        초등학생의 식습관과 인공지능 푸드스캐너로 측정한 학교급식 섭취의 연관성 연구

        The lower elementary school grades are an important period in which eating habits are formed. We examined the relationship between eating habits and school meal intake in the lower grades of an elementary school in Seoul. The eating habits were investigated using the Nutrition Quotient (NQ) for children. The school meal intake rates and preferred menus were obtained by automatically scanning the plate before and after meals using an artificial intelligence food scanner. The average school meal intake rate for the 347 subjects was 68.5±12.2%, and the nutrient intakes through the school meals were 353.5±70.0 kcal of energy, 51.8±10.2 g of carbohydrates, 14.6±3.1 g of proteins, 10.3±2.3 g of fats, 87.0±20.0 mg of calcium, and 1.8±0.4 mg of iron. The preferred menus were rice, grilled food, and dairy products, and non-preferred menus were salad, beverages, and stewed food. The eating habits that showed a positive correlation with the school meal intake rate were 'Diverse side dishes (r=0.332, P<0.001)', 'Vegetable side dishes (r=0.166, P<0.01)', 'Kimchi side dish (r=0.230, P<0.001)' and 'Less TV watching and computer game time (r=0.105, P<0.05)'. The NQ score also showed a positive correlation with the rate of school meal intake (r=0.216, P<0.001). The balance score was positively correlated with fruit (r=0.192, P<0.001), and the diversity score had the highest positive correlation with Kimchi (r=0.362, P<0.001). The regularity score was positively correlated with fried food (r=0.114, P<0.05). In conclusion, it was found that elementary school students in the lower grades had a higher school meal intake rate when their eating habits included eating side dishes evenly, and consuming vegetable side dishes and Kimchi.

        온라인에서 보낸 한 학기: 디지털 대면수업, 그 경험의 의미

        본 연구는 2020년 봄학기 코로나 19라는 예상치 못한 위기 속에서 갑작스럽게 시행된 온라인 수업에 참여하게된 학습자들의 경험을 좇아보았다. 특히 전통적 대면수업에서나 기대할 수 있었던 상호작용성이 구현된 새로운 형태의 온라인 학습인 디지털 대면수업을 주요 연구주제로 삼았으며, 학습자의 경험의 본질을 통해 새로운 학습 방법에 대해 탐색적으로 조망해 보고자 하였다. 이를 위해 디지털 대면수업을 경험한 대학생 및 대학원생을 의도적 표집 후 눈덩이 표집으로 총 14명 선정하여 성찰적 접근방식의 심층 인터뷰를 진행하였다. 본 연구는 심층 인터뷰와 잠정적 분석을 병행함으로써 연구 질문의 변화를 겪었고, 궁극적으로 1. 디지털 대면수업에 참여한 학습자들은 전통적 교실수업과 비교하여 어떠한 차이를 느꼈으며, 어떻게 받아들였나? 2. 학습자들은 디지털 대면수업에 어떻게 적응하게 되었나? 3. 디지털 대면수업의 경험을 통해 새롭게 대두된 문제는 무엇인가?를 연구문제로 확정하였다. 최종 인터뷰 종료 후, 개방코딩으로 초기 분류 후 그 공통 속성을 도출하여 50가지 카테고리로 범주화하였으며, ‘질문하기’ ‘비교하기’ ‘뒤집어보기’ 등의 분석적 귀납방법(analytic induction)을 사용하여 이를 분석하였다. 인터뷰 결과, 초기 디지털 대면수업을 임시적인 수업으로 인식하던 학습자들은 전통적 교실수업과 다른 맥락에 많은 불만과 고충을 호소했으나, 막상 한 학기동안의 공식적 수업 방식으로 공표된 이후에는 오히려 적극적인 적응의 노력을 기울인다는 점을 알 수 있었다. 이와 함께, 학습자간의 관계에 있어서 윤리적 규범과 상호 교류의 부족, 교수자의 테크놀로지 격차 등이 새로운 문제로 등장하였다. 본 연구를 통해, 적극적 수업 참여자로서의 학습자를 확인할 수 있었으며, 디지털에서 다루기 힘든 학습자간 또는 학습자-교수자간의 정서적 연대를 위한 논의가 필요함을 알 수 있었다. 또한, 디지털 대면수업을 위한 윤리적 지침의 마련의 필요성과 디지털 대면수업의 효과를 제고하기 위한 테크놀로지적, 교수설계적 논의의 확장이 필요하다는 점을 강조하고자 한다. In this study, we explored the experience of learners who suddenly participated in new kind of online lessons, when full-scale digital face-to-face learnings were implemented due to the pandemic in the spring of 2020. In particular, the main research theme was digital face-to-face lessons that implemented the interactivity which was expected in traditional face-to-face lessons. This was qualitative research that utilizes in-depth interviews to examine university and graduate students who experienced digital face-to-face lessons on a reflective approach. Research questions were (1) What difference did the learners who participated in the digital face-to-face class feel compared to the traditional classrooms? (2) How did learners adapt to digital face-to-face classes? (3) What are the new problems that emerged through the experience of digital face-to-face classes? Learners expressed dissatisfaction and had complaints in the early days when they considered digital face-to-face lessons as an improvisation of classroom lessons. After being accepted into formal lessons, however, their perception and attitude dramatically changed with an effort to adapt to the new class style. Meanwhile, the lack of design and preparation of lessons optimized for the class and new emotional and ethical issues have emerged as a common cause of dissatisfaction. The article concludes with a discussion of the implications for digital face-to-face learning research and continued development.

