      • 감압하에서의 김치숙성과 열처리

        김치의 숙성과 열처리 효과에 미치는 감압의 영향에 대한 실험결과를 요약하면 다음과 같다. 김치를 560㎜Hg과 360㎜Hg에서 숙성시킨 경우는 상압보다 젖산균의 생육이 촉진되는 반면호기성균이 감소되어 김치의 품질이 향상되었다. 그러나 0㎜Hg에서는 균의 생육이 저해됨과 동시에 김치조직이 손상되었다. 560㎜Hg와 360㎜Hg에서 숙성시킨 김치는 상압에서 숙성시킨 김치보다 저장성이 높았다. 숙성된 김치를 감압하에서 열처리할 경우 바람직한 감압조건은 460-260㎜Hg이었으며 80℃에서는 4분처리, 100℃에서는 2분처리, 120℃에서는 1분간 처리하는 것이 조직의 상태나 저장면에서 양호하였다. This study was carried out to investigate the effect of sub-atmosphere on the fermentation and heat treatment after fermentation of Kimchi. When the results from the conditions of atmosphere and under-atmosphere were compared, the growth of lactic acid bacteria was increased but the growth of aerobic bacteria was decreased under 560㎜Hg and 360㎜Hg. The number of total microorganism was decreased and simultaneously damaged to the tissue of Kimchi under 0㎜Hg. Kimchi fermented under 560㎜Hg and 360㎜Hg had longer storage duration than that of atmosphere. Among the several conditions, the result of heat treatment under 460-260㎜Hg was the best. The treatment for 4 minutes at 80℃, 2 minutes at 100℃, and 1 minute at 120℃ was good in tissue states and storage.

        This research is for setting up the standard size of Reference-Size of the Korean woman's Jacket(Jeogori). The first research process is to select 5 books chosen by us(co-researcher) for teaching materials and one book used at a private institute for traditional folk korean clothes(Hanbok). And we compared with all Reference-Sizes of them all 6 volumes each other. The result is as follows : Firstly, necessary itesm of Basic-Size are Bust, Korean Woman's Jacket Length, Arm Hole, Back Length. Secondly, we concluded that among all books selected by us, the Reference-Size of teaching material book of private institute for traditional folk korean clothes(Hanbok) comes close to the standard size. Thirdly, we established the new standard-size of Reference-Size as follows : Bust 86cm, Back Length 28∼8.5cm, from the middle of back neck to wrist(Whajang) 70cm, front length of Korean Woman's Jacket 28cm, from the neck point to hem line(Gil) 25cm, sleeve length 46cm, sleeve width 24±1cm, sleeve edge width(Somaeburi) 13cm, back neck length of Korean Woman's Jacket(Godae) 16cm, upper-out-gusset(Goetsoep-sang) 2.5cm, lower-put-gusset(Goetsoep-ha) 4.7cm, upper-in-gusset(Ansoep-sang) 4.8cm, lower-in-gusset(Ansoep-ha) 5cm, width of Korean Woman's Jacket collar 4±0.5cm.

        전남 서남부 지역 5일장에서 채소묘의 유통실태

        재래시장에서 판매되는 채소묘의 유통 효율성을 높이기 위한 기초 자료를 얻기 위해 2005년 4월 중순부터 6월 중순까지 전남 서남부 지역의 5일장을 중심으로 3회에 걸쳐 채소묘의 유통실태를 조사하였다. 각 지역의 5일장에서 채소묘를 판매하는 곳은 9~39개소 였다. 판매처별 판매량은 751-1,250개의 묘를 판매하는 곳이 29.9%, 1,251개 이상을 판매하는 곳이 34.4%였다. 5일장에서 판매된 채소묘는 20종류 이상이었다. 판매처 비율이 높은 묘는 고추류(89.2%), 가지(60.5%), 토마토류(59.8%), 호박류(33.7%), 참외(33.1%), 오이(32.5%), 그리고 수박(26.1%) 등이었다. 채소묘의 1주당 가격은 품목과 지역에 따라 차이가 있었으며, 트레이묘는 200~250원, 포트묘는 400~500원 정도였다. 채소묘 판매자들은 92.3%가 여성이었으며, 50대 이상이 83.9%였다. 채소판매자중 90% 이상이 판매품목과 판매자에 대한 정보를 소비자들에게 제공하지 않고 있었다. This study was conducted to collect the basic materials for the effective marketing of vegetable seedlings on the five-day traditional markets of south-western Jeonnam districts from April to June, 2005. Nine to thirty nine street stalls in the local traditional markets sell the vegetable seedlings. About 29.9% of the street stalls in the traditional markets sold more than seven hundred and fifty-one vegetable seedlings, and 34.4% of street stalls sold more than one thousand and two hundred and fifty one seedlings. Over twenty kinds of vegetable seedlings were marketed in the five-day traditional markets. Higher rates of selling places for vegetable seedlings were in the order of the kind of peppers (89.2%), egg plant (60.5%), the kind of tomatoes (59.8%), the kind of pumpkins (33.7%), oriental melon (33.1%), cucumber (32.5%), and water melon (26.1%). There were differences of selling prices per vegetable seedling among the list of items and districts. Prices of one vegetable seedling with tray and pot were two hundred to two hundred and fifty won, and four hundred to five hundred won, respectively. Sellers about 92.3% for vegetable seedlings were women, and sellers about 83.9% were over fifty years old. Over 90% of sellers for vegetable seedlings did not offer the informations of selling items and sellers to the consumers.

