The purpose of this study is to understand the present situation of Home Economics education of junior and senior high school in Korea and to find out the direction for better teaching of Home Economics. For this purpose the survey was done through questionaries on the main educational facilities and equipments, teacher's qualification, troubles that teacher's face when they teach and teacher's requests for better teaching. Eight hundred eighty junior and senior high schools and two hundred fifty teachers are included in the survey based on questionaries and interviewing. The following is the outcome of the analysis of the survey. 1. The standard of the facilities and equipments which the Ministry of Education has set is very low comparing with other countries. Nevertheless the present situation of those schools which are included in my survey is far below from that of the government, and that of those schools in rural areas and coeducational schools is utterly low comparing with urban and girl's schools. 2. The Ministry of Education should set up a reasonable standard for facilities and equipments of junior and senior high school, and encourage the school to raise its situation in a nationwide scale. 3. To make a good progress of Home Economics education, it is important to keep qualified teachers in school raising their pay, and lessen their work loads employing assistant for the laboratory works. 4. Lack of teaching material is a serious problem. I suggest that the Ministry of Education organize a committee which should make a continual study and contribute for teaching materials. 5. Printing errors and misusage of technical words in the textbooks must be corrected. The contents of the textbooks must be revised reanalyzing those from the aspect of the general and the professional education. 6. The following items must be studied carefully. a) Reassessment of the new curriculum. b) Method of inservice training program. which should we emphasize in the training, the general of the professional? If we are to emphasize the professional training, what field?

This study is proceeded to assist the school feeding program for primary school children in Korea supervised by CARE-Ministry of Education in this country. The purposes of this study are to evaluate nutritional value on regular, precooked corn meal and factory made corn bread through chemical analysis, and to study effective cookery on corn meal. The results of this study are: 1. There is no definite difference in the nutritional value between regular and precooked corn meal except for the decreased amount of riboflavin in precooked corn meal. 2. Factory made corn bread contains below the standard amount of protein, carbohydrate and fat, and extremely insufficient amount of lactose but the twice the amount of water according to the formula made by CARE-Ministry of Education. The scarcity of lactose in bread is in keeping with the insufficient amount of milk added to the bread. 3. Cooking experimentation shows: a. that the ideal amounts of each ingredient needed for each piece of bread containing sixty grams of corn meal and twenty grams of flour are 120g of water for precooked corn meal, 80g of water for regular corn meal, 40g of powdered milk, 1g of yeast or 2.5g of baking powder or 1.1g of soda. b. that when steam is used the precooked corn bread is better than the regular corn bread and than when flour is added the regular corn bread is better than the precooked one regardless of the cooking procedure. c. that milk form combined with leavening agents such as baking powder or soda is excellent media in producing softness and large volume of the bread. d. that baking powder is better leavening agent than soda for it conserves more riboflavin and better flavor than soda.