      • Comparative assessment of nutritional characteristics of critically ill patients at admission and discharge from the neurosurgical intensive care unit in Korea: a comparison study

        Purpose: Patients in neurosurgical (NS) intensive care units (ICUs) experience considerable energy and protein deficits associated with adverse outcomes. This study aimed to compare the nutritional status of patients at admission to (baseline) and discharge from the NS ICU. Methods: This was a single-center, retrospective, before and after study of patients admitted in the NS ICU of the CHA Bundang Medical Center, from January 31, 2019, to February 28, 2020. All anthropometric data, biochemical data, clinical data, and dietary data were collected during the NS ICU stay. Specifically, we investigated the cumulative caloric deficit rate, phase angle and skeletal muscle index as indicators of lean muscle mass, and nitrogen balance according to demographic and clinical characteristics. Results: A total of 140 NS patients were studied. Calf circumference decreased from 31.4±4.2 cm at baseline to 30.2±4.0 cm at discharge (P< 0.001). Energy supply rate increased from 44.4% at baseline to 89.2% at discharge. Phase angle (PhA) patients with an modified Nutrition Risk in the Critically ill (mNUTRIC) score≤5 group had significantly lower PhA values than those with an mNUTRIC score >5 (P=0.005). Conclusion: Although clinical and dietary parameters of patients in the NS ICU improved from baseline to discharge, anthropometric and biochemical markers of lean muscle mass and nutritional status decreased. PhA and nitrogen balance difference values were significantly different between those with an mNUTRIC score≤5 and those with an mNUTRIC score>5. These data indicate that the nutritional risk of critically ill patients increases during hospitalization in the NS ICU.

        Effects of Multidisciplinary Health Promotion Program Among Children in Community Childcare Center

        In this study, the effects of a 12-month multidisciplinary education program on the health status, dietary quality, and eating habits of children and adolescents attending community childcare centers were investigated. A total of 88 participants aged 7 to 17 years from 7 community childcare centers in Gyeonggi-do were enrolled. The intervention consisted of 12 multidisciplinary education sessions covering topics such as nutrition, exercise, and psychological education. All participants received the same education, and the effectiveness of the program was evaluated by categorizing them into a high participation group (HPG) and a low participation group (LPG) based on their participation rates. After intervention, in physical activities, moderate-intensity exercise was significantly reduced in the LPG, and there was no significant difference in psychological parameters. However, notable differences were observed in nutritional data. After intervention, intakes of calorie, carbohydrate, protein, and fat were significantly increased in both groups, and in particular, the change was found to be greater in HPG. Additionally, dietary fiber intake compared to the 2015 Korean Dietary Reference Intakes was increased in both groups. Daily food intake also increased dietary fiber intake in HPG, and meat and fruit intake was increased in LPG. In the nutrition quotient, there was a significant difference in HPG’s pre- and post-scores in the diversity category, and in nutrient adequacy ratio (NAR), the NAR of phosphorus was increased in both groups. The findings of this study suggest that multidisciplinary education implemented at community childcare centers primarily enhanced nutrition-related factors rather than physical activity or psychological aspects.