      • 중학교 과학교과에서의 과학기술 윤리교육 현황

        The purpose of this survey is to examine the present status of ethics education in middle school science curriculum. This study, therefore, attempted to investigate 1) student’s and teacher’s perceptions of science and technology ethics, 2) teacher’s perceptions of ethics education in science and technology and 3) contents of science and technology ethics in 7th and 8th grade science textbooks. 296 middle school students in Seoul and Gyeonggi-do and 12 science teachers are participated in this survey study. The survey questionnaire for students consisted of 20 items over three sub-categories: the nature of science, the ethical issues in science and technology and experience on ethical problems in the classroom. The questionnaire for teachers also consisted of three sub-categories: perception in science and technology ethics, perception in middle school ethics education of science and technology, and opinions of that. In the result, it was found that 28.3% of students learned about ethical issues in science and technology from the school, 69.4% of students had experiences on internet-copied homework and 26.4% of them had falsified experimental data. STS topics were contained in 7 of 12 units of a 7th grade science textbook but they were not relate to ethical issues. Neither ethical issue nor STS topic was not found in 8th grade science textbook. All participated science teachers were positively perceived the necessity of science and technology ethics education for middle school students but they reported some barriers such as lack of learning materials and information and their less understanding of science and technology ethics. Some of them suggested the necessity of in-service teacher training for ethics education in science and technology.

        뽕나무 절지의 저장 습도가 새싹의 생장에 미치는 영향

        목본류의 절지를 이용한 싹기름 채소생산의 기술을 개발하기 위하여 뽕나무 가지를 2006년 4월 13일에 절지하여 4~6℃의 저온저장고에서 습도조건(40~50% 및 80~90%)에 따른 생존율과 1~3개씩의 싹을 붙인 가지를 자른 후 싹기름을 했을 때 저온저장 일수에 따른 새싹의 생장 정도를 조사하였다. 뽕나무 절지의 생존율은 저장일수가 길수록 낮아져 저온저장을 하지 않은 채취 당일에 싹기름을 한 것은 97.4%였고, 122일 저온저장한 후 싹기름을 한 절지는 40~50%의 습도조건에서 34.2%, 80~90%의 습도조건에서 저장한 것은 85.7%였다. 또한 절지의 저장일수가 길수록 새싹의 잎수가 증가하는 경향을 보였고, 싹의 길이와 폭도 큰 경향을 나타내었다. 따라서 뽕나무의 절지를 4~6℃의 저장온도와 80~90%의 습도조건에서 저장한 후 1~3개씩의 싹을 붙인 가지를 잘라 싹기름을 하면 새싹 채소의 생산이 가능한 것으로 나타났다. This study was conducted to develop the industrial producing technology of sprout vegetables using the cut twigs of woody plants. We have cut the twigs of wild mulberry tree on 13 April, 2006 to examine the sprouting rate as affected by the storage conditions on relative humidity of 40~50% and 80~90% under 4~6℃ temperature. And we have also investigated the sprouting growth following those storage period of twigs cut with 1~3 buds. The longer storage periods, the less survival rate of wild mulberry twigs cut. The sprouting rate of cut twigs gathered on the day which had not stored at low temperature was 97.4%. And The sprouting rate at the relative humidity of 40~50% after storing at low temperature for 122 days were 34.2%, and that of at 80~90% relative humidity was 85.7%. The longer storage periods, the more the number, length and width of sprouts. Therefore, the twigs of a wild mulberry trees cut with 1~3 buds were able to produce the sprout vegetables under the condition of temperature 4~6℃ and relative humidity 80~90%.

      • 陰陽·五行과 관련한 五正色의 의미에 관한 연구

        AbstractA study of the meaning of the five regular colours(五正色) origined from yin-yang and wu-hsing (陰陽五行). Today's some Indurstries try to foster the growth of themselves by rediscovering the traditionional beauties. Without exception, the Korean costume culture is much concerning about the traditional colour and style.Korean costume culture has been infleunced by the one of China. Originally, the costume of China is based on the five regular colours stemed from the thought of yin-yang and wu-hsing systemized by the ancient ying-yang philosophers of China. Then, to investigate the meaning of the five regular colours origined from the yin-yang and wu-hsing should have an important meaning for understanding the Korean costume, I believe. As the result of investigation of this subject, I could have some conclusions about the five regular colours and the meaning of them.The black-red'blue-white'yellow, the five regular colours correspond to the north-south'east- west'center, the five directions one by one. The five regular colours, they are originating from wu-chi(無極) which is the root of yin-yang and wu-hsing. Wu-chi leans to nowhere and shots of nothing, namely it is Chung-yung(中庸). Therefore, it is amalgamated with all coloured or uncoloured matter. In Conclusion, wu-chi is 'non-colour(玄色)'which have all colours, as the origin and terminus of all colours. On the one hand, this 'non-colour' might be the mean colour, not leaning to existence or non existence anywhere. Then, the five regular colours are the mean colour, we can say.

      • Characterization and Catalytic Activity of Mixed ZrO_2-SiO_2

        ZrO_2/SiO_2 비가 다른 일련의 ZrO_2-SiO_2 촉매를 제조하였다. H_2SO_4로 처리된 촉매와 처리하지 않은 촉매의 특성을 XRD, IR, XPS로 연구하였다. ZrO_2에 무정형 SiO_2를 첨가하거나 H_2SO_4로 처리하면 무정형의 ZrO_2가 tetragonal phase로 전이되는 온도가 높아졌다. 2-propanol의 탈수반응과 cumene의 dealkylation 반응에서 촉매활성은 촉매의 산의 세기 및 양과 밀접한 관계를 가지고 있었으며 H_2SO_4으로 처리하여 촉매표면을 개질하면 촉매활성이 많이 향상되었다.
