The purpose of this study is to find out the optimal mixing ratios of amounts of Mal-Cha for preparation of Jeung-Pyun through Sensory, Mechanical characteristics test. The proximate composition of Mal-Cha were a 5.46±0.15% of moisture, 4.43±0.11% of total nitrogen, 7.52±0.21% of crude lipid, 8.74% of crude fiber, 8.51±0.09% of ash. Overall quality in 1.5% Jeung-Pyun showed the worst of 0, 0.5, 1.0% Jeung-Pyuns(p<0.05), especially 1.0% Jeung-Pyun had relatively the best overall quality. But the sweetness, sourness, flavor, hardness, moistness were not significantly different among all Jeung- Pyuns. 0, 0.5, 1.0% Jeung-Pyuns showed the best quality of Jeung-Pyun through sensory, mechanical property. Total color difference was increased as amount of Mal-Cha(p<0.001).

Paraquat (N,N'-dimethy 1-4,4'bipyrydinium : Gramoxone^(R), a widely used herbicide, is extremely toxic to all green plants and many eukaryotic organisms. In human, paraquat intoxication leads to multiple organ failure, it preferentially damages the lung, kidney and liver and may result in death. The participation of superoxide in initiating tissue damage by administration of paraquat is well known in which one electron reduction of paraquat leads to the formation of radical species which react with molecular oxygen to give superoxide. This process initiates immunological changes with the activation of neutrophilic leukocytes, which is related to further production of superoxide. In this experiment, therapeutic effects of cyclophosphamide and dexamethasone on blood cell count, malondialdehyde as a indicator of lipid peroxidation, and antioxidant enzymes levels in the lung, liver and kidney of paraquat intoxicated rats were inbestigated. The WBC count were significantly decreased by combined treatment of cyclophosphamide and dexamethasone in paraquat intoxicated rats at 3 and 5 days but RBC count were not changed. The contents of malondialdehyde were significantly decreased in the lung and Kidney by combined treatment at 10 days after paraquat intoxication. The catalase acitvities were markedly increased in the lung and liver of rats at 10 days after paraquat intoxication, and superoxide dismutase activities showed minimal changes in the lung, liver and kidney of rats by combined treatment. These results suggest that paraquat induced tissue damage in rats can be redeced by combined administration of cyclophosphamide and dexamethasone.

<P>Soybean-derived isoflavones have been investigated for their preventative effects against UV-induced symptoms of skin damage including wrinkle formation and inflammation. <I>Haematococcus pluvialis</I> is a freshwater species of Chlorophyta that contains high concentrations of the natural carotenoid pigment astaxanthin. Astaxanthin is known to be involved in retinoic acid receptor (RAR) signaling and previously been associated with the inhibition of activator protein (AP)-1 dependent transcription. Based on previous studies, we hypothesized that a combination of soy extract (SE) and <I>Haematococcus</I> extract (HE) may prevent UVB-induced photoaging through specific signaling pathways, as measured by UVB-induced wrinkling on hairless mice skin and expression changes in human dermal fibroblasts (HDFs). The 1:2 ratio of SE and HE mixture (SHM) showed the optimal benefit in vivo. SHM was found to inhibit wrinkle formation via the downregulation of matrix metalloproteinase (MMP)-1 mRNA and protein expression. SHM also inhibited mitogen-activated protein kinase (MAPK) phosphorylation and the transactivation of AP-1 which plays an important role in regulating MMP expression. These results highlight the potential for SHM to be developed as a therapeutic agent to prevent UVB-induced skin wrinkling.</P>

<P>The phenolic compound phloretin is a prominent member of the chemical class of dihydrochalcones. Phloretin is specifically found in apple and apple juice and known for its biological properties. We were particularly interested in its potential dermo-cosmetic applications. However, practical limitations of phloretin do exist due to its poor water-solubility. Phloretin was sulfonated with sulfuric acid (98%, wt) and mixed with saturated salt water to produce phloretin 3',3-disulfonate in order to increase its water-solubility. Here we reported the photoprotective effect of phloretin 3',3-disulfonate (PS), a new semi-synthetic derivative of phloretin. Results showed that PS attenuated cyclobutane pyrimidine dimer (CPDs) formation, glutathione (GSH) depletion and apoptosis induced by ultraviolet B (UVB). The photoprotective effect of PS is tightly correlated to the enhancement of nucleotide excision repair (NER) gene expression. Furthemore, PS had inhibitory effects on UVB-induced release of the inflammatory mediators, such as IL-6 and prostaglandin-E<SUB>2</SUB>. We also confirmed the safety and clinical efficacy of PS on human skin. Overall, the results demonstrated significant benefits of PS on the protection of keratinocytes against UVB-induced injuries and suggested its potential use in skin photoprotection.</P>
