life such as class was analyzed in such aspects as fewer subjects classes but class hours than high school, various instructors and their different methods, and difficulty in essay-type test, Second, freshmen had adaptative experiences as pre-service childhood teachers. Those are as follows:s. First, freshmen perceived the department as a women's college, and the place where various students coexist. Second, they perceived manifold education, and obtaining knowledge from the class, understanding of a major. Next, Regarding personal relations, they perceived challenges in making new personal relationships with colleagues, seniors or juniors, and professors in the department.

        생태사진을 활용한 이야기 나누기 활동이 유아의 환경친화적 태도에 미치는 영향

        본 연구의 목적은 생태사진을 활용한 이야기 나누기 활동이 유아의 환경친화적 태도에 미치는 영향을 알아봄으로써 자연친화 교육을 위한 바람직한 교수방법에 대해 살펴보는 것이다. 이를 위해 A광역시에 위치한 두 곳의 유치원 만 5세 한반씩 두 반을 선정하여, 15주 동안 생태사진을 활용한 이야기 나누기 활동을 실시하여 유아의 환경친화적 태도에 효과가 있는지를 분석하였다. 본 연구결과, 생태사진을 활용한 이야기 나누기 활동을 경험한 실험집단 유아들은 환경친화적 태도가 비교집단에 비해 유의미하게 향상되었다. 환경친화적 태도의 하위 요소인 유아의 자연친화적 태도와 환경친화적 태도의 두 측면에서 모두 긍정적인 변화를 나타냈다. 생태사진을 활용한 이야기 나누기 활동 이 유아의 환경친화적 태도에 효과가 있으며, 자연친화교육을 위한 의미있는 접근방안이 될 수 있음을 알 수 있다. The purpose of this study is to suggest a desirable teaching method for nature-friendly education by observing how the discussion using ecological pictures affect children's environment-friendly attitude. We selected 2 5-year-old classes, each from 2 kindergartens located in A city, and executed the discussion utilizing ecological pictures for 15 weeks. Subsequently, we analyzed the influence on children's environment-friendly attitude. In conclusion, the experimental groups that experienced the discussion utilizing ecological pictures has achieved significant improvement of their environment-friendly attitude in comparison to other groups. Both sides of nature-friendly attitude and environment-friendly attitude which are subclassification of environment-friendly attitude indicated positive change. Based on these results, it is concluded that the discussion utilizing ecological pictures is effective and thus can be meaningful approach to nature-friendly education.
